3 tablespoons olive oil
2 onions, very thinly sliced
1 tablespoon balsamic vinegar
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons red wine vinegar
2 tablespoons fresh lemon juice
1 teaspoon honey
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 pink grapefruits
1 head romaine lettuce, thinly sliced or torn into 1-inch pieces
1 large fennel bulb, trimmed and thinly sliced
1 small cucumber, peeled, seeded and thinly sliced
3 scallions, finely sliced
1 tablespoon chopped fresh thyme leaves

Steps:

  • For the caramelized onions: In a large skillet, heat the oil over medium heat. Add the onions, balsamic vinegar, salt and pepper. Cook, stirring occasionally, until the onions are deep golden brown, about 20 minutes. Set aside to cool, about 10 minutes.
  • For the dressing: In a small bowl, whisk together the red wine vinegar, lemon juice and honey. Slowly whisk in the olive oil until blended. Season with salt and pepper, to taste.

2 tsp sugar (either white or brown)

Steps:

  • 1. Preheat the oven to broil. Slice a grapefruit in half then sprinkle both halves with sugar. Place in a baking dish and put it on the middle rack to broil. Watch it very carefully so it doesn't burn. Remove it from the oven once the sugar has caramelized, about 2-3 minutes. Eat immediately. Enjoy :)

1/2 bottle Champagne, chilled

Steps:

  • Preheat oven to 175 degrees. Line two baking pans with Silpats. With a very sharp knife, slice grapefruit into 1/16-inch-thick slices. Place slices on prepared baking pans.
  • Place confectioners' sugar in a strainer; sprinkle over grapefruit. Turn chips over, and coat with remaining sugar. Bake until chips glisten and have a syrupy coating, 1 1/2 to 2 hours.

  • Cover a baking sheet with foil and arrange the four grapefruit halves in a single layer on top. Use a paring knife to cut in between the sections of each half, then trace around the edge. This will make the grapefruit pieces easy to remove and eat once the sugar is on top.
