2 pints cherry tomatoes, a mix of colors is nice
6 tablespoons extra-virgin olive oil, more for drizzling
1/4 teaspoon fine sea salt
1 teaspoon black pepper

1 pound dry linguine
1/2 teaspoon crushed red pepper flakes
1/2 cup dry white wine
4 dozen littleneck clams, scrubbed
1/4 cup torn mint leaves

Steps:

  • Heat the oven to 450 degrees. Smash and peel 8 garlic cloves; peel and finely chop the remaining 6. Toss the smashed garlic with the tomatoes, 2 tablespoons of oil, fine sea salt, and 1/4 teaspoon black pepper. Spread the tomatoes out in a layer in one or two baking pans (make sure they aren't too crowded, so they don't steam) and roast tomatoes, tossing occasionally, until bursting, 15 to 20 minutes.
  • In a large pot of heavily salted boiling water, cook the pasta until it is 2 minutes from being done to taste. Drain.
  • Return the pasta pot to medium-high heat. Warm 4 tablespoons oil in the pot. Add the chopped garlic and red pepper flakes; cook for 30 seconds. Add the wine and let simmer 2 minutes. Stir in the roasted tomatoes and garlic. Add the clams. Cover the pot and cook until the clams open, 5 to 10 minutes. Use tongs to transfer open clams to a bowl; discard any that do not open.
  • Add the pasta and 3/4 teaspoon black pepper to the sauce in the pot. Cook, tossing, until pasta is just cooked through. Return the clams to the pot and toss with the pasta. Divide mixture among serving bowls. Garnish with mint and drizzle with more oil.

3 large onions, thinly sliced
3 to 5 oil-packed anchovy fillets, chopped
1/4 teaspoon crushed red-pepper flakes
1 pound dried spaghetti
1 cup coarsely chopped fresh flat-leaf parsley, plus more for garnish
1/2 ounce (1 tablespoon) unsalted butter
Freshly ground pepper
Parmigiano-Reggiano cheese, for garnish

Steps:

  • Pulse bread in a food processor until coarse crumbs form. Heat 2 tablespoons oil in a large skillet over medium-high. Add crushed garlic, and cook until golden, 2 to 3 minutes. Add breadcrumbs and 1 tablespoon oil, and stir until well coated. Season with salt, and cook until breadcrumbs are crisp and golden brown. Place on a rimmed baking sheet lined with paper towels to drain. Discard garlic, and let breadcrumbs cool completely.
  • Heat 3 tablespoons oil in each of 2 large skillets over medium heat. Divide onions between skillets, and cook, stirring frequently, until caramelized and golden brown, 10 to 15 minutes. (Add a little more oil if necessary.) Combine cooked onions in 1 skillet. Add sliced garlic, and cook over medium heat until golden, about 3 minutes. Add anchovies and red-pepper flakes, and cook for 2 minutes.
  • Meanwhile, cook spaghetti according to package directions in salted water. Drain, reserving 1 cup cooking liquid. Transfer spaghetti to skillet, and toss well. Add reserved cooking liquid, parsley, and butter, and season with salt and pepper. Mix well, then top with breadcrumbs, and garnish with parsley.

14 dried Mission figs (1 cup), sliced
1/4 cup dry sherry
1/4 cup olive oil
2 large Spanish onions, thinly sliced
10 garlic cloves, crushed
3 rosemary sprigs
2 teaspoons salt
Freshly ground black pepper
2 sliced baguettes, for dipping

Steps:

  • Preheat the oven to 350 degrees F.
  • Crumble the goat cheese into an oven safe dish and set aside.
  • In a sauce pot combine the figs and sherry with enough water to barely cover the figs. Place the sauce pot over high heat and bring up to a bubble, cover and remove from the heat and let the figs plump while the onions are cooking.
  • Pour the olive oil into a large skillet and place over medium heat. Add the onions, garlic, rosemary, salt and pepper and cook, stirring often, for about 10 minutes, or until lightly browned. Using a slotted spoon remove the plumped figs from the sauce pot, leaving behind any of the pluming liquid. Add the figs to the cooked onions, stir to combine and then spoon over the goat cheese. Place the dish into the top half of the oven for 20 minutes, until the edges begin to bubble.
  • Remove and serve immediately with sliced baguettes.

