Categories     Entree

Time 1h30m

Yield 6

Number Of Ingredients 11

2 tablespoons butter
1 large sweet onion, thinly sliced (1 1/2 cups)
1 clove garlic, thinly sliced
1 tablespoon salt, if desired
1 lb uncooked penne pasta
1 3/4 cups whipping (heavy) cream
1/4 cup butter
4 oz Gorgonzola cheese (preferably Gorgonzola dolce, or sweet Gorgonzola), crumbled (1 cup)
1/4 teaspoon salt
1/8 teaspoon pepper
Dash of freshly grated nutmeg or ground nutmeg

Steps:

  • In 10-inch nonstick skillet, melt 2 tablespoons butter over medium-high heat. Stir in onion and garlic to coat with butter. Cook uncovered about 5 minutes, stirring occasionally, until onion is softened. Reduce heat to medium-low. Cook uncovered 35 to 40 minutes, stirring occasionally, until onion is light golden brown. Do not let onion or garlic burn. (Onions will shrink during cooking.)
  • Meanwhile, fill large pot with 5 quarts water; heat to boiling over high heat. When water is boiling, add 1 tablespoon salt if desired. When water returns to boil, add pasta. Stir immediately to make sure it doesn't stick to itself or pan. Boil pasta 9 to 10 minutes or until cooked through but still slightly firm. Drain in colander. There is no need to shake off excess moisture.
  • Add onion mixture to pot. Increase heat to medium and add 1 cup of the whipping cream and 1/4 cup butter. Cook, stirring occasionally, until butter melts and cream simmers. Stir in cheese, salt, pepper and nutmeg. Add drained pasta and remaining 3/4 cup whipping cream. Cook and stir until pasta is coated and sauce is hot.

2 garlic cloves, minced
1 teaspoon ground sage
2 large eggs
3 tablespoons grated Parmesan cheese
3 tablespoons soy sauce
1 tablespoon Worcestershire sauce
Caramelized Onions (can be prepared ahead; should yield about 1 cup)
1 lb. onions, peeled and cut into 1/4-inch slices, 2 1/2 cups

salt and pepper to taste
POM Sauce
1/2 cup arils from 1 large POM Wonderful Pomegranate
1/2 cup bottled ketchup
1 tablespoon light brown sugar
2 tablespoons balsamic vinegar

Steps:

  • Caramelized Onions: 1. Heat butter and vegetable oil over high heat until foamy and hot. 2. Add onions and stir to coat. Lower heat and cook; stir until onions are browned and soft, about 40 minutes. Add brown sugar and cook until brown and caramel colored, about 5 minutes. 3. Add salt and pepper to taste. Turkey Meat Loaf 1. Prepare fresh pomegranate juice.* 2. Preheat oven to 350°F. 3. In a bowl mix turkey, breadcrumbs, pomegranate juice, caramelized onions with all the pan juices, minced garlic, sage, eggs, Parmesan cheese, soy sauce and Worcestershire sauce. 4. Mix well using hands and form into a 9 x 5 loaf. 5. Place in a prepared loaf pan. 6. Bake in a preheated oven for about 1 1/2 hours. 7. Serve with 1 tablespoon of pomegranate sauce. POM Sauce: 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/2 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) 2. Mix ingredients together and heat to dissolve sugar. Serve on cooked turkey meat loaf. * For 1 cup of juice, cut 2-3 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.

Tips:

  • For a deeper, richer flavor, caramelize the onions slowly over low heat for at least 30 minutes, stirring occasionally.
  • To prevent the onions from burning, use a heavy-bottomed pot or pan and make sure to stir them frequently.
  • If the onions start to stick to the bottom of the pot or pan, add a splash of water or broth and scrape up the browned bits.
  • To make a vegan caramelized onion sauce, use vegetable broth instead of beef broth and omit the butter.
  • Caramelized onion sauce can be used as a condiment for grilled meats, fish, or vegetables. It can also be used as a pasta sauce or as a filling for sandwiches and wraps.

Conclusion:

Caramelized onion sauce is a versatile and delicious condiment that can be used in a variety of dishes. It is easy to make and can be tailored to your own taste preferences. Whether you are using it as a dipping sauce, a marinade, or a topping, caramelized onion sauce is sure to add flavor and depth to your meal.
