5 tablespoons olive oil, divided
1 tablespoon butter
8 cups thinly sliced onions (about 3 pounds)
3 garlic cloves, minced
1/2 cup port wine
2 cartons (32 ounces each) beef broth
1/2 teaspoon pepper
1/4 teaspoon salt
24 slices French bread baguette (1/2 inch thick)
2 large garlic cloves, peeled and halved
3/4 cup shredded Gruyere or Swiss cheese

Steps:

  • In a Dutch oven, heat 2 tablespoons oil and butter over medium heat. Add onions; cook and stir until softened, 10-13 minutes. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 30-40 minutes. Add minced garlic; cook 2 minutes longer., Stir in wine. Bring to a boil; cook until liquid is reduced by half. Add broth, pepper and salt; return to a boil. Reduce heat. Simmer, covered, stirring occasionally, for 1 hour. , Meanwhile, preheat oven to 400°. Place baguette slices on a baking sheet; brush both sides with remaining 3 tablespoons oil. 3 large sweet onions,peeled and chopped
2 Tbsp butter
2 c white wine, medium
6 c vegetable broth or beef broth
4 sprig(s) fresh thyme or dried
3 Tbsp olive oil
french bread,toasted
1/2 c swiss cheese or your favorite

Steps:

  • 1. Heat skillet over medium heat until hot.Add butter,oil and onions, and cook until soft and caramel brown. About 20 minutes, stirring sometimes.
  • 2. Add wine, thyme and cook another 10 minutes.Transfer to crock pot,add broth, salt and pepper.

Steps:

  • quarter and then slice onions and break apart nested pieces
  • place onions pieces and olive oil into slow cooker and stir to coat
  • cover and cook on low for 12-14 hours (It is great to do this overnight)
  • add all ingredients but bread and cheese into slow cooker
  • cover and cook on low for 4-6 hours
  • when ready to serve, place soup into individual bowls
  • place a piece of toasted French bread onto of soup and cover with cheese
  • place bowl under broiler for 5 minutes until cheese is melted and bubbling

3 pounds sweet onions, such as Vidalia, halved and thinly sliced (9 cups)
2 tablespoons unsalted butter
1 clove garlic, minced (1 teaspoon)
3 thyme sprigs
1 bay leaf
Kosher salt and freshly ground white pepper
1/2 cup dry vermouth or dry white wine
2 quarts beef stock, preferably homemade
1/3 cup sweet Marsala, Madeira, or port wine
6 slices French bread or other soft country loaf (each 1 inch thick), lightly toasted
8 ounces Gruyère, coarsely grated (2 cups)

Steps:

  • Heat oil in a large, heavy pot over medium. Add onions and cook, stirring occasionally, until soft and beginning to turn golden, 35 to 40 minutes (if onions develop color quickly, reduce heat).

4 pounds onions
2 teaspoons white sugar

1 (750 milliliter) bottle dry white wine
1 quart chicken broth
1 small cinnamon stick
