Number Of Ingredients 13

2 CANS black beans (rinsed and drained)
2 tbs extra virgin olive oil
2 tbs brown sugar (divided)
2 plum tomatoes (finely diced)
1 small onion (diced)
1 tbs minced garlic (3 cloves)
1 carrot (diced)
4 scallions (cilantro or parsley are good substitutes)
Hot pepper (diced, optional)
1 tbs green seasoning
4 tbs ketchup
1 tsp salt (to taste)
3 sprigs thyme

Steps:

  • Wash cans and wipe dry. Drain beans in a colander and rinse.
  • Heat oil in a dutch oven or deep heavy bottomed pot over medium heat. Add brown sugar and allow it to froth, bubble, expand and darken.
  • Add chopped tomatoes, onion, garlic, carrot, hot pepper, green seasoning, scallion, ketchup, salt and pepper. Cook for 5 minutes or until the oil starts to separate.
  • Add drained beans, 2 cans of water and stir well to combine. Bring to a boil, cover, reduce heat to a simmer (low) and cook for 20 minutes, stirring every 5 mins to ensure that it is not sticking.
  • After 20 mins, if the beans are still firm, cook an additional 5-10 mins until the beans are tender and the sauce has thickened slightly. Add more liquid if the liquid evaporates too quickly. Taste and add more salt and black pepper, if required.
  • Optional: Add chopped cilantro and a pimento pepper to finish off.

Time 55m

Number Of Ingredients 16

1 large purple potato cooked until tender, then cubed
1/4 cup vegetable oil
1 red onion, chopped
3 cloves garlic, chopped fine
3 tablespoons fresh chopped ginger
2 tablespoons red curry paste or substitute a high-quality curry powder
1 small habanero pepper (optional)
2 bay leaves
3/4 cup diced red pepper
3/4 cup diced yellow pepper
3/4 cup diced zucchini
3/4 cup diced yellow squash
1 cup diced fresh pineapple
1 cup coconut milk
2 tablespoons chopped fresh cilantro
Salt and pepper

Steps:

  • In a saucepot, heat oil over medium-high heat. Add red onion, garlic and ginger, stirring continuously so as not to burn. After 2 minutes add the curry paste, habanero and bay leaves until well incorporated. Add peppers and stir again cooking for 2 minutes. Add zucchini and squash and cook for another 2 minutes. The mixture should be well coated at this point. If it starts to burn, lower the heat and add a little water to stop the burning on the bottom of the pan. Add the coconut milk and cilantro. Salt and pepper to taste. Lower the heat and simmer, covered, for at least a 1/2 hour, stirring occasionally.
  • During the cooking process you can adjust the balance of moisture by adding water or coconut milk so the consistency stays stew like. Adjust the salt and pepper to taste.
  • Serve over rice.

Tips:

  • When choosing canned black beans, opt for low-sodium varieties to control the saltiness of the stew.
  • For a richer flavor, use homemade chicken or vegetable broth instead of water.
  • Add a tablespoon of ground cumin or chili powder to the stew for a smoky and spicy kick.
  • If you like your stew with a thicker consistency, mash some of the beans against the side of the pot before serving.
  • Serve the stew with your favorite toppings, such as sour cream, avocado, cilantro, or lime wedges.

Conclusion:

Caribbean black bean stew is a flavorful, hearty, and budget-friendly dish that's perfect for busy weeknights. With its combination of beans, vegetables, and spices, this stew is not only delicious but also packed with nutrients. Whether you serve it as a main course or a side dish, this stew is sure to be a hit. So, gather your ingredients and give this Caribbean classic a try. Your taste buds will thank you!
