2 tablespoons sugar
1/4 teaspoon ground cinnamon
3 tablespoons butter, melted
CHEESECAKE:
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla extract
2 large eggs, room temperature, lightly beaten
TOPPING:
1 large apple, peeled and finely chopped
1 tablespoon butter
1 tablespoon sugar
1/4 teaspoon ground cinnamon
Dash ground cloves
1/2 cup butterscotch-caramel ice cream topping

Steps:

  • Preheat oven to 350°. Line 12 muffin cups with paper liners., In a small bowl, mix cracker crumbs, sugar and cinnamon; stir in melted butter. 1/2 cup flour
1/4 cup quick cooking oats
1/4 cup + 2 Tbsp light-brown sugar
1/4 tsp ground cinnamon
1/8 tsp salt
1/4 cup butter, partially melted in microwave
Cheesecake Filling
16 ounces cream cheese, softened
2/3 cup sugar
2 eggs
1/4 cup sour cream
1 tsp vanilla extract
1 lb apples, peeled, cored and finely chopped* (I used Gingergold)
Topping
Salted caramel sauce, homemade or jarred
