1 teaspoon lemon juice
4 apples - peeled, cored and chopped

1 cup white sugar
1 cup boiling water
2 tablespoons butter
5 tablespoons all-purpose flour
¼ teaspoon salt
½ cup milk
3 egg yolks, beaten
1 (9 inch) pie shell, baked
3 egg whites
¼ teaspoon cream of tartar
½ cup white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C.)
  • In a heavy iron skillet, over medium heat, stir 1 cup sugar until melted and golden brown. Reduce heat to low and mix in boiling water. Set aside.
  • In a heavy saucepan, melt butter. Remove from heat. Add flour and salt into butter mixing thoroughly. Stir in 1/4 milk.
