Time 20m

Yield 4 servings

Number Of Ingredients 6

1 tablespoon olive oil
1 pound Brussels sprouts, trimmed and halved
1 shallot, finely chopped
1 teaspoon finely grated lemon zest plus 2 tablespoons juice
1/2 cup shelled pistachios, finely chopped
Sea salt, for sprinkling

Steps:

  • In a large skillet, heat the olive oil over medium heat. Add the Brussels sprouts and shallot and saute until just wilted, about 5 minutes, being careful not to let them burn. Add the lemon zest, juice and pistachios and continue to saute until completely heated through, 3 to 5 minutes. Top with a sprinkle of sea salt.

Tips:

  • For the best caramelization, use Brussels sprouts that are small and uniform in size.
  • Cut the Brussels sprouts in half lengthwise, so they cook evenly.
  • Heat the oil or butter in a large skillet over medium-high heat before adding the Brussels sprouts. This will help them brown and caramelize.
  • Don't overcrowd the skillet. If necessary, cook the Brussels sprouts in batches.
  • Stir the Brussels sprouts occasionally so they cook evenly.
  • Add the honey or maple syrup and pistachios towards the end of cooking, so they don't burn.
  • Season the Brussels sprouts with salt and pepper to taste.
  • Serve the Brussels sprouts immediately, while they are still hot and crispy.

Conclusion:

Caramelized Brussels sprouts with pistachios are a delicious and healthy side dish that can be enjoyed by people of all ages. They are also a great way to get your daily dose of vegetables.