1/4 cup olive oil
1 teaspoon fresh thyme leaves
1 shallot, peeled and chopped
2 cloves garlic, chopped
1 large Spanish onion
1 Vidalia onion, finely chopped
3 cipollini onions, finely chopped
1 medium red onion, finely chopped
Salt and freshly ground black pepper
1 cup fat-free Greek yogurt
1 cup reduced-fat cream cheese
3 scallions, chopped (about 1/2 cup)
1 bunch fresh chives, chopped (about 3 tablespoons)

Steps:

  • In a large saute pan over medium heat, add the olive oil. Add the thyme, shallots, garlic and all the varieties of onions. Saute, stirring constantly. (Onions absorb oil quickly, so add more if necessary.) Continue to cook until the vegetables are lightly browned, about 15 minutes. Remove from the heat and season with salt and pepper. Let cool slightly.
  • In a medium bowl, add the yogurt and cream cheese and stir together. Add in the onions, scallions and chives. Stir well to combine.

  • Quarter potatoes and in a bowl toss with shallots, 1 1/2 teaspoons oil, and salt and pepper to taste. Transfer mixture to a shallow baking pan.
  • Wrap garlic tightly in foil and put in pan with potatoes.
  • In a large bowl toss kale with remaining 1 1/2 teaspoons oil and salt and pepper to taste until combined well. Arrange kale in one layer in another shallow baking pan. Roast kale, potato mixture, and garlic in middle and bottom thirds of oven, switching position of pans in oven halfway through roasting and stirring vegetables occasionally, until potato mixture is golden brown and tender, kale is crisp, and garlic is soft, about 15 minutes. Transfer vegetables (except garlic) to a bowl and season with salt and pepper. Carefully remove garlic from foil and peel. In small bowl with a fork mash garlic with vinegar until smooth and season with salt and pepper. Add dressing to vegetables and toss. Potatoes may be made 4 hours ahead.
  • Serve potatoes hot or at room temperature.

All-purpose flour (for surface)
5 large eggs
3 heads of garlic, cloves peeled
Kosher salt
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon pure maple syrup
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
Freshly ground black pepper
6 ounces sharp white cheddar cheese, grated (about 2 cups)
2 cups baby spinach
3/4 cup crème fraîche
3/4 cup heavy cream

Steps:

  • Place a rack in lower third of oven; preheat to 350°. Roll out 1 disk of dough on a lightly floured surface to a 14" round. Transfer to a 9"-diameter pie dish. Lift up edge and let dough slump down into dish. Trim, leaving about 1" overhang. Fold overhang under. Freeze 15 minutes.
  • Meanwhile, roll out second disk of dough on a lightly floured surface until about 1/8" thick. Cut into 1/4"-thick strips. Transfer to a parchment&151;lined baking sheet. If dough is soft, chill until just pliable. Working with 3 strips at a time, braid dough, returning braids to baking sheet as you go. Chill until just pliable.
  • Beat 1 egg in a small bowl. Brush edge of dough in dish and bottom sides of braids with egg. Arrange braids along edge, trimming and gently pressing sections together as you go. Freeze 15 minutes.
  • Line dough with parchment paper or foil, leaving some overhang. Fill with pie weights or dried beans. Bake until crust is dry around edge, 25-30 minutes. Remove parchment and weights and brush entire crust with egg. Bake until crust is dry and set, 10-15 minutes. Let cool.
  • Meanwhile, cook garlic in a medium saucepan of boiling salted water until beginning to soften, about 3 minutes; drain. Wipe saucepan dry and heat oil in pan over medium-high. Add garlic and cook, stirring occasionally, until cloves start to turn golden brown, about 2 minutes. Add vinegar and 1 cup water and bring to a boil. Reduce heat and simmer until garlic is tender, 10-12 minutes. Add maple syrup, rosemary, and thyme, and season with salt and pepper.
  • Cook, stirring occasionally, until liquid is syrupy and coats garlic, about 5 minutes. Scatter cheese over crust; top with spinach. Whisk crème fraîche, cream, and remaining eggs in a medium bowl; season with salt and pepper. Pour over spinach. Add garlic with any syrup. Bake until custard is set and golden brown in spots, 35-40 minutes. Let cool on a wire rack.

