I'm not a huge fan of sweet rolls so this gives me what I want without wasting the rolls. I will often half this because it gives me plenty since they are addicting!

Tips:

  • To ensure your caramel doesn't burn, use a heavy-bottomed saucepan and stir it constantly.
  • To test if your caramel is ready, drop a small amount into a glass of cold water. If it forms a soft ball, it's ready.
  • Be careful not to overcook your caramel, as it will become hard and brittle.
  • For a richer flavor, use dark brown sugar instead of light brown sugar.
  • To make your candy even more decadent, add a tablespoon of butter or cream to the caramel mixture.
  • If you don't have a candy thermometer, you can use the cold water test to check the temperature of your caramel.
  • For best results, use fresh pecans.
  • You can also use other nuts, such as walnuts or almonds, in this recipe.
  • If your caramel pecan candy is sticking to the pan, try greasing the pan with butter or cooking spray before cooking.
