I came across this recipe in 1983 and have been making it for the holidays ever since. One year I gave away 20 loaves! —Rita Bergman, Olympia, Washington

Number Of Ingredients 9

6 cups all-purpose flour
2 packages (1/4 ounce each) active dry yeast
1-1/2 teaspoons ground cardamom
1 teaspoon salt
1-1/2 cups plus 2 tablespoons 2% milk, divided
1/2 cup butter, cubed
1/2 cup honey
2 large eggs, room temperature
2 tablespoons sugar

Steps:

  • In a large bowl, combine 2 cups flour, yeast, cardamom and salt. In a small saucepan, heat 1-1/2 cups milk, butter and honey to 120°-130°. Add to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Stir in enough remaining flour to form a firm dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , Punch dough down. Turn onto a lightly floured surface; divide in half. Divide each portion into thirds. Shape each into a 14-in. rope. Place 3 ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. Repeat with remaining dough. Cover and let rise until doubled, about 30 minutes. , Brush with remaining milk and sprinkle with sugar. Bake at 375° until golden brown, 20-25 minutes. Remove from pans to wire racks to cool.

1 cup warm whole milk (110 degrees F (43 degrees C))
⅓ cup warm water (110 degrees F (43 degrees C))
½ cup white sugar
2 tablespoons melted butter
1 (.25 ounce) package active dry yeast
3 ½ cups all-purpose flour, or as needed
½ cup white sugar
1 ½ tablespoons ground cardamom
3 tablespoons ground cinnamon
½ cup melted butter
½ cup raisins
½ cup chopped walnuts
1 egg
1 tablespoon water
½ cup sliced almonds
¼ cup pearl sugar

Steps:

  • Whisk together the warm milk, warm water, sugar, and 2 tablespoons melted butter in a mixing bowl until the sugar has dissolved. Sprinkle yeast over top, and set aside for 5 minutes.
  • Once the yeast is foamy, stir in the flour, adding more if needed to make a stiff dough. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Place into an oiled bowl, cover with a cloth, and let stand in a warm place until doubled in bulk, about 1 hour.
  • Combine 1/2 cup sugar with the cardamom and cinnamon in a small bowl; set aside. Deflate the dough and turn it out onto a lightly floured surface. Roll the dough into a 9x13-inch rectangle, and brush with 1/2 cup of melted butter. Sprinkle with the cardamom sugar, raisins, and walnuts. Roll into a log, pinch the edges closed, and place onto a parchment paper-lined baking sheet. Cover with a cloth, and let stand in a warm place until doubled in bulk, about 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • With a sharp knife score the top layer of the roll with V-shapes that don't quite meet in the middle the whole length of the roll, this will make the bread look braided, and is very pretty, but could be skipped. Beat the egg with 1 tablespoon of water in a small bowl. Brush the egg wash over the top of the bread. Sprinkle with almonds and pearl sugar.
  • Bake in the preheated oven until the bread is golden-brown and sounds hollow when tapped on the bottom, 30 to 35 minutes. Cool completely on a wire rack before slicing.

My brother enjoyed it the most and hes not one for complimenting me on my cooking ;). It is a sweet bread that is good at breakfast or with coffee and tea. It tastes the best with Recipe #128436.

Number Of Ingredients 11

1/4 cup warm water
2 (1/2 ounce) packages dry yeast
3/4 cup sugar
3 room temp. eggs
1/2 cup room temp. butter
13 ounces evaporated milk
2 teaspoons salt
1 teaspoon cardamom
8 cups approximate flour
1 egg
1 tablespoon milk or 1 tablespoon water

Steps:

  • Combine water, yeast, and 1 Tbs. of sugar in a bowl. Stir to dissolve yeast.
  • Add the rest of the sugar, eggs, butter, evaporated milk, and cardamom. Mix well.
  • Stir in 3 cups of the flour and beat well.
  • Add remaining flour and mix until a soft dough is formed.
  • Cover and let rest for about 30 minute.
  • Turn out onto a lightly floured surface. Knead until smooth and elastic.
  • Put dough into a greased bowl and turn over to coat both sides.
  • Cover and let rise until doubled in bulk (about 1 hour).
  • Put raised dough onto a lightly oiled surface, and divide into 2 pieces.
  • Shape each into a loaf (I just leave it in a ball) and place on a greased baking sheet.
  • Beat egg and milk (or water) for egg wash. Brush entire surface of dough with the egg wash.
  • Again let rise until doubled, and then brush with the egg wash once more.
  • Bake bread at 375°F for 35 minutes, or until loaf sounds hollow when tapped with a finger.

Olive Oil Zucchini Bread with Lemon & Cardamom image

Light, moist, and subtly flavored, this zucchini bread is our new family favorite.

