KATHYS FRIED HALLOUMI CHEESE WITH LIME AND CAPER VINAIGRETTE
A starter for 6 or light meal for 4 with French/pitta bread We had this as a delicious starter at a friends house, and I begged her for the recipe, I cant wait to try it!! I'm guessing at the amount of halloumi, but basically you want to have about four 'fingers' per person, as a starter. The dressing was marvellous! I love halloumi but have never tried making it, well, thats now going to change :D

Tips:
- Use fresh limes. Fresh limes have a brighter, more flavorful juice than bottled lime juice.
- Zest the limes before juicing them. The zest adds a bright citrus flavor to the vinaigrette.
- Use good quality capers. Capers come in a variety of sizes and qualities. Look for small, firm capers that are packed in salt or brine.
- Rinse the capers before using them. This will remove the excess salt or brine.
- Whisk the vinaigrette vigorously. This will help to emulsify the oil and vinegar and create a smooth, creamy dressing.
- Taste the vinaigrette before serving. Adjust the seasonings to taste.
- Use the vinaigrette immediately or store it in the refrigerator for later use. The vinaigrette will keep for up to 2 weeks in the refrigerator.
Conclusion:
Caper and Lime Vinaigrette is a versatile dressing that can be used on a variety of salads, vegetables, and meats. It is also a great marinade for chicken, fish, and seafood. The combination of citrusy lime, salty capers, and tangy vinegar makes this vinaigrette a delicious and refreshing addition to any meal.
