For the Genoise Cake Batter:
4 eggs (room temperature)
2/3 cup sugar
1 tablespoon Grand Marnier orange liqueur
2 teaspoons orange zest
3/4 teaspoon vanilla extract
1/4 teaspoon salt
1 cup cake flour
For the Chocolate Buttercream:
7 egg whites
1 1/3 cups granulated sugar
6 ounces unsweetened chocolate (melted and cooled)
1 teaspoon instant powder espresso
1/2 teaspoon vanilla extract
1 1/2 cups unsalted butter (softened)

Steps:

  • Gather the ingredients. Preheat the oven to 400 F.
  • Butter a 10 x 15-inch jelly-roll pan with a 1-inch lip and line it with parchment paper. Butter the parchment or spray it with cooking spray. Set the pan aside.
  • Beat the eggs for 5 minutes, until they turn thick and foamy.
  • Add the sugar, orange liqueur, orange zest, vanilla extract, and salt to the eggs and continue beating for 2 minutes.
  • Fold the flour, a few tablespoons at a time, into the whipped egg mixture.

  • Add the espresso powder, and vanilla extract into the egg whites and continue beating until thick and glossy.
  • Remove 4 tablespoons of the meringue and set to one side.
  • Continue beating and add in the melted chocolate and keep beating until the meringue has cooled completely.
  • Add the softened butter to the meringue, 2 tablespoons at a time, while beating on high speed, until all of the butter is incorporated into the frosting. If the buttercream becomes runny at any time in this process, refrigerate the meringue until it has chilled through and continue the process of beating the butter into the meringue.
  • Unroll the cake and set aside the towel. Evenly spread 2 cups of the chocolate buttercream on the inside of the cake, following its natural curve, gently form it into a cake roll.
  • Cut off the ends on the diagonal and reattach them in the center of the cake with a bit of buttercream to create a branch.
  • Spread the exterior of the buche de Noel with enough chocolate buttercream to cover it and gently pull a butter knife or small, offset spatula through the frosting to give the appearance of rough tree bark.
  • Again using a spatula, cover the ends of the logs with the reserved light-colored cream.
  • Finish by adding decorations like meringue mushrooms to complete the festive look.

1/4 cup all purpose flour
6 large eggs, separated
1/2 teaspoon salt
1/4 cup plus 1/3 cup sugar
2 tablespoons bourbon
6 tablespoons (3/4 stick) unsalted butter, melted, cooled
Frosting and caramel sauce
1 1/4 cups sugar
1/3 cup water
1 1/4 cups heavy whipping cream
1/2 cup (1 stick) unsalted butter
2 tablespoons bourbon
1/2 teaspoon salt
12 ounces bittersweet or semisweet chocolate, chopped
Fresh bay leaves or lemon leaves
Powdered sugar (for sprinkling)
6 large bananas, sliced (optional)
2 pints butter pecan or pecan praline ice cream

Steps:

  • For cake:
  • Preheat oven to 350°F. Line 17x12x1-inch rimmed baking sheet with parchment; butter paper. Pulse nuts and flour in processor until nuts are finely chopped (not ground). Using electric mixer, beat egg whites and salt in very large bowl until foamy. With mixer running, gradually beat in 1/4 cup sugar, beating just until stiff peaks form. Using electric mixer, beat yolks with 1/3 cup sugar and bourbon in large bowl until thickened, about 5 minutes. Add yolk mixture to egg-white mixture. Sprinkle nuts over; gently fold until almost incorporated. Add butter; fold gently just to blend. Pour into prepared baking sheet, spreading batter gently to form even layer.
  • Bake cake until edges begin to brown and cake is firm to touch, about 14 minutes. Cool in pan on rack.
  • For frosting and caramel sauce:
  • Stir 1 1/4 cups sugar and 1/3 cup water in heavy medium saucepan over medium heat until sugar dissolves. Increase heat; boil without stirring until deep amber, occasionally swirling pan and brushing down sides with wet pastry brush, about 9 minutes (time will vary, depending on size of pan). Remove from heat; immediately add cream (mixture will bubble vigorously). Whisk in butter, bourbon, and salt. Stir over medium heat until any caramel bits dissolve. Transfer 1 cup caramel sauce to small pitcher. Add chocolate to remaining caramel in saucepan. Let stand off heat 5 minutes; whisk until smooth. Transfer to bowl. Let frosting stand until spreadable, stirring occasionally, about 1 hour.
  • Spread 1 cup frosting over cake in even layer. Beginning at 1 long side and using parchment as aid, roll up cake jelly-roll style. Starting 1 inch in from each end of cake, cut off 3-inch-long diagonal piece from each end. Arrange cake, seam side down, on platter. Spread cut side of each 3-inch cake piece with some of frosting. ½ cup unsweetened cocoa powder

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a 10x15 inch jellyroll pan with parchment paper. In a large bowl, whip cream, 1/2 cup confectioners' sugar, 1/2 cup cocoa, and 1 teaspoon vanilla until thick and stiff. Refrigerate.

