1 package (8 ounces) cream cheese, softened
1/2 cup sugar
4 large eggs, room temperature

Steps:

  • Preheat oven to 375°. Line a 9-in. deep-dish pie plate or cast-iron skillet with crust. Trim and flute edges. In a small bowl, beat cream cheese, sugar, 1 egg and vanilla until smooth. 3 tablespoons butter, melted
1/4 cup plus 2 tablespoons all-purpose flour, divided
1 jar (12-1/4 ounces) caramel ice cream topping
1 cup chopped pecans, divided
5 packages (8 ounces each) cream cheese, softened
1-3/4 cups sugar
1-1/2 teaspoons vanilla extract
4 large eggs, room temperature, lightly beaten
2 large egg yolks, room temperature, lightly beaten
1/3 cup heavy whipping cream
SOUR CREAM TOPPING:
2 cups sour cream
1/3 cup sugar

  • Preheat oven to 350°. Combine cookie crumbs and butter; press onto the bottom and 1 in. up the sides of a greased 10-in. springform pan. Bake until set, 8-10 minutes. Cool on a wire rack. ½ cup white sugar

4 tablespoons unsalted butter, softened
2 tablespoons granulated sugar
2 tablespoons light brown sugar
1/3 cup dark brown sugar
1/2 cup heavy cream

Steps:

  • PREPARE THE CRUST::
  • Preheat the oven to 375°F.
  • Line a baking sheet with parchment paper & wrap the outside of a 10-inch round springform pan with foil.
  • In a medium bowl, toss the pecans with 1/2 teaspoon of the butter, 1/2 tablespoon of the granulated sugar, the brown sugar, the cream and salt.
  • Spread the nuts on the prepared baking sheet and arrange them, right side up in a single layer.
  • Bake for about 18 minutes, until the sugar is caramelized and the pecans are toasted; let cool.
  • Transfer all but 12 of the pecans to a food processor.
  • Add the graham crackers and pulse until finely ground.

  • Press the crumbs over the bottom of the pan and two-thirds of the way up the side of the prepared springform pan.
  • PREPARE THE FILLING:.
  • In a clean food processor, pulse the cream cheese with the sugar until smooth.
  • Add the eggs, one at a time, and pulse until incorporated.
  • Scrape down the side of the bowl.
  • Pulse in the vanilla and sour cream.
  • Scrape the batter into the pan and bake in the center of the oven for about 1 hour, until the top of the cheesecake is lightly golden in spots and the center is slightly jiggly.
  • Transfer the cake to a rack and let cool completely.
  • Wrap in plastic and refrigerate overnight.
  • Unwrap the cheesecake and discard the foil.

1 1/2 cups graham cracker crumbs
1 cup coarsely chopped pecans, divided
2 tablespoons granulated sugar
1/4 cup butter, melted

1/2 cup sour cream
3 eggs
1 (14 ounce) bag caramels, divided
2 tablespoons water, divided

Steps:

  • Mix crumbs, 1/2 cup pecans, granulated sugar and butter.
  • Line 13x9-inch baking pan with foil; press crumbs firmly onto bottom of pan.
  • Bake at 350 degrees for 10 minutes.

I won 1st place of $2,500 on the KTLA Morning News Show in Los Angeles, CA. for this dessert. This contest was sponsored by the movie "Waitress". It's a lot of work but oh my, well worth it. I have not included some of my secret ingredients in order to keep it original but it is still good.

1 3/4 cups Nature Valley pecan crunch granola bars, crumbled fine
1/2 cup butter
3 tablespoons flour
3 tablespoons brown sugar
1/2 cup of melted butter
1/2 cup of chopped pecans (roasted in butter)
14 -22 ounces caramels (about 60 pieces)
5 ounces evaporated milk
2 tablespoons butter
3 (8 ounce) packages Philadelphia Cream Cheese
1 1/2 cups sugar
3 eggs
2 cups sour cream
1 teaspoon vanilla extract
1/2 teaspoon butter flavoring
1 cup fine chopped pecans, roasted in
butter

Steps:

