Steps:
- Peel pineapple and cut lengthwise into eight wedges; remove core. Line pineapple in a rimmed baking sheet or 9x13 pan. Set aside. *See Notes on detailed instructions on how to peel pineapple.
- Melt butter in a small saucepan over medium heat. Add brown sugar and stir to dissolve. Carefully stir in orange juice (as it will bubble up), followed by chili powder, salt, pepper and cloves. Increase heat and bring to a simmer until the mixture reduces to about 1/2 cup and thickens into a thin syrupy consistency (it will continue to thicken upon standing so don't thicken too much). Remove from heat and stir in lime juice.
- Let cool a few minutes then pour approximately 2/3 of Glaze over pineapple. Turn to coat. Reserve the remaining Glaze for basting. If your reserved Glaze becomes to thick, stir in a little water and return to heat.
- Grill pineapple over direct medium heat, basting with reserved glaze, turning occasionally, until pieces have golden brown grill marks in places, about 7-10 minutes. Serve with remaining Glaze and additional lime and chili powder if desired.

CARAMELIZED GRILLED FRUIT
After dinner, add a few more coals to the still-warm grill, and prepare this simple, fresh dessert. This recipe calls for bananas, but Martha also likes to make a fresh-fig version; choose whatever ripe, unblemished fruit looks best at the market.

Steps:
- Heat grill or broiler to medium-hot. In a large bowl, combine the melted butter and brown sugar. Add all fruit, and toss.
- Fold the edges of a piece of heavy-duty aluminum foil to form a shallow baking pan, and place on grill. Arrange the fruit, cut sides down, on the foil. Cook fruit until browned and caramelized around the edges, rearranging occasionally to prevent burning. Turn the fruit over, and repeat; serve.
Tips:
- For best results, use firm fruits that will hold their shape well on the grill, such as peaches, nectarines, pineapple, and watermelon.
- To prevent the fruit from sticking to the grill, brush it with oil or cooking spray before grilling.
- Cook the fruit over medium-high heat, turning it frequently, until it is caramelized and slightly charred.
- If the fruit starts to burn, move it to a cooler part of the grill or remove it from the heat altogether.
- Serve the grilled fruit immediately, or let it cool slightly before serving.
- Garnish the grilled fruit with fresh herbs, such as mint or basil, or a squeeze of citrus juice.
Conclusion:
Grilled fruit is a delicious and healthy way to enjoy your favorite fruits during the summer months. It is a versatile dish that can be served as an appetizer, side dish, or dessert. With a little bit of preparation and attention to detail, you can easily make grilled fruit that is both flavorful and impressive.
