Time 1h10m

Number Of Ingredients 13

2 c brown sugar, packed
1/2 c butter, cubed
1/4 c corn syrup, light
3 large apples, peeled and chopped
2 Tbsp lemon juice
1 Tbsp sugar
1 tsp apple pie spice
1 lb (1 loaf) day-old cinnamon bread
1/2 c chopped pecans
10 eggs
1 c 2% milk
1 tsp salt
1 tsp vanilla extract

Steps:

  • 1. In a small saucepan, combine the brown sugar, butter and corn syrup. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes, until thickened.
  • 2. In a small bowl, combine the apples, lemon juice, sugar, and pie spice. Arrange half the bread in a greased 9x13" baking dish. Spoon apples over bread; drizzle with half the sauce. Sprinkle with pecans; top with remaining bread.
  • 3. In a large bowl, combine the eggs, milk, salt and vanilla. Pour over top. Cover and refrigerate overnight. Cover and refrigerate remaining caramel sauce.
  • 4. Take strata from refrigerator 30 minutes before baking. Bake, uncovered, in a preheated 350º oven for 50-55 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
  • 5. Microwave the reserved caramel sauce, uncovered, for 1-2 minutes and drizzle over strata.

Tips:

  • Choose the right apples: Firm, tart apples hold their shape well when baked and provide a nice contrast to the sweet caramel sauce. Granny Smith, Honeycrisp, and Braeburn are all good choices.
  • Make sure the caramel sauce is thick enough: The sauce should be thick enough to coat the back of a spoon. If the sauce is too thin, it will not set properly.
  • Don't overmix the batter: Overmixing the batter will make the strata tough. Mix just until the ingredients are combined.
  • Bake the strata until it is set: The strata is done baking when a toothpick inserted into the center comes out clean.
  • Serve the strata warm: The strata is best served warm, with a scoop of vanilla ice cream or whipped cream.

Conclusion:

Caramel Apple Strata is a delicious and easy-to-make breakfast or brunch dish. It is perfect for a special occasion or a weekend morning. With its layers of apples, caramel sauce, and bread, this strata is sure to be a hit with everyone at your table.
