6 whole shallots, peeled
3 tablespoons canola oil
1 tablespoon sugar
Kosher salt and freshly ground pepper
3/4 pound slab bacon, thinly sliced
1/2 head green cabbage, finely shredded
1/2 pound Brussels sprouts, outer layer removed, thinly sliced
Pinch of red pepper flakes
Splash of red wine vinegar

Steps:

  • Preheat the oven to 400 degrees F. Put the shallots in a small baking dish, toss with 1 tablespoon canola oil and the sugar and season with salt and pepper. Roast, turning a few times, until golden brown and caramelized, 40 to 45 minutes. Let cool slightly, then thinly slice.
  • Put the bacon in a large saute pan over medium heat and cook, stirring occasionally, until the fat has rendered and the bacon is golden brown and crisp, about 10 minutes. Remove with a slotted spoon to a plate lined with paper towels.
  • Pour off all but 1 tablespoon of the bacon fat, then add the remaining 2 tablespoons canola oil to the pan. Return to the stove over medium heat and heat until the oil begins to shimmer. Add the cabbage and Brussels sprouts, season with salt, pepper and the red pepper flakes, and cook until the vegetables are soft and light golden brown, about 15 minutes. Stir in the vinegar and the shallots. Transfer to a platter and top with the crisp bacon.

4 anchovy fillets

Steps:

  • Mince one garlic clove. Melt the butter in a small skillet over medium heat. Add the anchovies and cook, mashing with a spatula, until they dissolve into the butter. This is a Swedish version of a dish with roots in the Ottoman Empire, an infidel's version of Turkish dolmas, made not with lamb and grape leaves but with ground pork and beef cloaked with deeply caramelized cabbage. It is served here with lingonberry preserves cut with vinegar and Worcestershire sauce, and made velvet with butter. The dish goes beautifully with boiled potatoes. In Sweden, you'd use golden syrup to caramelize the cabbage, but molasses works just as well. The Swedish chef Magnus Nilsson told me the result is no less Nordic for the substitution. "Cabbage smells in a very special way when it almost burns," he said. "It gets savory, almost like a beef stock. It tastes almost brown and umami yummy." You'll want to eat it right away, but the leftovers make for a fine sandwich in coming days.

1 head green cabbage, approximately 3 pounds, cored and shredded
3 tablespoons molasses

3/4 pound ground beef
3/4 pound ground pork
1 small yellow onion, peeled and chopped
1 cup heavy cream
4 tablespoons breadcrumbs
1/3 cup chicken, beef or vegetable stock, ideally homemade or low-sodium store-bought (or water)
1/3 cup lingonberry preserves
1 tablespoon red-wine vinegar
1 tablespoon unsalted butter
1 teaspoon Worcestershire sauce, or to taste

Steps:

  • Heat oven to 350. Put a large pan over medium-high heat, and add the butter. When it starts to foam, add the cabbage and molasses, lower the heat to medium and sprinkle with salt. Cook slowly, stirringoften, until all the liquid has evaporated and the cabbage is caramelized, approximately 20-25 minutes.
  • While the cabbage is cooking, lightly mix the meats in a large bowl, then add the onion, cream and breadcrumbs, and mix again to combine.
  • When the cabbage is done, add about a third of it to the meat mixture, and mix to combine. Use the remaining butter to grease an 8-inch-square baking pan, and transfer the meat mixture to it, spreading it out to cover the whole surface evenly. Spread remaining cabbage over the meat, pour the stock or water over the top and place in the oven, on a sheet tray, to cook for approximately 40 to 45 minutes, or until the cabbage is very, very caramelized, almost dry and crunchy at the edges. Allow it to sit for 10 minutes or so before serving.
  • While the meat and cabbage cooks, make the sauce. Heat lingonberry preserves, vinegar and butter in a small pot set over medium heat, then add Worcestershire sauce to taste. Serve alongside the kalpudding.

6 tablespoons unsalted butter
1/2 cup sugar
1 1/4 teaspoons coarse salt
2 medium Granny Smith or other tart, firm apples, 1 pound total, peeled, cored, and cut into 1 1/2-inch wedges
1 large onion, peeled and cut into 1 1/2-inch wedges
1 small (1 1/2 pounds) red cabbage, cored and cut into 1 1/2-inch wedges through the core
3/4 cup apple cider vinegar
3/4 cup water

Steps:

  • Melt butter in a medium stockpot or Dutch-oven (at least 11 inches in diameter) over medium-high heat. Add sugar and salt, and stir to dissolve. Add apples and onion, in as close to a single layer as possible. Turn to coat in butter mixture. Let cook, shaking pan occasionally and turning over once, until sugar is beginning to caramelize and coat the apples and onions, about 10 minutes.
  • Add cabbage, vinegar, and water. Bring to just a boil. Reduce to a simmer, cover, and cook until cabbage is tender and liquid is reduced to a syrup, 25 to 30 minutes. If necessary, remove lid in the last 5 minutes and cook, uncovered, to reduce liquid to desired consistency; most of the apples will disintegrate.
  • Transfer cabbage and apples to a bowl and serve immediately.

