- Preheat oven to 350°. In a large bowl, beat butter and sugars until crumbly. Beat in yogurt, oil and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture., Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Flatten with bottom of a glass dipped in flour. Bake until edges are light brown, 7-9 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely., In a microwave, melt caramels with whiskey; stir until smooth. Spread over cookies. Drizzle with chocolate; sprinkle with salt if desired. Let stand until set. Store in an airtight container.

- Line 9-inch square pan with parchment paper; spray with cooking spray.
- In 1-quart saucepan, heat butter, whipping cream, whiskey, vanilla and salt to boiling, stirring frequently. Remove from heat; set aside.
- In 3-quart saucepan, mix sugar, corn syrup and water. Heat to boiling over medium-high heat. DO NOT STIR. Boil until sugar turns a light golden amber color and candy thermometer reads 310°F.
- When sugar mixture reaches 310°F, add cream mixture. Beating with whisk, cook until thermometer reads 248°F. Pour caramel into pan; cool 10 minutes. Sprinkle with sea salt; cool completely.
- Cut into squares; wrap individually in parchment paper.

- 1. Preheat the oven to 375 degrees. Cream the butter and sugar until light and fluffy. Add the egg and beat until incorporated.
- 2. Now add the whiskey and mix. The mixture will look curdled.
- 3. Add the salt, baking powder, baking soda, and nutmeg and beat until incorporated. Scrape down the sides of the bowl and mix again.
- 4. Add the oatmeal flour and all-purpose flour slowly while the mixer is going. Mix until all the flour is incorporated. Add the grated apple, caramel pieces, and walnuts, mix until incorporated.
- 5. Using a large scoop, scoop rounded dough balls onto baking sheets lined with foil or parchment..Bake at 375 for 8-10 minutes, until lightly browned.
- 6. Allow to cool for 5 minutes before removing from the foil or parchment. The caramel may stick so remove carefully to not break the cookies.
- 7. All done, have a sip of whiskey :)
