Yield Makes about 3 cups

Number Of Ingredients 6

2 1/2 cups thinly sliced scallions (greens and whites; from 1 to 2 large bunches)
1/2 cup finely minced peeled fresh ginger
1/4 cup grapeseed or other neutral oil
1 1/2 teaspoons usukuchi (light soy sauce)
3/4 teaspoon sherry vinegar
3/4 teaspoon kosher salt, or more to taste

Steps:

  • Mix together the scallions, ginger, oil, soy, vinegar, and salt in a bowl. Taste and check for salt, adding more if needed. Though it's best after 15 or 20 minutes of sitting, ginger scallion sauce is good from the minute it's stirred together up to a day or two in the fridge. Use as directed, or apply as needed.

CARAMELIZED-SCALLION NOODLES

Caramelized-Scallion Noodles image

The key here is the scallion dressing for the noodles and the bit of oyster sauce you drizzle on for depth and umami. Feel free to substitute in any meats, fish, tofu or vegetables you like for the toppings; this is just a template for any number of quick, delicious meals.

Categories     weeknight, noodles

Time 20m

Yield 2 servings

Number Of Ingredients 9

Salt
6 ounces Chinese broccoli (or other cooking greens), cut into 2-inch pieces
10 ounces fresh noodles (or 6 ounces dry pasta)
6 tablespoons caramelized-scallion sauce (see recipe), or to taste
3 to 4 ounces cooked chicken, ham, tofu, mushrooms or whatever meaty thing you like, sliced, warm
2 soft-boiled eggs, halved
Oyster sauce, to taste
Soy sauce, to taste
Raw ginger or spicy pickles of your choice, julienne, for garnish

Steps:

  • Bring a pot of water to boil, and salt it well. Cook the Chinese broccoli until tender, about 4 minutes. Scoop the greens out with a skimmer, and dry well. Keep the water boiling.
  • Cook the noodles according to the package directions. As soon as they're drained, return them to the empty pot, off heat, and dress them with 6 tablespoons of the caramelized-scallion sauce, or to taste. Season with salt, if desired.
  • Divide the noodles into bowls, and top with the Chinese broccoli, the chicken (or whatever protein you choose) and the eggs. Drizzle oyster sauce on the Chinese broccoli, and season the eggs with a few drops of soy sauce. Top with a few pinches of julienne ginger or pickles, and serve immediately.

COTTAGE CHEESE PASTA WITH TOMATOES, SCALLIONS AND CURRANTS

Cottage Cheese Pasta With Tomatoes, Scallions and Currants image

Satisfying the same creamy urge as mac and cheese, noodles with cottage cheese is a comforting Eastern European staple that's sometimes topped with golden fried onions and a dusting of black pepper and cinnamon. This version trades caramelized onions for slivers of sharp raw scallion to contrast with the richness of the cottage cheese, which melts into a sauce upon contact with the hot pasta. The currants lean into the cinnamon's sweetness, while halved cherry tomatoes and mint make the dish juicy and fresh. It's an unusual take on the original dish that's easy to riff on - feel free to add or leave out ingredients to make it your own.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 13

1/4 cup dried currants (or chopped raisins)
1/4 teaspoon salt, plus more for boiling the pasta
1 pound short pasta, such as farfalle, cavatelli or fusilli
4 scallions, white and green parts, thinly sliced
1 cup halved cherry tomatoes
1 to 2 tablespoons fresh lemon juice, plus more to taste
2 tablespoons extra-virgin olive oil, plus more for serving
1 cup whole milk cottage cheese (or ricotta)
1 teaspoon freshly ground black pepper, plus more for serving
1/2 cup torn mint leaves, plus more for serving
1/2 cup coarsely chopped parsley, plus more for serving
Ground cinnamon, for serving (optional)
Flaky sea salt, for serving

Steps:

  • Bring a large pot of water to a boil. Put currants in a small bowl and ladle a little of the boiling water over them to cover. Let soak for 10 minutes, then drain.
  • Meanwhile, salt the remaining water in the pot. When it returns to a boil, add pasta. Cook according to package instructions until al dente, usually 1 minute less than the package directs. Drain pasta, reserving 1/2 cup pasta cooking water.
  • In a large serving bowl, combine scallions, tomatoes, lemon juice and 1/4 teaspoon salt.
  • When the currants are soaked, add them to the bowl with the tomatoes and toss to combine. Stir in 2 tablespoons olive oil.
  • Add pasta to the serving bowl, along with cottage cheese, pepper and a few splashes of reserved pasta water (about 1/4 cup), and toss until evenly coated. If pasta looks dry, add a little more pasta cooking water, a tablespoon at a time. Stir in herbs. Taste, and add more salt and lemon, if needed.
  • To serve, top with a dusting of ground cinnamon (if you like), flaky salt, a lot of black pepper, and more olive oil and herbs. Serve hot, warm or at room temperature.

Time 1h15m

Yield 2 cups

Number Of Ingredients 7

3 tablespoons olive oil
4 pounds (about 5 large) Spanish onions, peeled, quartered and thinly sliced
4 cloves garlic, peeled and finely chopped
1 cup white wine
1 1/2 teaspoons thyme leaves
1/3 cup toasted, chopped walnuts
Salt and freshly ground black pepper to taste

Steps:

  • Place a large heavy kettle over medium heat and heat the oil. Add the onions and garlic and cook, stirring frequently, until the onions are greatly reduced in volume and golden in color, about 50 minutes to 1 hour. • Add the wine, thyme and walnuts to the pan and continue to cook until all the liquid has evaporated. Season to taste with salt and pepper. Serve with grilled meat, fish or pasta.

SCALLION SAUCE

Scallion Sauce image

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Vegetables

Yield Makes about 1/2 cup

Number Of Ingredients 6

1/2 cup scallion greens, roughly chopped
1/2 cup (1 stick) unsalted butter
1 cup flat-leaf parsley leaves
Juice of 1/2 lemon, plus more to taste
1/2 cup heavy cream
Coarse salt and freshly ground pepper

Steps:

  • In a food processor fitted with the steel blade attachment, combine scallions, butter, parsley, and lemon juice. Process until well combined. Transfer to refrigerator, and chill for 20 minutes.
  • Heat cream in a small saucepan until reduced by half. Whisk in chilled butter mixture. Strain through a fine sieve and season with salt, pepper, and lemon juice.

Tips:

  • Choose the right scallions: Select fresh scallions with crisp, bright green stalks and white bulbs.
  • Caramelize slowly: Cook the scallions over medium-low heat, stirring frequently, until they are golden brown and slightly softened.
  • Use a good quality soy sauce: The soy sauce you use will make a big difference in the flavor of the sauce. Choose a soy sauce that is naturally brewed and has a rich, umami flavor.
  • Add a little sweetness: A touch of sweetness helps to balance out the savory flavors of the sauce. You can add sugar, honey, or maple syrup.
  • Use fresh herbs: Fresh herbs, such as cilantro or parsley, add a pop of brightness and flavor to the sauce.

Conclusion:

Caramelized scallion sauce is a versatile sauce that can be used to add flavor to a variety of dishes. It is especially well-suited for grilled or roasted meats, vegetables, and tofu. The sauce is also a great way to add umami flavor to soups, stews, and stir-fries. With its simple ingredients and easy preparation, caramelized scallion sauce is a must-try for any home cook.
