8 ounces thick-cut bacon, such as Niman Ranch
8 ounces baby arugula
1 large Granny Smith apple, peeled and diced
1/2 cup toasted walnut halves, coarsely chopped (see note)
1/2 cup dried cranberries
6 ounces blue cheese, such as Roquefort, crumbled
3 tablespoons good apple cider vinegar
1 teaspoon grated orange zest
2 tablespoons freshly squeezed orange juice
2 1/2 teaspoons Dijon mustard
2 tablespoons pure maple syrup
Kosher salt
1/2 teaspoon freshly ground black pepper
2/3 cup good olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Place a baking rack on a sheet pan and lay the bacon slices on the rack. Roast the bacon for about 20 minutes, until nicely browned. Allow to cool.
  • In a large bowl, toss together the arugula, apple, walnuts, cranberries, and blue cheese.
  • For the dressing, whisk together the vinegar, orange zest, orange juice, mustard, maple syrup, 1 1/2 teaspoons salt, and the pepper in a bowl. Slowly whisk in the olive oil.
  • Chop the bacon in large pieces and add it to the salad. Toss the salad with just enough dressing to moisten. Sprinkle with 1/2 teaspoon salt and toss well. Serve immediately.

When we lived in Massachusetts my mom would make these pies and we would take them to the beach as picnic food. I don't have the access to fresh little neck clams any longer, but I still make clam pie only now I use canned clams.

2 unbaked pie shells, your own or store bought
2 c shucked clams, drained and chopped (about 35 littlenecks) or 3cans chopped clams, drained
1 medium onion, chopped
1 1/2 c potato, cooked, peeled and sliced
6 slice bacon, cooked, drained and crumbled
3 large eggs
1 c heavy cream
3/4 tsp bell's poultry seasoning

Steps:

  • 1. Preheat oven to 375-degrees.
  • 2. Sprinkle the clams, onion, potato and bacon over the bottom of the pie shells. In a bowl, beat together the eggs, cream and poultry seasoning. Pour this mixture over the clams.
  • 3. Top with second crust. Make slits for steam to escape.
  • 4. Bake 45-55 minutes, until set and lightly browned. Serve hot or cold.

1 roll of ritz crackers, crushed
a little garlic powder
sprinkle of lemon juice
sprigs of parsley
1/4 c melted butter

Steps:

  • 1. Place scallops, crackers, parsley and garlic powder in bag and shake. Place in glass baking dish. Sprinkle with lemon juice and pour melted butter on or just dabs of butter on top. Bake for 30 minutes in a 350 degree oven. Don't over-bake so check for doneness at about 20 minutes.

2 lb finnan haddie (smoked haddock)
2 c milk or half and half
1 1/2 c bec'hamel sauce (recipe follows)
4-5 potatoes, parboiled and quartered
BECHAMEL SAUCE:
2 Tbsp butter
3 Tbsp all purpose flour
1 c chicken broth (can use some of the stock from the soaked fish)
1/4 c lemon juice
salt to taste,sliced thin lemons and parsley for garnish
MELT BUTTER AND ADD FLOUR, BLEND WELL, REMOVE FROM HEAT AND ADD BROTH. HEAT STIRRING CONSTANTLY TIL THICKENED. WHISK IN LEMON JUICE, POUR OVER FISH AND GARNISH W/LEMON SLICES

Steps:

  • 1. Soak finnan haddie which has had skin and bones (if any) removed in lukewarm milk or half and half or water for 30-40 minutes. Drain well. Put fish in 9" X 13" baking dish. Surround the fish with the quartered potatoes. Cover with Bechamel sauce. Bake in a 350 degree oven until potatoes are done =45 to 60 minutes. Serves 4-6 (picture from Ifood)

I incorporated some of the fresh herbs from my friend's garden and came up with this recipe as a way to use up leftover turkey. Serve the salad on croissants, crusty rolls, or a bed of lettuce. A lighter version can be made using reduced fat mayonnaise and sour cream.

1 cup diced celery
½ cup dried cranberries
½ cup coarsely chopped walnuts
1 cup mayonnaise
½ cup sour cream

⅛ teaspoon black pepper

Steps:

  • Mix the turkey, celery, cranberries, and walnuts together in a bowl.

