1/4 cup peanut oil
4 to 6 tablespoons unsalted butter
1 1/2 cups pineapple, medium dice

2 tablespoons shallots, minced
1/2 cup coconut rum
1 cups chicken stock
2 tablespoons cilantro, chopped
1 teaspoon garlic, chopped
1 to 2 tablespoons fresh lime juice
1 small tomato, seeded and diced fine

  • Heat skillet to medium high heat. Season pork chops liberally with salt and pepper. Add peanut oil to skillet and sear pork chops until golden brown on both sides. 3/4 cup butter or 3/4 cup margarine, softened
1 1/4 cups granulated sugar

2 large eggs
1 cup dark molasses
1 large ripe pineapple (about 3 pounds)
1/2 cup packed light brown sugar
2 tablespoons butter or 2 tablespoons margarine
1 cup heavy cream or 1 cup whipping cream

1/4 cup brown sugar
sliced fresh pineapple

Steps:

  • Melt the butter in a medium to large saute pan over medium heat.
