2 egg whites
¼ teaspoon cream of tartar
⅔ cup white sugar
¼ cup water
2 teaspoons rose extract
¼ teaspoon ground cardamom
⅛ teaspoon salt
1 drop red food coloring

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with parchment paper.
  • In a mixing bowl, beat egg whites and cream of tartar together with an electric mixer on high speed until the mixture forms stiff peaks.
  • Place sugar, water, rose extract, cardamom, salt, and food coloring in a saucepan, and bring to a simmer over low heat, stirring until the sugar has dissolved. Simmer the mixture for a minute or two, stirring constantly, and very slowly pour the syrup in a thin stream into the egg whites, beating constantly with electric mixer on high speed. Beat until the syrup is incorporated and the meringue is stiff and shiny.
  • Drop by spoonfuls or pipe into rosettes with a star tip onto the prepared baking sheet.
  • Bake in the preheated oven until the meringues are hard, 1 to 1 1/2 hours; turn off the oven, and allow them to cool inside the oven to finish baking the insides.

Tips:

  • Use room temperature egg whites: This will help the egg whites reach their full volume and create stiffer peaks.
  • Whip the egg whites gradually: Start on low speed and gradually increase the speed as the egg whites begin to foam. This will help prevent the egg whites from becoming grainy.
  • Add the sugar in three additions: This will help prevent the egg whites from becoming too stiff and will also help the sugar dissolve more easily.
  • Whip the egg whites until stiff peaks form: The egg whites should be glossy and hold their shape when you lift the whisk out of the bowl.
  • Fold in the dry ingredients gently: Use a spatula to fold the dry ingredients into the egg whites until just combined. Over-mixing will deflate the egg whites.
  • Pipe the meringues onto a parchment paper-lined baking sheet: Use a piping bag or a spoon to pipe the meringues into 1-inch rounds. Make sure to space the meringues about 2 inches apart.
  • Bake the meringues in a low oven: This will help the meringues dry out without browning.
  • Let the meringues cool completely before storing: Once the meringues are baked, let them cool completely on the baking sheet before storing them in an airtight container.

Conclusion:

Cardamom meringues are a delicious and easy-to-make treat that is perfect for any occasion. These meringues are light and airy with a delicate cardamom flavor and can be enjoyed on their own or used to top desserts such as pies, tarts, and cakes.
