1 cup whole almonds, shelled
1/3 cup pure maple syrup or brown sugar
1 tablespoon butter or pareve margarine

Steps:

  • Preheat oven to 375 degrees. Line a 9-inch-square baking pan (or similar size pan) with parchment paper. Scatter almonds in pan; pour maple syrup or brown sugar on top, stirring to cover nuts. Cut butter into small dice and sprinkle on top.

1/2 pound whole unblanched almonds
Rice paper wafer sheets (from candy-and-cake-decorating supply stores; see Sources, page 340)
2/3 cup honey
1/4 cup sugar
1/4 teaspoon cinnamon

  • Spread the almonds on a sheet pan, and toast them in a 300˚ oven for 15 minutes, or until they are light gold and fragrant.