1 1/2 pounds (about 15 medium) shallots, sliced crosswise into 1/4-inch rings
1 cup peeled garlic cloves (about 3 heads), large cloves halved lengthwise
2 teaspoons sugar
1 1/2 teaspoons salt, plus more for water
1/4 teaspoon freshly ground black pepper
2 cups Homemade Chicken Stock, or low-sodium canned chicken broth, skimmed of fat
13 ounces ruffle-shaped pasta
Fresh basil leaves, for garnish
Parmigiano-Reggiano cheese, for garnish

Steps:

  • Heat butter in a large skillet over medium-low heat. Add shallots and garlic cloves, stirring to coat. Sprinkle with sugar, 1 teaspoon salt, and the pepper, and stir to combine. Cook until very soft and golden, about 1 hour, adding water 2 tablespoons at a time if the pan seems dry.
  • Using a slotted spoon, transfer garlic and shallots to a bowl, and set aside. Add chicken stock, and bring to a boil, using a wooden spoon to scrape up any browned bits from the pan. Cook, stirring occasionally, until the mixture is reduced by one quarter, 2 to 4 minutes. Remove from heat, return garlic and shallots to pan, and keep warm while cooking pasta.
  • Bring a large saucepan of salted water to a boil. Add pasta, and cook until al dente, about 8 minutes.
  • Drain pasta, and return to saucepan. Stir in remaining 1/2 teaspoon salt, reserved garlic and shallots, and sauce. Cut basil leaves into thin strips. Divide the pasta and sauce among six serving bowls, and serve immediately garnished with basil and shaved Parmigiano-Reggiano.

1 russet (baking) potato, peeled and sliced

1 tablespoon chopped fresh rosemary
6 cups chicken broth
1/2 cup heavy cream
1/2 cup well-shaken buttermilk
White pepper

Steps:

  • Melt oil and butter in a large heavy pot over moderately low heat. Add garlic and cook, stirring occasionally, until golden brown and caramelized, 10 to 12 minutes. Add onions and shallots and cook, stirring frequently, until onions are softened, about 10 minutes. Stir in potato, vinegar, and rosemary. Increase heat to high and sauté), stirring, for 2 minutes. 4 boneless skinless chicken breasts
1 teaspoon salt
3/4 teaspoon black pepper
1 tablespoon oil
4 -6 garlic cloves, chopped
1/4 cup brown sugar
1/4 cup heavy cream

Steps:

  • Sprinkle the salt and pepper onto the chicken.
  • In a medium to large sized skillet (I like cast iron) heat the oil over medium-high heat until almost smoking.
  • Add the chicken breasts and garlic to the pan and brown the first side of chicken, about 5 minutes.
  • Flip the chicken and brown the other side, about 3 minutes.
  • Remove the chicken from the pan and add the brown sugar to the pan.
  • Allow the sugar to melt about half way and add the cream.
  • Bring to a bubble and add chicken back to pan
  • Simmer for 3-5 minutes and serve over butter egg noodles or rice.

13 ounces puff pastry, defrosted if frozen
3 medium heads of garlic, cloves separated and peeled
1 tablespoon olive oil
1 teaspoon balsamic vinegar
3/4 tablespoon sugar
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme, plus 3 sprigs for garnish
3/4 teaspoon fine sea salt
4 1/2 ounces soft, creamy goat cheese, such as chevre
4 1/2 ounces hard, mature goat cheese, such as goat gouda
2 large eggs
6 1/2 tablespoons heavy cream
6 1/2 tablespoons creme fraiche
Freshly ground black pepper

Steps:

