Use frozen or fresh spinach for this easy creamed spinach recipe that's the ultimate cozy side dish! It comes together in just 25 minutes and has that restaurant-quality taste you crave.

Time 25m

Number Of Ingredients 9

1 pound frozen chopped spinach or 2 pounds fresh (see notes)
2 tablespoons butter
1/2 medium onion (chopped)
2 cloves garlic (minced)
3/4 cup heavy/whipping cream
4 ounces cream cheese (1/2 block Philly) (softened)
1 cup freshly grated parmesan cheese
Pinch nutmeg
Salt & pepper (to taste)

Steps:

  • Frozen spinach: Thaw the spinach under running water (or try microwaving it for a few minutes to speed up the process), then squeeze out as much of the excess water as you can. Fresh spinach: Boil a pot of water. Add the spinach and cook for about 1 minute. Drain it and rinse it under cool water. Squeeze out excess water. Chop if desired.
  • In a pot, sauté the butter and onion over medium heat until it's lightly browned (about 5-7 minutes).
  • Reduce heat (I keep it on medium-low for this step, but you can increase heat as needed). Stir in the garlic, followed by the heavy cream, cream cheese, parmesan, and nutmeg. It will take a few minutes for the cream cheese to melt in, especially if the cream cheese is cold. I break it up with my spoon/stir it continuously. The sauce should thicken up as it cooks.
  • Stir in the spinach and let it heat through. If you want more liquid, add in a splash more cream. If there's too much liquid, you may need to cook the spinach for a few more minutes to reduce the sauce to your liking.
  • Season with salt & pepper as needed (I am pretty generous with both).

Kosher salt and freshly ground black pepper
2 cloves garlic, minced
2 teaspoons red chili flakes
1 3/4 cups heavy cream

Time 35m

Yield 4 servings

Number Of Ingredients 10

Extra-virgin olive oil
2 1/2 pounds washed baby spinach
1/2 small onion, finely diced
Kosher salt
2 cloves garlic, smashed
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
Pinch cayenne pepper
1/4 cup grated Parmigiano

Steps:

  • Coat a large, straight-sided saute pan with olive oil and heat over medium heat. Add the spinach, cover and saute until gently wilted. Remove the spinach from the pan to a colander set inside a bowl to let the spinach drain and cool.
  • Remove any liquid from the bottom of the saute pan and coat lightly with olive oil. Heat the oil over medium heat, add the onions, and season with salt, to taste. Saute the onions until they are translucent and very aromatic, about 5 to 7 minutes. Add the garlic and saute for 2 to 3 more minutes. Add the butter, and when melted stir in the flour. Cook until it is the texture of wet sand, about 5 to 6 minutes. Whisk in the milk, cayenne pepper and Parmigiano. Taste for seasoning and season with salt, if needed, (it will). Bring the milk to a boil, then reduce the heat and simmer for 5 to 6 minutes, stirring occasionally, so the milk doesn t scorch on the bottom.
  • Add in the reserved spinach and stir to combine. Taste and adjust the seasoning, if needed. Transfer to a serving bowl and serve.

Tips:

  • For the creamed spinach, use fresh, tender spinach leaves. Avoid using wilted or frozen spinach, as it will not have the same flavor or texture.
  • Make sure to wash the spinach thoroughly before cooking it. This will remove any dirt or grit.
  • When cooking the spinach, do not overcook it. Otherwise, it will lose its vibrant green color and become mushy.
  • Use a heavy-bottomed pot or skillet to cook the spinach. This will help to distribute the heat evenly and prevent the spinach from burning.
  • Season the creamed spinach to taste with salt, pepper, and grated Parmesan cheese.
  • Garnish the creamed spinach with a sprinkle of freshly chopped chives or parsley before serving.

Creamed spinach is a delicious and versatile side dish that can be served with a variety of main courses. It is a great way to add a pop of color and flavor to your plate.