  • Bake pecans in 1/2 stick of butter in oven for 15 minutes Combine in blender the pecans, granola crumbs, flour and brown sugar, Reserve 1/3 cup of the granola mixture to put on the top of the cheesecake. Melt a half a cup of butter and mix it with the Granola mixture then put the rest of the mixture on the bottom and sides of a 10 inch springform pan pressing firmly. Place in the preheated (350) oven and bake for crust for 10 to 12 minutes. Remove from the oven and cool.
  • In a double broiler or a metal bowl steamed over hot water, place caramels in the bowl with the evaporated milk and stir constantly until completely melted stir in the butter. Pour caramel mixture over the bottom of the granola crust. Reserve approximately 1/2 cup or more for the batter. (I now make my caramel from scratch it's a lot easier to work with and not as hard as the candy caramels. If you know how to make good caramel from scratch I strongly recommend that instead).
  • Do not let the caramel sauce touch the pan or it will stick and break the pan.
  • Beat the cream cheese until light and fluffy then gradually add the sugar and mix it well at medium speed. Beat in the sour cream, vanilla and butter flavoring. Add caramels to the cream cheese mixture. Stir in the remaining roasted pecans. Add eggs one at a time, beat well after each addition.
  • Pour batter over the caramel mixture. Sprinkle the crumb mixture over the batter. Bake at 475 for 10 minutes then reduce temperature to 300 and bake for 55 minutes. Allow cheesecake to cool down in the oven with the oven off. Let cool then refrigerate for at least 6 hours before serving, preferably over night.
  • This cheesecakes success required that you use a standard cheesecake water-bath to avoid cracking. Special instruction on cutting: Take a very sharp knife and run under hot water before each cut. Cut straight down and force the knife through the caramel because it will be very hard. The first cut is always the hardest. It gets easier with each cut.

1/2 cup butter or 1/2 cup margarine, melted and divided
3 (8 ounce) packages cream cheese, softened
1 cup sugar
6 tablespoons all-purpose flour, divided
3 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup firmly packed light brown sugar
1/2 cup chopped pecans, toasted
15 caramels, unwrapped
2 tablespoons heavy whipping cream

Steps:

  • Stir together gingersnaps and 1/4 cup melted butter; press mixture into bottom of a 9-inch sprinform pan.
  • Beat cream cheese, sugar, and 2 tablespoons flour at medium speed with an electric mixer for 2 minutes. Add eggs, vanilla, and salt; beat 3 minutes. Pour batter into prepared crust. Set aside.

  • To make caramel topping, place caramels and whipping cream in a 1-cup microwave-safe bowl. Microwave on high for 30 seconds to 1 minute, stirring halfway through cooking time, until melted.

1/2 cup pecan halves
1 stick plus 1/2 tsp. unsalted butter, melted
1/3 cup plus 1/2 tbsp. sugar
2 tbsp. light brown sugar
1 1/2 tbsps. heavy cream
pinch of salt
2 packets graham crackers, about 10 oz. crushed
1 lb. full fat cream cheese, softened
1 cup sugar
3 large eggs
1 tsp. vanilla extract
24 oz. sour cream
caramel sauce:
4 tbsp. unsalted butter, softrened
2 tbsp. sugar
2 tbsp. light brown sugar
1/3 cup dark brown sugar
1/2 cup heavy cream
1/4 tsp. vanilla extract
1/4 tsp. salt

Steps:

  • 1. Preheat oven to 375. Line baking sheet with parchment paper and wrap the outside of a 10 inch springform pan with foil. Toss the pecans with 1/2 teaspoon of butter, 1/2 tablespoon sugar, the brown sugar, cream and salt in a bowl. Spread the nuts on baking sheet. Bake for 18 minutes, until sugar is caramelized and pecans are toasted. Let cool.Put all but 12 of the pecans in a food processor along with the graham crackers. Pulse until fine. Add the remaining melted butter and 1/3 cup of sugar and pulse until crumbs are moistened. Press crumbs over bottom and 2/3 up the sides of the prepared pan. To make the filling, in a clean processor, pulse the cream cheese and sugar until smooth. Add the eggs, one at a time, pulse unti mixed. Pulse in vanilla and sour cream then scrape filling into the prepared pan. Bake for about an hour or until the top of the cheesecake is lightly golden in spots and center is slightly jiggly. Transfer cheesecake to a rack and let it cool completely. Wrap it in plastic and refrigerate it overnight. To make the sauce, in a pan, mix the butter with all the sugars and bring to a boil. Stir constantly. Add the cream. Boil for 2 minutes. Transfer to pitcher. Stir in the vanilla and salt and refrigerate until cold, at least 2 hours or overnight. Unwrap cheesecake and discard foil. Remove ring and transfer cake to a plate. Arrange 12 reserved pecans on top. Using a warm slightly moistened knife, cut cake into wedges, wiping and rewetting the blade between slices. Transfer to plates and pour some of the caramel sauce on top. Pass remaining sauce.