2 lbs onions, thinly sliced
4 cups thinly sliced green cabbage
1 1/2 cups diced smoked ham (such as black forest)
3/4 lb fusilli or 3/4 lb rotini pasta
1/3 cup grated parmesan cheese
1/2 cup canned beef broth (about)

Steps:

  • Add oil and onions to a skillet and saute until onions are dark brown, about 25 minutes.
  • Add cabbage and ham and saute until cabbage wilts, about 8 mintues.
  • Meanwhile, cook pasta in heavy large pot of boiling salted water until just tender but still firm to bite.
  • Drain, return pasta to same pot.
  • Add onion mixture and cheese to pasta.
  • Toss over medium heat until warmed through, adding broth by 1/4 cupfuls to moisten if dry, about 4 minutes.

1 medium yellow onion, thinly sliced
1 teaspoon fresh thyme leaves
1 cup heavy cream
4 ounces goat cheese

Steps:

  • Bring a large pot of heavily salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente, about 7 minutes; drain.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet or Dutch oven over medium. Add the sausage and cook, breaking apart with a wooden spoon, until fully cooked and crumbled, about 5 minutes. Using a slotted spoon, transfer the sausage to a plate, leaving the fat in the pan.

Steps:

  • Preheat oven to 350°F. Mix tomato paste, garlic, coriander, cumin, and red pepper flakes in a small bowl.
  • Cut cabbage in half through core. Cut each half into 4 wedges. Heat ¼ cup oil in a large cast-iron skillet over medium-high. Working in batches if needed, arrange cabbage in pan, cut side down, and season with salt. Cook until cut sides are lightly charred, about 4 minutes per side. Transfer cabbage to a plate.
  • Pour remaining ¼ cup oil into same skillet. Add spiced tomato paste, reduce heat to medium, and cook, stirring often, until beginning to split and darkened slightly, about 3 minutes. Pour in water to come halfway up sides of pan (about 1½ cups), season with salt, and bring to a simmer. Nestle cabbage wedges back into skillet (they should have shrunk while browning; a bit of overlap is okay). Transfer skillet to oven and bake cabbage, turning halfway through, until liquid is mostly evaporated and cabbage is deeply browned around the edges and very tender, 40-50 minutes.
  • To serve, scatter cilantro over cabbage; top with yogurt and pepper.

1 savoy cabbage, cored and sliced
8 ounces bacon lardons
1 large onion, sliced
1/4 cup butter

Steps:

  • Heat lidded skillet over a medium heat and add butter.
  • Saute the onion and bacon in the butter until bacon begins to render fat and onion is just translucent.
  • Add sliced cabbage.
  • Place lid on skillet to allow cabbage to soften.

2 cups of cabbage, cut into 11/2" squares
2 slices bacon, cut into small dices
4 - 6 tbsp bacon grease, or butter or oil
2 1/2 tbsp white sugar
2 large onions, finely diced, yellow or sweet
1/2 cup beef stock (use a little as necessary)
1 tsp salt
1/2 tsp freshly ground black pepper
1 cup of pasta, small flat egg noodle
2 tsp parsley, fresh chopped, garnish

Steps:

  • 1. Cut the cabbage into small squares, (no stalk) then finely dice the onion. Set aside until needed. Next cut the bacon into small pieces and add to a hot frying pan and cook down.
  • 2. Lower the heat and add the sugar to the pan with the bacon and allow to caramelize, then slowly and carefully mix in the onions, braising briefly (5 minutes) and then add the cabbage.
  • 3. Season the cabbage with salt and pepper and pour a little beef stock over the cabbage and steam for 30 minutes or until soft. (adding a little more stock if necessary). You do not want it to become to wet.
  • 4. While the cabbage is steaming; bring water and salt to a boil in a large pot and cook the pasta al dente. Then, strain, and rinse in cold water, making sure to drain really well.
  • 5. Just before serving add the drained pasta and heat again briefly (if necessary). Taste the cabbage to see if you need to season more and garnish with chopped parsley.

2 garlic cloves, pressed thru a garlic press or squished with salt to make a paste

  • Cut the onion in half, then cut into thin strips, about 1/2 inch thick. Heat a large fry pan on medium heat, (a pan that has a tight fitting lid). Add evoo, and toss in garlic, then onions. let them get transparent, then s & p to taste. continue cooking until the onions are lightly golden, about 8 minutes. In the mean time, chop the cabbage into the same thickness of the onion. Toss into the pan, stir. Add the water, and cover for 4 - 5 minutes. check until wilted but slightly crunchy. enjoy.
