It starts with a basic dumpling batter. Just stir together the ingredients, then cook them in liquid on the stovetop until they become fluffy all the way through. Poaching the dumplings in a combination of apple cider, brown sugar and cinnamon means they take on a jammy exterior and absorb some of sweetness in the process. As the dumplings cook, they release some starch into the liquid, which thickens the poaching liquid into a sauce. - Make the apple cider-caramel sauce: In a medium pot, heat the cream and butter over medium until the butter is melted. Add the brown sugar and bring to a simmer over medium-low. Once simmering, cook, stirring constantly for 2 minutes. Add the apple cider and stir well to combine. (The sugar will seize, but just keep stirring and it will dissolve back into the liquid.) Add the cinnamon sticks and salt, and bring to a simmer over medium-low heat.
- While the mixture comes to a simmer, make the dumplings: In a medium bowl, whisk together the flour, brown sugar, baking powder, salt and nutmeg. Make a well in the center and add the milk, melted butter, egg and vanilla. Whisk to combine, then switch to a spatula or wooden spoon as the mixture comes together.
- Reduce the heat to a low simmer. Add a single layer of tablespoon-size scoops of batter to the pot (about 5 to 6 dumplings), cover the pot and set a timer for 8 minutes. (If desired, you can test one dumpling by cutting it in half to make sure it's cooked through.)
- After each batch, use a slotted spoon to drain and transfer to a medium bowl. Cover the bowl with plastic wrap or foil to help keep the dumplings warm. - Preheat oven to 400°F.
- Thaw and unfold puff pastry.
- On lightly floured surface, roll the pastry into a 16" sqaure.
- Cut with a knife into 4 equal pieces.
- Peel and core cpples.

- Place 1 apple in the center of each square.
- Use 1/4 teaspoon of lemon juice if apples start to trun brown.

- In a medium bowl, stir together the flour and confectioners' sugar. Make a well in the center. Combine the melted butter, egg and milk; pour into the well. Use a knife to stir until just combined. Set the dumpling mixture aside.
- In a large saucepan, over medium-high heat, mix together the water, golden syrup, brown sugar and lemon juice until well blended. CARAMEL DUMPLINGS
This is my favourite dessert to make! I think it's from a Women's Weekly cookbook of the early 80s. I don't use the salt, but leaving it there as it's part of the original recipe. Perfect in the cold weather but I love them any time but in the worst heat of summer. They're fantastic on their own but can be served with ice cream. If I'm having a craving and have no brown sugar I'll use white sugar - not quite the same but when you have a craving it's almost perfect.

- 1. Pre-heat oven to 500 degrees F. To make the sauce, combine "sauce" ingredients in a small saucepan over medium heat; bring to boil, reduce to low simmer 5 minutes, cook and stir until sugar dissolves. Remove from heat.
- 2. To make the dough, combine ingredients except the water and use a pastry blender to cut in shortening. Add 2 tablespoons of water and stir to combine. Add more water, 1 teaspoon at a time, until dough is sticking together but not sticky. Dump on a floured surface and knead, work into a ball. Divide and form into 6 balls. Wrap tightly in plastic wrap and refrigerate until ready to roll out. Roll each dough ball into a large square - large enough to wrap around the apple.
- 3. Set an apple in the center of each square. Mix together sugar and cinnamon; sprinkle over apples. Bring sides of dough together to cover apples; press to seal. Place seam-side down in a greased 13"x9" baking pan. Pour caramel sauce over dumplings.
- 4. Bake at 500 degrees for 5 to 7 minutes. Reduce heat to 350 degrees; bake for an additional 35 to 40 minutes, until golden and apples are tender. Serve with a scoop of ice cream and drizzled with sauce.
PECAN DUMPLINGS WITH CARAMEL RAISIN SAUCE 1968 (ONTARIO CDA)
This is an oldie but always great for family and friends. The dumpling part can be doubled also to make 16 dumplings, just use a skillet with lid so they all fit over the sauce ingredients.

- Place all sauce ingredients into a pot and bring to a boil. Reduce to a nice even simmer.
- I get the sauce going so it can start to thicken while you are preparing the dumplings.
- In a bowl add dry ingredients and combine well.
- In a cup measure the milk and butter and simmer in microwave until the butter has melted.
- Pour warm milk onto the dry ingredients and combine with the nuts, mix well, and knead three times.
- Roll into balls, if too sticky just drop 8 portions onto the simmering sauce.
- Cover with lid and cook at an even simmer 10 to 12 minutes until done.
- Uncover slightly and let sit four minutes on low, just to continue thickening the sauce underneath.
- Remove to bowls and serve with some sauce and raisins and a small portion of pouring cream on top.

- Part One:
- In a heavy skillet - Melt 3/4 Cup sugar until amber just put sugar in the pan and turn on heat to medium, sugar will melt and turn amber - it burns quickly so stir constantly). As soon as the sugar is melted, turn off the heat and add hot water. Turn the heat back up and boil slowly until the sugar agin disolves. Add 3/4 Cup sugar, Margarine and salt. Stir until disolved. Remove from heat and add vanilla.
- Part Two:.
- Work Margarine into the flour. Add salt sugar and backing powder. Mix until it becomes a crumbly mixture. Add milk until moistened. Add optional nuts if desired. Dumplings shouldn't be too sticky or too dry. Roll dumplings into balls just smaller than a golf ball.
- Reheat the syrup to a slow boil. Add the dumplings one at a time using a spoon. Turn down heat, cover and cook for 10 minutes. Once cooked remove from heat, remove cover and let stand for 5 minutes.
