I made this for Thanksgiving dinner and my family went crazy over it. It is simple, looks great on the table and has already been requested for Christmas dinner! This recipe can be adjusted as you like by adding more or less bacon and onions.

4 pounds sweet potatoes, peeled and cut in 1-inch chunks
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground black pepper
5 slices smoked bacon, chopped
1 pound onions, thinly sliced
1 cup pure maple syrup
2 teaspoons fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
  • Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
  • Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
  • Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.

1/4 cup (1/2 stick) unsalted butter, softened
2 tablespoons heavy cream
1/2 cup applesauce, preferably homemade
2 teaspoons grated fresh peeled ginger
1 teaspoon coarse salt
Freshly ground pepper
2 apples (1 pound), peeled, cored, and cut into 1-inch pieces
3 tablespoons sugar

Steps:

  • Preheat oven to 375 degrees. Arrange potatoes on a baking sheet lined with parchment. Bake until tender, 1 hour 10 minutes to 1 hour 20 minutes. Remove from oven; let stand until cool enough to handle.

Parsley leaves, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder

1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
1 3/4 to 2 pounds sweet potatoes
1/2 cup heavy cream
1/4 cup bourbon whiskey
3 tablespoons light brown sugar
2 tablespoons molasses
1/8 teaspoon salt
8 tablespoons (1 stick) unsalted butter
2 pounds yellow onions, peeled and thinly sliced

Steps:

  • To make the glaze, combine the root beer and stock in a medium heavy saucepan. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer until reduced to a thick syrup, about 1 cup, about 50 minutes to 1 hour. Remove from the heat.
  • Preheat a grill to medium-high. Preheat the oven to 425 degrees F.
  • Season each chop on both sides with 1 teaspoon of the Essence. Grill for 3 minutes. Turn each chop 1/4 turn to make grill marks and cook an additional 2 minutes. Turn and cook on the second side for 5 minutes.
  • Transfer to a baking sheet. Drizzle 1 teaspoon of the olive oil over each chop. Roast until cooked through and an instant-read thermometer inserted into the center reaches 150 degrees F, 12 to 15 minutes.
  • Place the chops on 4 serving plates and drizzle with the glaze. Spoon the Bourbon-Mashed Sweet Potatoes and Caramelized Onions onto the plates, garnish with parsley leaves, and serve.
  • Combine all ingredients thoroughly.

  • Preheat the oven to 350 degrees F.
  • Place the potatoes on a foil-lined baking sheet. Bake until tender and starting to ooze sugary syrup, about 1 hour and 15 minutes, depending on their size. Remove from the oven and let sit until cool enough to handle.
  • Cut a slit down each potato and scoop the flesh into a large bowl. Discard the skins. Add the cream, bourbon, brown sugar, molasses, and salt and beat on high speed with an electric mixer until smooth. Cover to keep warm, or gently reheat before serving.

I fail to remember where this recipe first appeared but chances are it was from Canadian Living magazine. This simple dish is much richer than you would expect and pairs well with grilled meats especially lamb and pork. Since sweet potatoes are very moist, adjust the amount of sour cream or milk to your taste. I do recall that the original recipe recommended placing the sweet potatoes and onion mixture in a food processor until blended. I found this method too gluey and altered it as stated.

1/4 cup olive oil
1 large Spanish onion, thinly sliced
2 tablespoons fresh thyme leaves
3 large sweet potatoes
2 tablespoons butter
1/4 cup low-fat sour cream (Carnation low fat works very well) or 1/4 cup milk (Carnation low fat works very well)
salt
fresh ground pepper

Steps:

  • Preheat oven to 400º.
  • Heat olive oil in frying pan at medium heat and add onion. Sauté until rings separate. Reduce heat to medium low and continue cooking uncovered, until onions are soft and caramelized at least 30 minutes or more, stirring occasionally.
  • Meanwhile, prick whole potatoes with skins on and bake in roasting pan for 40 minutes or until soft. When cool enough to handle peel skins from potatoes and set aside.
  • When onions are soft add thyme, salt and pepper to taste and mix well. At this point you can either place the onions in a food processor and pulse until they are slightly chunky or chop with a sharp knife.
  • Heat a medium sized pot and add butter. Add the sweet potatoes and mash with a fork or potato masher. Add the sour cream or milk a little at a time then add the onion mixture. Blend with a wooden spoon until fully incorporated and adjust S & P to taste.

1 teaspoon salt
3 Granny Smith apples, peeled and cored
1 tablespoon fresh lemon juice
9 tablespoons unsalted butter, plus more for pan
6 tablespoons packed dark brown sugar
6 tablespoons heavy cream
1/4 cup Calvados, or brandy
1/4 cup fresh orange juice

Steps:

  • Heat oven to 425 degrees. Bake potatoes until soft, 40 to 45 minutes. When cool enough to handle, peel and place flesh in a medium bowl; add salt, and mash with a fork.
  • Meanwhile, slice apples into 1/8-inch-thick wedges and place in a medium bowl. Add lemon juice and toss to combine.
  • In a medium skillet, melt 3 tablespoons butter over medium-high heat. Add 2 tablespoons brown sugar and cook, stirring, until sugar dissolves. Cook apple slices in the butter and sugar in 3 or 4 batches, until golden and caramelized, about 1 minute on each side. As they finish cooking, transfer to a plate and set aside.
  • In a medium skillet, melt 3 tablespoons butter over high heat. Add 2 tablespoons brown sugar and cook until sugar dissolves. Stir in 4 tablespoons cream and the Calvados and cook until slightly thickened, about 1 minute. Remove from heat and add to sweet potatoes, mixing well to combine. Transfer potato mixture to a buttered 3-quart ovenproof casserole. Arrange apple slices over potatoes; set aside.

