Time 1h15m

Yield 1 pie, 6-8 serving(s)

Number Of Ingredients 9

1 tablespoon olive oil
2 small onions, peeled halved and sliced
1 pie crust (pre made)
2 -3 ounces blue cheese (crumbled) or 2 -3 ounces gorgonzola (crumbled)
5 large eggs
3/4 cup heavy cream
1/2 cup sour cream
1 teaspoon tarragon
salt and pepper (to taste)

Steps:

  • Preheat oven to 375 degrees.
  • In a cast iron skillet or large saute pan, heat olive oil over medium heat. When oil is hot, add sliced onions, season with salt, and saute until caramelized (approx 20-30 minutes).
  • Put pie crust in 8-9 inch pie pan or tart pan. Bake for 6 minutes (you may want to put parchment paper and rice or dry beans over the crust to keep it from bubbling up).
  • In a medium bowl whisk eggs, heavy cream, sour cream, tarragon and salt and pepper until combined.
  • Remove pie crust and discard parchment paper (if used). Spread crumbled blue cheese on the bottom of pie crust. Cover the crumbled cheese with the caramelized onions and spread evenly to cover the bottom of the crust. Poor egg and cream mixture over the onions and cheese.
  • Bake for 35-40 minutes until golden brown and set in the middle. The filling may rise. Allow to cool slightly and settle in crust before serving.

Time 2h5m

Yield 6 servings

Number Of Ingredients 17

Nonstick cooking spray
3/4 cup rolled oats
1/2 cup all-purpose flour
1/4 teaspoon salt
3 tablespoons cold, unsalted butter, cut into small pieces
3 tablespoons cold, low-fat buttermilk
4 teaspoons olive oil
1 large onion, sliced thinly into half moons
8 ounces sliced mixed mushrooms, such as cremini, oyster, shiitake
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dry mustard
1 tablespoon chopped fresh thyme leaves (or 1 teaspoon dry)
3 large eggs
3 egg whites
1 cup evaporated fat-free milk (not condensed milk)
2/3 cup grated Gruyere cheese (about 1-ounce)

Steps:

  • Preheat the oven to 400 degrees F. Spray a 9-inch pie dish with cooking spray.
  • To prepare the crust, put the oats, flour and salt in the bowl of a food processor and pulse 3 times to combine. Add the butter and pulse about 12 times, until you get a pebbly course texture. Add the buttermilk and pulse 3 to 5 times more to combine. Form the mixture into a ball and place it between 2 large pieces of waxed paper. Roll out into a circle about 10 inches in diameter.
  • Remove the top sheet of waxed paper. Transfer the crust, still on the other piece of waxed paper to the pie dish, then remove the waxed paper from the top. Press the crust gently into the dish. Bake for 9 minutes, then let cool.
  • To prepare the filling, heat 2 teaspoons of oil in a large nonstick pan over a medium-low heat. Add the onion and cook, stirring occasionally, until golden brown and caramelized, about 20 minutes. Transfer the onions to a bowl. Add the remaining 2 teaspoons of oil to the pan and heat over a medium-high heat. Add the mushrooms and cook, stirring occasionally, until they have released their water and begin to brown, about 6 minutes. Add the onions back to the pan, stir in the salt, pepper, mustard and thyme.
  • In a medium bowl whisk together the eggs, egg whites and evaporated milk.
  • Sprinkle the cheese into the pie crust. Top with the mushroom-onion mixture and pour the egg mixture on top. Reduce oven temperature to 350 degrees F. Bake for 35 minutes or until knife inserted in the middle comes out clean. Let stand for 5 minutes before cutting into 6 wedges and serving.

Time 2h25m

Yield 8

Number Of Ingredients 11

4 slices bacon
1 (9 inch) unbaked pie crust
¼ cup butter
1 medium onion, finely chopped
1 egg, beaten
2 eggs
1 ¼ cups sour cream
¼ cup cream cheese, softened
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fry bacon in a large skillet over medium-high heat, turning occasionally, until crispy, about 10 minutes. Drain bacon slices on paper towels. Let cool 10 minutes. Crumble and set aside.
  • Roll out pastry crust into a circle using a lightly floured rolling pin. Line a 9-inch pie pan with crust. Prick holes into the base of the dough using a fork.

  • Remove pastry crust from the oven. Brush crust with beaten egg. Return crust to the oven and bake 5 minutes more.

Tips:

  • Use a good quality blue cheese. A sharp, flavorful blue cheese will give your quiche the best flavor. Consider using a combination of blue cheeses for a more complex taste.
  • Caramelize the onions slowly and patiently. This will bring out their natural sweetness and flavor. Don't rush this step, or your onions will end up burnt.
  • Use a pre-baked pie crust. This will save you time and effort, and it will also help to prevent the crust from becoming soggy.
  • Don't overfill the quiche pan. The quiche will rise as it bakes, so leave some room at the top of the pan.
  • Bake the quiche until it is set in the center. A toothpick inserted into the center of the quiche should come out clean.

Conclusion:

This caramelized onion and blue cheese quiche is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover onions and blue cheese, and it is also a great dish to serve at a party or potluck. The quiche can be served warm or cold, and it is also a great make-ahead meal.