1 1/4 cups vanilla wafer crumbs
1/4 cup white sugar
3 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
3 eggs
1/4 cup dark rum
1 teaspoon vanilla
1/2 teaspoon nutmeg
1 tablespoon cornstarch
1 cup water
2 tablespoons butter, melted
1/3 cup packed light brown sugar
2 tablespoons dark rum
1/2 cup chopped pecans

Steps:

  • Preheat oven to 300 degrees.
  • Combine 1/4 cup butter, wafer crumbs and white sugar.
  • Press firmly on the bottom of a 9-inch springform pan.
  • In a large bowl, beat the cream cheese until fluffy.
  • Gradually beat in the sweetened condensed milk until smooth.
  • Add eggs.
  • Mix well.
  • Stir in 1/4 cup rum, vanilla and nutmeg.
  • Pour into prepared pan.
  • Bake at 300 degrees for 40 to 50 minutes or until the cake springs back when lightly touched.
  • Cool.
  • Chill.
  • To make the sauce~In a small bowl, dissolve the cornstarch in the cup of water.
  • In a medium saucepan, melt the 2 tablespoons butter.
  • Stir in the brown sugar and cornstarch mixture.
  • Bring to a boil, stirring constantly.
  • Reduce heat and simmer for 10 minutes.
  • Remove from heat.
  • Add the 2 tablespoons dark rum.
  • Cool.
  • Just before serving, stir the pecans into the sauce.
  • Remove the sides of the springform pan from the cheesecake.
  • Serve with the sauce.

1 1/2 cups graham cracker crumbs
2 cups sugar, divided

2 cups sour cream

1 cup butterscotch caramel ice cream topping
1 (8 ounce) container whipped topping

Steps:

  • Preheat oven to 475°F.
  • For Crust, pour butter over graham cracker crumbs, .5 cup sugar, .5 cup pecans; stir well. Press into bottom of a 9" springform pan. Set aside.
  • For Filling, using an electric mixer, cream together cream cheese and 1.5 cups sugar, beating well. Add eggs, one at a time, beating well after each addition. Add sour cream, flavorings, and 1 cup of pecan pieces and stir. Pour over crust and bake at 475 F for 10 minutes. Lower the oven to 300 F and bake an additional 50 minutes. 20 caramels

If you like pecans, caramel and cheesecake...you'll love this pie! It's super easy if you go with the store bought caramel sauce. And it's easy if you opt to make your own caramel sauce, as I did. I found this in an old homemade cookbook and tweaked a little here and there.

1 unbaked pie crust
1 - 1 1/2 c pecan halves
1/2 c caramel sauce, homemade or something you'd find in ice topping section
2 - 8 oz packages cream cheese, softened
1/2 c sugar
1 tsp vanilla
3 eggs
HOMEMADE CARAMEL SAUCE, IF DESIRED
1/2 c butter
1 c brown sugar
3/4 c cream
pinch salt
1 tsp vanilla

Steps:

  • 1. Preheat oven to 325 degrees. Place pie pan onto cookie sheet for easier handling. Sprinkle pecans over crust, pour caramel sauce over top of the pecans. Set aside.
  • 2. In a medium bowl beat cream cheese with mixer until smooth and creamy, add sugar and vanilla mixing well. Mix in eggs, beating until smooth. Pour cheesecake mixture over caramel. Bake at 325 for 45-55 minutes. Top will no longer be jiggly and it will start to crack when done. Place on cooling racks to cool, drizzle with more caramel sauce when serving if desired. Store in refrigerator.
  • 3. You can use store bought caramel sauce or make this homemade sauce. Homemade Caramel Sauce: Melt butter in a saucepan over medium heat, add sugar stir until blended, whisk in cream and salt. Bring to a gentle boil and cook 5 minutes, boiling gently and whisking occasionally. Remove from heat and stir in vanilla. Allow to cool then store in a sealed container in refrigerator. I use a squirt bottle (like the type ketchup or BBQ sauce comes in at a restaurant) This can be made a couples days in advance, just pop in microwave to warm. Microwave only 15 seconds at a time.
