3/4 cup packed brown sugar
1/4 cup sugar
1 package (3.4 ounces) instant caramel pudding mix
2 large eggs, room temperature
1/2 cup unsweetened applesauce
1-1/4 cups all-purpose flour
1 teaspoon baking soda
3-1/2 cups old-fashioned oats
1 medium apple, peeled and chopped

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and pudding mix until light and fluffy, 5-7 minutes. Add eggs; mix well. Beat in applesauce. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Stir in oats and apple., Drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Bake until golden brown, 15-18 minutes. Cool on pans 3 minutes. Serve warm or remove to wire racks to cool completely. Store in an airtight container. Freeze option: Freeze cookies in freezer containers, separating layers with waxed paper. To use, thaw before serving.

2 cups all-purpose flour, plus more for pan
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup packed dark-brown sugar
2 large eggs
1/2 to 3/4 cup fresh cider
1/4 cup apple brandy, preferably Calvados (optional)
1/2 teaspoon pure vanilla extract
2 small apples, preferably McIntosh, peeled, cored, and cut into 1/2-inch cubes (2 cups)

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 5-by-9-inch loaf pan. Whisk together flour, baking powder, cinnamon, and salt. Mix together oil and sugar with a mixer on medium speed until combined. With machine running, add eggs, 1 at a time. Reduce speed to low, and beat in flour mixture in 3 additions, alternating with 1/2 cup cider and the brandy (if not using brandy, use an additional 1/4 cup cider), beginning and ending with flour. Add vanilla, and fold in apples. Pour mixture into pan, and top with oatmeal-walnut crumble.
  • Place pan on a rimmed baking sheet, and bake until a tester inserted into center comes out clean, 45 to 55 minutes. Transfer pan to a wire rack, and let cool for 15 minutes. Invert pan to remove bread. Let cool completely on a wire rack, crumble side up. Drizzle with caramel sauce just before serving.

1/2 cup oatmeal (regular or steel-cut, not quick cooking)
1/4 cup pearl barley
1 1/2 cups apple cider
6 Kraft caramels, unwrapped (1/8 of 14-oz. bag KRAFT Caramels found in the candy, seasonal or produce section by the apples)
6 ounces yogurt (vanilla is good, Target's Archer Farms brand has a Caramel Apple flavored yogurt that's divine in th)
caramel syrup (Smucker's Sundae Syrup in the squeeze bottle is perfect)

Steps:

  • Spray your crockpot with cooking spray. This is an important step as I find that all overnight oatmeal recipes stick to the sides of the pot. If you have an older model without an insert that removes for cleaning, you may want to skip this and other oatmeal recipes, or slow cook during the day so you're available for intermittent stirring.
  • Dump the apples, barley, oatmeal and cider in the crockpot, and stir well. Place the caramels on top. This can be done earlier in the evening, but wait until you go to bed to turn the crockpot on LOW.
  • When you wake up, empty the yogurt into the slow cooker and stir. Let it warm through, stir again, and then spoon into serving bowls. Turn off the crockpot.
  • Spoon the creamy apple goodness into serving bowls, discarding any parts that stuck to the sides of the pot. Drizzle with caramel syrup and ENJOY!

1/8 teaspoon nutmeg
1/2 cup oats (uncooked)
1/4 cup raisins

1/2 cup sugar-free caramel topping (Smucker's Sugar Free Caramel Spoonable Topping )
nonstick cooking spray

Steps:

  • Heat oven to 400 degrees.
  • Spray an 8x8 inch baking pan with no-stick spray.
  • Core apples and cut a thin slice off bottom to stabilize in prepared pan, if needed.