1 cup sugar
2 tablespoons water
1/2 cup cranberries

Steps:

  • For buttercream:
  • Whisk egg yolks, sugar and flour in medium bowl to blend well. Bring half and half to simmer in heavy medium saucepan. Slowly whisk hot half and half into egg mixture. Return egg mixture to same saucepan and cook until mixture boils and thickens, whisking constantly. Transfer mixture to medium bowl. Add chocolate and orange peel and stir until mixture is smooth. Press plastic wrap onto surface of pastry cream to prevent skin from forming. Cool completely. (Pastry cream can be prepared 1 day ahead. Refrigerate. Bring to room temperature before continuing.)
  • For cake:
  • Preheat oven to 300°F. Butter 11x17-inch jelly roll pan. Line with parchment. Butter and flour parchment. Coarsely grind toasted almonds with flour in processor. Using electric mixer, beat yolks with 5 tablespoons brown sugar in medium bowl until slowly dissolving ribbons form when beaters are lifted. Stir in orange peel and vanilla extract. Using clean dry beaters, beat whites with cream of tartar and salt in large bowl until soft peaks form. Gradually add remaining 5 tablespoons brown sugar and beat until stiff but not dry. Fold whites into yolk mixture. Gently fold in almond mixture.
  • Spread batter evenly in prepared pan. Bake until toothpick inserted into center comes out clean, about 30 minutes. Run small sharp knife around pan sides if necessary to loosen cake. Slide cake on parchment onto rack. Cool.
  • Slide cake on parchment onto work surface. Loosen cake from parchment using knife as aid. Sift powdered sugar over cake. Invert onto cookie sheet. Sprinkle with powdered sugar and invert onto another parchment sheet.
  • Using electric mixer, beat butter in large bowl until light and fluffy. Beat in Grand Marnier. Add pastry cream 1/4 cup at a time, beating after each addition until just blended.
  • Spread half of buttercream over cake, leaving 1/2-inch border. Starting at 1 long side, roll up cake jelly roll fashion. Arrange seam side down on parchment. Set aside 1/2 cup buttercream; spread remaining buttercream over cake. Cut 2 inches off each end of cake, cutting on diagonal. Transfer cake to platter. Attach ends to top of cake, forming branches. Spread reserved 1/2 cup buttercream over cake ends and seams. Cover and refrigerate at least 1 hour to firm buttercream. (Cake can be prepared 1 day ahead. Cover and refrigerate. Let cake stand at room temperature 20 minutes before serving.)
  • Arrange pine twigs on cake and on platter. Garnish with cranberries.
  • For Cranberries:
  • Cook 1/2 cup sugar and 2 tablespoons water in heavy small saucepan over low heat, stirring until sugar dissolves. Transfer to top of double boiler. Add cranberries. Cover berry mixture and place over simmering water. Cook 45 minutes, stirring occasionally. Remove from over water. Let cranberry mixture stand at room temperature overnight.
  • Place remaining 1/2 cup sugar on plate. Drain cranberries well. Add to sugar and turn to coat. Let dry at least 30 minutes. (Can be prepared 3 days ahead. Cover and refrigerate.)

40 grams sugar, plus 75 grams sugar
75 grams maple syrup
2 tablespoons whiskey (recommended: Jack Daniels)
1/2 vanilla bean, scraped
2 cups milk
28 grams butter
1/2 teaspoons salt
1/4 teaspoon maple extract
1 cup heavy cream
113 grams sugar
3 large egg yolks
1 whole egg
1 to 2 tablespoons whisky (recommended: Jack Daniels)

  • For the walnut biscuit:

Beat in both sugars and whip to a stiff, glossy meringue. Alternately fold the cake flour and egg yolks into the meringue in 3 batches, starting and ending with the flour. Fold in the nuts. Spread the batter evenly in the pan, and bake until the cake is pale gold, the center springs back when you press it lightly with your finger, and the edges start to pull from the sides of the pan, 10 to 12 minutes. ;
  • For the pastry cream:
  • Whisk the yolks, cornstarch, and the 40 grams sugar in a medium bowl; the mixture will be very thick, but try to whisk enough to remove most of the lumps. Put the 75 grams sugar in a medium saucepan and cook over medium heat until dark brown; don't worry if it crystallizes a bit. Turn the heat to low and whisk in the maple syrup, then whisk in the whisky, turn up the heat, and let simmer for 1 to 2 minutes to boil off the alcohol. Whisk the milk and vanilla bean scrapings into the caramel mixture and bring to simmer. Slowly whisk about half of the hot mixture into the yolks, then whisk that mixture back into the pot, bring to a boil, whisking, and cook, still whisking, until thickened. Remove from the heat and whisk in the butter, salt and maple extract. Pour into a shallow dish, press plastic wrap onto the surface, and chill until set and very cold, about 4 hours. Beat the cold pastry cream in a standing mixer until smooth. When ready to use, whip the cream until it is very stiff, then beat into the pastry cream. Chill until ready to use. ;
  • For the buttercream:
  • Put the sugar in a medium pot and add enough water just to moisten; use your fingers to wet the sugar evenly. Bring to a boil. While the sugar is heating, start beating the yolks and egg in a standing mixer with the whisk attachment. When the syrup reaches about 240 degrees F on a candy thermometer (softball stage), pour it into the yolks with the mixer still running, taking care not to pour it onto the whisk. Beat until cooled to room temperature. Beat in the whisky and the maple extract. Cream the butter in another mixing bowl using the paddle attachment. Beat in the cooled egg mixture until smooth. You can use it right away, or chill it overnight; if you chill it, rebeat when you are ready to assemble the cake. ;
  • For the sugared cranberries:
  • Have a cookie sheet or shallow dish and a slotted spoon next to the stove. Put the sugar in a medium pot and add enough water just to moisten; use your fingers to wet the sugar evenly. Add the cinnamon stick. Bring to a boil, add the cranberries, and immediately pull from the heat. Transfer the cranberries to the cookie sheet with the slotted spoon. Cool. ;
  • For the maple tuiles:
  • Cream the butter, maple syrup, vanilla bean scrapings and salt until smooth. Scrape the sides of the bowl and beat in egg whites until smooth. Beat in the flour. Let the batter rest and hour or so at room temperature, or overnight in the refrigerator. Bring to room temperature before baking. Preheat the oven to 325 degrees F. Line a sheet pan with a silpat. Using a stencil, smear the batter thinly on the silpat and bake until dark golden brown, about 6 to 8 minutes. Remove from the pan while still warm. If you want to shape the cookies, put them over a bottle or rolling pin while warm; let cool. If desired, brush lightly with luster dust. ;
  • Assembly:
  • Turn the cooled cake onto a piece of parchment or waxed paper with a long side near you. Spread the chilled pastry cream evenly over the surface, leaving a 2-inch border across from you. Using the parchment paper to lift, roll the cake as tightly as possible. Set seam side down on a platter or large pan, and chill for an hour or so. Frost the cake with the buttercream, smoothing the surface so it looks like bark. Decorate with candied cranberries, walnuts, orange peel, and tuiles. ;

1/3 cup cocoa
1 1/2 tablespoons orange rind, grated

  • With buttercream touching cake, place one piece atop cake off-center and the second on one long side to resemble tree stumps.
  • Transfer 1 cup chocolate buttercream to pastry bag fitted with 1/4 inch plain tip.
  • Spread remaining buttercream over cake.
  • Pipe buttercream in spirals on ends of buche and stumps, starting at center of each.
  • Run fork tines through buttercream to simulate bark.
  • Arrange holly and cranberries decoratively on buche.
  • Garish with Meringue Mushrooms right before serving.
  • Meringue Mushrooms: Preheat oven to 150°F.
  • Line baking sheet with wax paper.
  • Beat whites, and pinch of salt 1 minute to blend.
  • Combine 2 tablespoons sugar and 2 tablespoons powdered sugar.
  • Add to whites in 3 additions, beating for 20 seconds after each.
  • Continue beating until meringue is stiff and glossy.
  • Transfer mixture to pastry bag fitted with 1/2 inch plain tip.
  • Pipe about fifteen 1/2 to 1 inch domed rounds on prepared sheet for mushroom caps.
  • Smooth top of each with damp finger.
  • Pipe about fifteen 1/2 to 1 inch high peaked mounds on prepared sheets for stems.
  • Bake until meringues are dry and beginning to color, about 1 3/4 hours.
  • Let cool completely.
  • Using small knife, cut small hole in bottom of each mushroom cap.
  • Dip peaked end of stem in sugar paste and push into hole in mushroom cap.
  • Repeat with remaining caps.
  • Dust mushrooms with cocoa powder before serving.