  • Roll out puff pastry into a 16-inch circle. Fit puff pastry into an 11-by-1 1/2-inch round fluted pan with a removable bottom. Place a parchment paper-round on top of puff pastry; top with pie weights or dried beans. Transfer to refrigerator; chill for 20 minutes.
  • Preheat oven to 350 degrees. Transfer tart shell to oven and bake for 20 minutes. Remove weights and paper and bake until pastry is golden, 5 to 10 minutes more. Remove from oven and set aside.
  • Place garlic cloves in a small saucepan filled with water. Place saucepan over medium heat and bring to a simmer; simmer for 3 minutes. Drain and return cloves to saucepan. Add olive oil and place saucepan over high heat; cook, stirring occasionally, until garlic is fried, about 2 minutes. Add vinegar and 1 cup water; bring to a boil and immediately reduce to a simmer. Let simmer for 10 minutes. Add sugar, rosemary, chopped thyme, and 1/4 teaspoon salt. Continue simmering over medium heat until most of the liquid has evaporated and garlic is coated in a dark caramelized syrup, about 10 minutes more. Remove from heat and set aside.
  • Break both goat cheeses into pieces and scatter in tart shell; spoon garlic cloves and syrup over cheese. In a large glass measuring cup, whisk together eggs, cream, creme fraiche, and remaining 1/2 teaspoon salt; season with pepper. Pour egg mixture over cheese and garlic filling, making sure the cheese and garlic are still visible.
  • Transfer tart to oven and bake until tart filling is set and top is golden brown, 35 to 45 minutes. Remove from oven and let cool slightly before removing tart from pan. Trim tart as necessary and garnish with thyme sprigs; serve.

3 3/4 pounds russet potatoes, peeled, cut into 1-inch pieces
3/4 cup mascarpone cheese* (about 6 ounces)

Steps:

  • Melt butter in large nonstick skillet over medium heat. Add leeks and stir to coat. Cover and cook until leeks are golden brown, stirring every 5 minutes, about 20 minutes total. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat before using.)
  • Combine 1/2 cup milk and garlic in medium saucepan. Bring to simmer over medium-low heat. Reduce heat to very low, cover, and cook until garlic is soft, about 10 minutes. Remove from heat. Using back of fork, mash milk-garlic mixture to paste. Set aside.

  • Preheat oven to 400 degrees. Slice the top off the head of garlic, place on a piece of foil, sprinkle with salt, and drizzle olive oil over top. Roast about 30 minutes. Once cool enough to handle, squeeze the garlic into a small bowl and mash with a spoon into a paste.
  • Melt the butter in a pan and saute the onions over medium heat for about 45 minutes. You want the onions to caramelize in their own sugars and take on a nice golden brown color. This may take up to an hour, depending on how dialed your heat is. If they turn black, it was too hot!
  • Season the chicken breasts with salt, pepper, and thyme on both sides. Saute in olive oil over medium-high heat for about 2-3 minutes per side. You only want a nice golden crust here.
  • Spread the roasted garlic paste over top of the chicken breasts and finish them in the 400 degree oven for about 10 minutes or until the juices run clear. Let the chicken rest on your cutting board for 5 minutes while you prepare the sauce from the pan drippings.
  • Drain the excess olive oil from the pan and place over high heat. Deglaze with chicken broth and the optional wine, scraping the browned bits off the pan with a wooden spoon. You want to boil this rapidly and reduce it down to about a third of what it was (or until it's a nice sauce consistency). Taste and correct the seasoning with salt and pepper.
  • To plate, slice the breasts diagonally, lay the slices one atop the next, drizzle with the sauce, and top with the carmelized onions.

1 large whole head of garlic
1 1/2 tablespoons olive oil
9 cups thinly sliced sweet onions
2 1/2 cups sliced leeks
1 teaspoon salt
1 teaspoon dried thyme
2 tablespoons flour
1/3 cup dry white wine
30 ounces chicken broth
2 cups milk
6 tablespoons sour cream
toasted caraway seed (optional)

Steps:

  • Preheat oven to 350°F.
  • Remove the papery outer skin from garlic, but do not peel or separate cloves.
  • Rub 1-1/2 tsps oil over garlic head; wrap in foil and bake for one hour.
  • Let cool ten minutes; separate cloves and squeeze to extract garlic pulp.
  • Set pulp aside.
  • Heat remaining oil in a pot over medium heat; add onions and leeks and cook for 30 minutes, stirring often.
  • Add 1/2 tsp salt and thyme; cook an additional 30 minutes or until onions are golden.
  • Stir in flour; add wine and broth and bring to a boil; reduce heat and simmer 30 minutes.
  • Add garlic pulp, remaining salt and milk to onion mixture.
  • Simmer 8 minutes or until thoroughly heated.
  • Place half of the mixture in the blender and process until smooth; pour into a soup tureen or another pot and repeat with second half of mixture.
  • Garnish with sour cream and toasted caraway seeds (optional).