2 cups white whole wheat flour (can sub all-purpose flour)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 teaspoon ground cardamom (can sub 1/2 teaspoon ground nutmeg)
1/2 cup olive oil
1/2 cup pure maple syrup (I use Grade A for baking)
1/3 cup dark brown sugar
2 large eggs
1 tablespoon freshly grated lemon zest
1 teaspoon pure vanilla extract
2 cups finely grated zucchini (from about 2 medium zucchini)

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Rub a 8" x 5" loaf pan with olive oil or spray with an oil mister.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cardamom.
  • In a medium bowl, whisk together the olive oil, maple syrup, and brown sugar until blended. Add the eggs and beat until mixed well. Stir in the lemon zest and vanilla.
  • Pour the wet ingredients over the dry ingredients and mix just until incorporated. The batter will be fairly thick. Fold in the zucchini with a spatula.
  • Pour the batter into the loaf pan and smooth the top with a spatula.

1/4 cup warm water (105-115 F)

  • Soak raisins in hot tap water to cover until plump, about 20 minutes, then drain.

  • Punch down dough (do not knead), then halve.
  • Cut each half into thirds and roll each piece into a 15-inch rope. Braid together 3 ropes to form a loaf, then transfer to a parchment-lined large baking sheet, tucking ends under.
  • Make another loaf with remaining 3 ropes, arranging loaves 4 inches apart. Loosely cover with plastic wrap and let rise in a draft-free place at warm room temperature until doubled, 1 to 1 1/2 hours.

2 1/2 cups milk
1 1/2 cups melted butter, plus 1/3 cup melted butter for filling
1 cup sugar, for dough plus 2/3 cup sugar for filling
1 teaspoon salt
2 teaspoons freshly ground cardamom (from about 25 cardamom pods)
4 1/2 teaspoons dry active yeast (2 packages)
8 -9 cups all-purpose flour or 8 -9 cups bread flour
2 tablespoons cinnamon
1 egg white, lightly beaten together into an egg wash
2 tablespoons water, lightly beaten together into an egg wash
1/3 cup granulated sugar (estimated) or 1/3 cup pearl sugar, for topping (estimated)
1/3 chopped almonds (estimated) or 1/3 slivered almonds, for topping (estimated)

Steps:

  • Prepare your Basic Cardamom Bread Dough using the first 7 ingredients listed above (this takes about 1 1/2 hours).
  • BASIC CARDAMOM BREAD DOUGH DIRECTIONS:.
  • Heat milk to a light boil, turning off heat when it reaches the scalding point (with small bubbles across the top). Stir in melted butter, sugar, salt, and ground cardamom.
  • Let mixture COOL until "finger-warm" (still warm, but cool enough to touch). Stir in yeast and let sit for 10 minutes. VERY IMPORTANT: The milk should be LUKEWARM (or fingerwarm) and the yeast will double itself nicely! If the milk mixture is too hot, it will kill the yeast properties!
  • Add flour into mixture 1/2 cup at a time until dough is firm and pulls away from the side of your mixing bowl (Tip: If using a stand mixer, exchange the mixing paddle for the dough hook after you've added the first 5 cups of flour. Use the dough hook to mix and knead the dough as you add the remaining 3-4 cups of flour).
  • Cover the dough in the mixing bowl with a clean towel and let rise until doubled, about an hour.
  • Punch down the dough, then remove from bowl.
  • Knead lightly on floured counter until smooth and shiny. Divide dough into two halves.
  • CINNAMON ROLL DIRECTIONS:
  • Roll each half of dough into a 12" by 18" rectangle. Brush each rectangle well with melted butter. Combine 2/3 cup sugar and 2 tablespoons cinnamon; sprinkle evenly over the 2 rectangles. Roll each rectangle crosswise, like a jelly roll, to form an 18"-long cylinder.
  • Using a sharp or serrated knife, cut each cylinder into 20 equal slices.
  • Place each slice into a paper cupcake wrapper and place on baking sheet. Cover with towel and allow to double in size, about 45 minutes.
  • Preheat oven to 425º.
  • Brush risen cinnamon rolls with egg wash and sprinkle with pearl sugar and / or almonds. Place in the middle of a preheated oven and bake for 7 minutes, or until done.
  • Yield: 40 cinnamon rolls.

1/2 cup finely chopped mixed candied fruit
2 cups all-purpose flour, divided
1/4 cup butter, softened
1/4 cup shortening
1 cup sugar
2 eggs
2/3 cup milk
1/4 cup orange juice
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon ground cardamom

Steps:

  • Combine candied fruit and 1 tablespoon flour in a small bowl; set aside. In a large bowl, cream the butter, shortening and sugar for 1 minute. Add the eggs, milk, orange juice, baking powder, salt, cardamom and remaining flour. Beat on low speed for 30 seconds; beat on high for 3 minutes. Stir in fruit., Pour into a greased and floured 9x5-in. loaf pan. Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

