2 cups sugar
2 large eggs, room temperature
1 cup cold mashed potatoes (without added milk and butter)
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1 cup whole milk
1 cup chopped walnuts or pecans
CARAMEL ICING:
1/2 cup butter, cubed
1 cup packed brown sugar
1/4 cup evaporated milk
2 cups confectioners' sugar
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Add potatoes and vanilla. Combine the flour, cocoa and baking soda; gradually add to creamed mixture alternately with milk, beating well after each addition. 3 cups Gold Medal™ all-purpose flour
1 cup whipping cream
1 1/2 cups sugar
1/2 cup butter (do not use margarine)
1/2 cup milk

Steps:

  • Heat oven to 325°F. Grease 10-inch angel food (tube) cake pan with shortening; lightly flour.
  • In large bowl, beat 3 cups sugar and 1 cup butter with electric mixer on medium speed 5 minutes or until light and fluffy. Add eggs, one at a time, beating well after each addition. 1 cup mashed potatoes
4 egg yolks, slightly beaten
4 egg whites
1 cup coarsely chopped pecans
1 cup raisins
3/4 cup maraschino cherry, drained and coarsely chopped
3/4 cup butter
1 1/2 cups brown sugar, packed
1/4 cup milk
1 1/2 cups confectioners' sugar
1 teaspoon vanilla extract
8 pecan halves

Steps:

  • Preheat oven to 350°F.
  • Grease and flour two 9-inch layer pans.

1 1/2 cups mashed cooked sweet potatoes
1 cup sour cream
1 tablespoon baking powder
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 cup chopped pecans
3 cups all-purpose flour
Coconut Filling, recipe follows
Caramel Frosting, recipe follows
1/4 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
1 cup milk
1 large egg, lightly beaten
1/2 cup frozen grated coconut, thawed
1 teaspoon vanilla extract
2 (3-ounce) packages cream cheese, cut into cubes and softened
3/4 cup whipping cream
2 1/4 cups sugar
2/3 cup water
9 tablespoons butter, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat 3 (9-inch) cake pans with cooking spray; dust lightly with flour. Set aside.

Cook, without stirring, 10 minutes or just until syrup turns a deep amber color.