1 pound ground bison
1 pound ground beef sirloin
1 yellow onion, minced
4 cloves garlic, minced
2 tablespoons chopped fresh parsley
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon seasoning salt
1/4 cup ketchup
2 tablespoons Worcestershire Sauce
Freshly cracked black pepper, to taste
Kosher salt, optional
Olive oil, for cooking
2 tablespoons bacon fat or olive oil
1 yellow onion, sliced thin
Kosher salt and freshly ground black pepper, to taste
1/2 cup prepared mayonnaise
2 tablespoons chopped fresh parsley
4 cloves raw garlic, chopped
Kosher salt and freshly ground black pepper, to taste
4 slices Wisconsin Cheddar cheese
4 burger buns
1 cup fresh arugula greens
4 cornichon pickles

Steps:

  • To make the burgers:
  • In a large bowl mix the bison, beef sirloin, onions, garlic, and parsley until just combined. Add in the onion powder, garlic powder, seasoning salt, ketchup, Worcestershire, and a few turns of freshly ground black pepper. Add it all to the meat mixture and mix well to combine. Heat a large saute pan over medium-high heat and cook a small portion of the meat. Taste the cooked beef to see if you need to add salt. Add salt to the meat mixture to taste. Divide the meat into 4 evenly portioned round patties and set aside.
  • To make the onions:
  • Heat the bacon fat over medium-high heat in a large saute pan and add the onions. Cook for 1 minute, then season with salt. Cook the onions, stirring a lot, until they start to turn brown. If the onions start sticking to the pan and turning too dark, pour in a spoonful of water and scrape with a wooden spoon to pull them off the pan. Continue to cook and stir the onions until they're dark brown and caramelized, about 8 to 10 minutes. Turn off the heat and set aside.
  • To make the mayonnaise:
  • In a bowl, combine the mayonnaise, parsley, garlic, salt, and pepper, to taste and mix well.
  • To serve:
  • Reheat the large skillet over medium-high heat and drizzle in some olive oil. Heat the olive oil then place the burger patties in the pan. Cook for 3 minutes on each side for medium-rare. Top the burgers with a slice of cheese. To assemble, spread some garlic mayo on the bottom of the toasted bun. Put the burger on the mayo, top with caramelized onions, and then arugula. Cover with a bun top. Stick a toothpick into a cornichon and then stick into the top of the burger and serve.

Steps:

  • 1. There are many ways to roast garlic, this is what I do. Set oven to 350 I use my toaster oven
  • 2. I try to rub off as much as the white paper that covers each clove as it will stick like crazy to the garlic when done. A few times I have removed the garlic from the shells for me it was such a waist of time and each time I have done this so much of the garlic has burned, and with out doing the smash the clove trick its so time consuming.
  • 3. You can cut the top of the garlic off some will give it a splash of olive oil when its cut some will not. which ever you choose just wrap the head of garlic in foil and check on it from time to time with a squeeze, if you find it is tender then give it a look. you want just like the caramelized onions to be a dark gooey brown the photo shown could in my would be cooked longer.
  • 4. When it is color you want take it out and please let it cool getting that sticky hot garlic on your fingers you only want to do once. pull the cloves apart and give each clove a squeeze or just grab the entire head and squeeze the heck out of it, I do this on plastic wrap because this is how I will store it.
  • 5. I will freeze the roasted garlic when I do a full bag of it. It can be mixed into soft butter tossed in mashed potatoes, sauces soups stews anything use your imagination

The broccoli is slowly caramelized to bring out its sweetness, then enlivened with a squeeze of lemon, a pinch of crushed red pepper and some toasted cashews :) .Update: 11/07/2008 it has been suggested by a few who have reviewed the recipe that they would increase the amount of garlic, so maybe it would make for a nice change!! ;)

1/2 cup water
3 garlic cloves, thinly sliced (use more those of you that want a lot of garlic)

2 tablespoons fresh lemon juice (not the bottled kind)
toasted cashews, chopped

Steps:

  • In a large, deep skillet, heat 2 tablespoons of the olive oil.
  • Add the broccoli, cut side down, cover and cook over moderate heat until richly browned on the bottom, about 8 minutes.
  • Add the water, cover and cook until the broccoli is just tender and the water has evaporated, about 7 minutes.