2 (1/4 ounce) packages active dry yeast
1/2 cup warm water (110 degrees)
1/2 cup butter, cut into chunks
1 cup milk
3 large eggs
1/4 cup granulated sugar
2 teaspoons vanilla
1 teaspoon grated lemon peel
1/2 teaspoon ground cardamom or 1/2 teaspoon mace
1/2 teaspoon salt
5 1/2 cups all-purpose flour
3/4 cup slivered almonds
1 cup golden raisin
3 tablespoons orange juice
2 tablespoons brandy or 2 tablespoons vanilla
1 cup coarsely chopped peeled apple
1 cup coarsely chopped dried apricot
2 teaspoons ground cinnamon
1 teaspoon grated orange peel
1 large egg yolk
1 tablespoon water
1 1/2 cups powdered sugar
2 tablespoons orange juice

Steps:

  • In the large bowl of an electric mixer, combine yeast with warm water, soften for about 5 minutes. In a 1- to 1 1/2 -quart pan, combine butter and milk; warm over medium heat until milk is 110 degrees. Butter does not need to melt. (Or heat butter and milk in a microwave-safe bowl, uncovered, in a microwave until mixture is 110 degrees.)
  • Add milk mixture, whole eggs, granulated sugar, vanilla, lemon peel, cardamom, salt and 3 cups flour to yeast. Beat at medium speed until dough is stretchy and shiny, 5 to 8 minutes. Stir in 2 1/4 cups flour.
  • With a dough hook attachment, beat at high speed until dough pulls cleanly from sides of bowl, 5 to 8 minutes. If dough still sticks, add flour, 1 tablespoon at a time, until dough pulls free. (Or scrape dough onto a lightly floured board and knead by hand until smooth and elastic, about 10 minutes.)
  • Place dough in a lightly greased bowl and cover with plastic wrap. Let rise in a warm place until doubled, about 1 hour.
  • Meanwhile, heat oven to 350 degrees and make filling. Place slivered almonds in a 9-inch pan and bake until golden, about 10 minutes.
  • Soak 1 cup golden raisins in orange juice and brandy or vanilla until plump, about 30 minutes.
  • In a food processor, finely chop raisin mixture, almonds, chopped apple, dried apricots, cinnamon and grated orange peel.
  • When dough is ready, punch dough down. On a floured surface, roll into a 10-by-36-inch rectangle. Spread fruit filling over dough to within 1/2 inch of long sides. Roll from a long side, jelly roll-style. Cut into three equal-sized loafs. Pinch and smooth ends of loaf to prevent filling from falling out.
  • Place seam-side down on a lightly greased baking sheet. Cover with plastic wrap; let rise in a warm place until puffy, about 25 minutes. Mix egg yolk and water. Brush over tree.
  • Bake in a 350-degree oven until golden brown, 40 to 45 minute. If necessary, cover loosely with foil the last 10 minutes of baking to prevent over browning.
  • Remove from oven and cool. Mix powdered sugar with orange juice until smooth.
  • Spoon glaze over bread. Slice when warm or cool and wrap in plastic.
  • Makes 3 loaves.
  • Christmas tree variation: Before rolling out dough, set aside 1/3 cup. Roll and fill remaining dough as directed. Take the long piece of dough, seam-side down, and zig-zag it into a stacked "S" shape to make a tree that is narrow at top and broad at base. Form reserved 1/3 cup dough into a ball and attach it to the base of tree as the trunk. Continue to rise and bake as directed above. Makes 1 large loaf.

1/2 tsp salt
1 tsp ground cardamom
1/2 c vegetable oil
1/4 c milk
2 large eggs
1 large pear, peeled, cored and chopped
TOPPING
1 Tbsp turbinado sugar
1/4 tsp ground cardamom

Steps:

  • 1. Preheat oven to 350F. Lightly coat a loaf pan with nonstick cooking spray.
  • 2. In a large bowl, stir together flour, sugar, baking powder, salt and 1 tsp cardamom.
  • 3. Beat canola oil, milk and eggs in medium bowl; add to dry ingredients. Stir in pears until well combined.
  • 4. Pour batter into pan.
  • 5. Stir together sugar and 1/4 tsp cardamom; sprinkle over batter in loaf pan. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean.
  • 6. Cool 10 minutes before removing to wire rack to cool completely.

14 g active dry yeast
3/4 cup Splenda Sugar Blend for Baking
2 teaspoons ground cardamom
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon ground ginger
1/2 cup water
1/2 cup 1% low-fat milk
1/2 cup Smart Balance Omega Plus
1 cup Egg Beaters egg substitute

Steps:

  • In large mixed bowl, combine 1 1/2 cups flour, yeast, sugar, cardamom, salt, cinnamon, cloves and ginger; mix well. Heat water, milk and butter to 120F to 130F, butter does not need to melt. Add to flour mixture; add eggbeaters. Blend at low speed until moistened; beat 3 minutes at medium speed. By hand, graduall stir in enough remaining flour to make a stiff batter.
  • Spoon batter into a well greased 12 cup Bundt pan. Cover; let rise in warm place until light and doubled, about 1 1/2 hours. Bake in pre-heated 375F oven for 30 to 35 minutes until golden brown. Remomve from pan; cool for about 5 to 10 before serving.
