1/2 cup firmly packed light brown sugar
dash of salt
2 cups light corn syrup
1/2 cup buitter
1 2/3 cup evaporated milk
1 teaspoon vanilla
1 cup finely chopped nuts

Steps:

  • 1. In a 3 quart saucepan combine sugar, brown sugar and syrup. Cook rapidly over medium high heat until candy thermometer reaches 242 degrees or firm ball stage

Tips:

  • Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid scrambling.
  • Use a heavy-bottomed saucepan: This will help to distribute heat evenly and prevent the caramel from burning.
  • Stir constantly: Stir the caramel mixture constantly to prevent it from scorching.
  • Use a candy thermometer: This will help you to ensure that the caramel reaches the correct temperature.
  • Be careful when adding the nuts: The caramel will be very hot, so be careful not to burn yourself when you add the nuts.
  • Let the candy cool completely: Once the candy has been poured into the mold, let it cool completely before cutting it into pieces.
