3/4 lb sweet potato, peeled, halved lengthwise & cut crosswise into 1/2-inch half-rounds
1 tablespoon olive oil
1/2 lb lean ground chicken
1 large nectarine, cut into thin wedges
1/4 cup orange marmalade
1/4 cup Dijon mustard
1/2 teaspoon jalapeno pepper, minced
2 medium bananas, firm but ripe, sliced
1/4 cup scallion, thinly sliced

Steps:

  • To a large saucepan of boiling water add the sweet potatoes, return the water to a boil, then reduce the heat to medium-low, cover & simmer until tender, about 10 minutes. Drain well.
  • In a large nonstick skillet, warm oil over medium-high heat until hot but not smoking, then add chicken & saute until opaque & cooked through, about 2 minutes.
  • Reduce heat to medium & add the sweet potatoes, nectarine, marmalade, mustard & jalapeno, cooking & tossing gently until heated through, about 2 minutes.
  • Add the bananas & cook until heated through, 1 to 2 minutes.
  • Serve the mixture sprinkled with sliced scallions.

1 teaspoon allspice
1/4 cup red onion, chopped
1/2 cup green onions, chopped
2 tablespoons extra-virgin olive oil
1/4 cup orange juice, fresh
1 tablespoon lime zest
2 tablespoons soy sauce
2 tablespoons freshly chopped thyme leaves
2 tablespoons jalapeno, seeded, diced
2 teaspoons freshly grated or chopped ginger
1 clove garlic
Salt and pepper
4 chicken breasts, bone and skin on
Lime wedges

Steps:

  • Puree all ingredients except chicken in food processor. Add marinade and chicken to re-sealable plastic bag, mix thoroughly and let marinate, refrigerated, for 4 to 8 hours.
  • Preheat oven to 350 degrees F.
  • Heat grill to high, remove excess marinade from chicken and place on grill. Grill each side of chicken for 3 to 4 minutes then place on a pan and finish in the oven for 15 minutes.
  • Squeeze a lime wedge over each piece of chicken and serve.

2 tablespoons oil
1 cup onion
1 cup celery (1 stalk)
1/2 cup red bell pepper (or green)
3 garlic cloves
1 teaspoon thyme
1 bay leaf
1 -2 teaspoon crushed red pepper flakes
1/2 teaspoon ground black pepper
1 -2 cup chicken broth
1 (14 1/2 ounce) can diced tomatoes (we prefer petite diced)
1 sweet potato, 1/2 inch diced (peeling can stay on)
2 cups diced cooked chicken
3 cups cooked rice

Steps:

  • Heat oil in large soup pot over medium heat.
  • Chop onion, celery, red or green pepper, and garlic. Add to oil.
  • Stir in thyme and bay leaf. Cook over medium to medium low until onions are soft, about 7 minutes. Meanwhile, chop sweet potato into 1/2 inch dice (peeling can stay on).
  • Near end of cooking time, add crushed red pepper to pot and stir to mix.
  • Add black pepper, tomatoes, broth, sweet potato and chicken to the pot. Bring to a boil, cover and simmer on low 20-25 minutes, until potatoes are soft.
  • Serve over hot rice.
  • Freeze separate from rice if freezing.

1 teaspoon garlic powder
1 teaspoon dried parsley
½ teaspoon dried oregano
1 teaspoon salt

4 boneless, skinless chicken breast halves
¼ cup duck sauce
¼ cup marinara sauce
1 teaspoon mango hot sauce
¾ cup fresh pink grapefruit juice, divided
1 cup Italian seasoned bread crumbs
1 ripe nectarine, pitted and sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with parchment paper.
  • In a large bowl, mix together paprika, onion powder, garlic powder, parsley, oregano, salt and pepper. Toss with chicken breasts until evenly coated. In a bowl, combine duck sauce, marinara sauce, mango hot sauce and 1/4 cup grapefruit juice. Coat chicken evenly with sauce mixture.