1 tablespoon organic coconut oil, melted
2 tablespoons pure maple syrup, room temperature (if it is cold, the coconut oil will solidify on contact)
1/2 teaspoon ground cinnamon
Iodized salt
1 medium sweet potato, scrubbed and cut into 1-inch chunks
2 medium peaches, pitted and sliced into 4 wedges each
1 medium sweet onion, peeled and quartered
For the chicken:
4 skinless, bone-in chicken thighs
Sea salt
Fresh-cracked black pepper
4 tablespoons chile jam (some of my favorites: Hell Fire Pepper Jelly from Jenkins Jellies or INNA Jam's Plenty Spicy Jalapeño for heat seekers)
Juice of 1/2 lemon

Steps:

  • To make the Caramelized Sweet Potatoes and Peaches:
  • Preheat the oven to 450°F.
  • In a small bowl, whisk the coconut oil, syrup, cinnamon, and salt. Put the potato and peaches in 2 separate bowls. Pour three quarters of the syrup mixture over the sweet potato and one-quarter over the peaches and toss. Spread the potato in an even layer in a large baking dish and roast for 10 minutes. Toss the potato and roast for 5 minutes more. Add the onion and roast for 15 minutes. Toss the potato and onion, add the peaches in an even layer, and roast 10 minutes, or until the potato and onion are fork tender and the peaches have caramelized.
  • To make the chicken:
  • Pat the chicken dry and season both sides liberally with salt and pepper. Heat the oil in a large skillet over medium-high heat and arrange the chicken thighs inside (cast iron works really well to get a nice crispy crust). Brown the chicken on one side, giving the chicken time to unstick itself from the pan surface and form a good, crispy coating, about 10 minutes (you can give it some help with your tongs or spatula if needed). Flip the chicken thighs and brown for 6 to 10 minutes, or until you can insert a knife to the bone and no red liquid emerges.
  • Lower heat to medium-low and spoon a quarter of the chile jam over each thigh. Melt the jam over the chicken and on all sides, using tongs to flip and swirl the thighs in the pan. Cook for 1 to 2 minutes to allow the jam to form a glaze. Remove the thighs to a serving plate and spoon the glaze on top. Scrape up any bits sticking to the bottom of the pan-these will be the crispiest and the first to go!
  • Just before serving, squeeze fresh lemon juice over the chicken to brighten its flavors and heighten the sweetness and spice. Serve with Caramelized Sweet Potatoes and Peaches.

3/4 cup dry white wine
1 1/2 cups homemade or low-sodium store-bought chicken stock
2 tablespoons packed dark-brown sugar
1 teaspoon coarse salt

Steps:

  • Heat oil in a large skillet over medium heat. Add sweet potatoes; cook, turning occasionally, 3 minutes. Add garlic; cook, stirring constantly, 1 minute. Add wine and stock; simmer, stirring occasionally, until almost all liquid has evaporated, about 20 minutes. 1/4 cup mascarpone cheese or 1/4 cup cream cheese (2 oz)

Steps:

  • Boil sweet potatoes in large saucepan of boiling salted water over medium-high heat 15-20 minutes or until very tender.
  • Drain sweet potatoes; return to saucepan.
  • Meanwhile, heat oil in large skillet over medium heat until hot.
  • Add pancetta; cook 2-3 minutes or until pancetta begins to brown.
  • Add onion; cook 15-20 minutes or until onions are caramelized, stirring frequently.

Here's one spot where technique really makes a difference. Cook the onion until deep Brown and caramelized. It adds another layer of complex sweetness that differs from the Maple syrup. If you have some grated pecorino Romano it will make the puree richer and give it a nutty undertone.

four large sweet potatoes, peeled and chopped into rough chunks
1/4 cup +2 tablespoons pure grade b. maple syrup
1/4 cup extra virgin olive oil, divided
2 teaspoons kosher salt plus more as needed
1 teaspoon freshly cracked black pepper plus more as needed
2 tablespoons unsalted butter
one large vidalia or other sweet onion, thinly sliced

Steps:

  • 1. preheat the oven to 375°.
  • 2. Put the sweet potatoes, 1/4 cup Maple syrup, 2 tablespoons olive oil, 2 teaspoons salt and 1 teaspoon pepper in a large mixing bowl. Toss to evenly coat and transfer to a baking sheet. Roast in the oven until the sweet potatoes are soft, 35 to 40 minutes. Check on them after 15 minutes and stir, if needed.
  • 3. Meanwhile, melt the butter and 2 tablespoons of olive oil together in a large skillet over medium-high heat. Add the sliced onions and 2 tablespoons maple syrup and season with salt and pepper to taste. Cook, stirring frequently, until the onion is deep Golden Brown, about 10 minutes, adding water, a tablespoon at a time, if the skillet gets too dry. Remove from the heat and set aside.
  • 4. Transfer the sweet potatoes to a food processor and add a tablespoon of hot water. Pulse until just blended and then add half the caramelized onion. Pulse a few more seconds to incorporate the onion. For a very smooth puree, add another tablespoon of water and run the machine for one minute. Fold in the remaining caramelized onion, reserving some for garnish. Serve in warm dish and garnish with reserved caramelized onion. Serves four