1 cup dried red kidney beans (soaked overnight in cold water) or 1 cup use 2 cans cannellini beans
5 (13 1/2 ounce) cans beef broth
2 cups water
1 lb kale (broken up into small pieces or shredded)
1 large onion, diced coarsely
1/2 lb chorizo sausage, skinned and broken up
1 lb linguica sausage, sliced into chunks
1 tablespoon red wine vinegar or 1 tablespoon balsamic vinegar
1 teaspoon pepper
1/2 teaspoon salt, broth is very salty, as is sausage (optional)
1 -2 cup water (as needed while cooking)
2 cups cubed potatoes
1 -2 cup water

Steps:

  • Soak beans overnight in cold water. In morning, drain beans.
  • ("OR" used canned beans and cut down cooking time.).
  • In large pot, add beans, onions, sausage, kale, salt/pepper, vinegar, beef broth and 2 cups of the water.
  • Bring to boil. Reduce heat, cook gently for 3 hours.
  • Add potatoes and 1 or 2 cups more water.
  • Continue cooking until potatoes are tender.

1 red apple, quartered, cored, and cut crosswise into 1/4-inch slices
3 tablespoons lime juice
1/4 cup cranberry chutney or 1/4 cup apricot preserves
2 teaspoons Dijon mustard
1/4 cup extra virgin olive oil
salt, to taste
pepper, to taste
2 heads romaine lettuce
1 bunch watercress
1/2 lb unsliced deli maple-glazed turkey breast, diced
1/2 cup diced sharp cheddar cheese
1/4 cup chopped walnuts, toasted
1/4 cup dried cranberries

Steps:

  • Toss apples with 1 tbsp lime juice in small bowl. Whisk remaining 2 tbsp lime juice, chutney (or preserves), and mustard together in a large bowl. Gradually whisk in the oil until incorporated. Season with salt and pepper to taste, and reserve 1/4 cup dressing in measuring cup.
  • Toss lettuce and watercress with remaining dressing in a large bowl and arrange on a large platter. Arrange apples, turkey, cheddar, walnuts, and cranberries on top of the lettuce. Drizzle salad with remaining dressing.

I had this while on holiday on the island of Sal, of the Cape Verde islands in October 2007. As an ex-Portuguese colony the Portuguese influences are strong. We found this recipe so delicious I had it several times while I was in Cape verde and enjoyed several attempts at making it at home as soon as we got back. This tastes pretty close to the original. If you can possibly use dried salt cod, then please do, the flavour is definitely superior to average ordinary white fish. As usual with salt cod, no additional salt is needed in the recipe, it will be salty enough. For instructions on how to deal with your dried salt cod, I recommend this recipe by Julesong: Recipe #242753. My recipe time assumes that you have soaked and cooked your salt cod already and that you've taken out the bones, so it's flaked and ready to go. I usually hard boil the eggs in the same water with the potatoes and remove them with a slotted spoon once I figure that they have had enough time to have hard boiled. Saves using an extra pot! This can be made a day in advance but more time than stated would be needed in the oven to heat it though.

2 lbs salt cod fish (1kg, soaked, cooked, de-boned, flaked)
4 tablespoons olive oil
2 large onions (diced)
4 garlic cloves (minced)
1 teaspoon nutmeg
white pepper (to taste)
6 large potatoes
6 hard-boiled eggs
parsley

Steps:

  • Preheat your oven at 400°F (200°C).
  • Hard boil your eggs in the potato water.
  • Cover the peeled potatoes in water and boil until they are just cooked though, then drain the water and cut them into thin slices and then cut them further into approximately 1 inch x 1 inch ( 2.5 cm x 2.5 cm) bits. It doesn't have to be really precise, just so that the potato slices are in small bits roughly all the same size.
  • Put the olive oil into a fry pan and gently saute the onion and garlic until golden but not browned.
  • Peel the hard boiled eggs and roughly chop 5 of them, but carefully slice the last egg into rounds for decoration.
  • Mix, but don't mash! the flaked, cooked, salt cod with the potato, onion and garlic mixture, then add the nutmeg and pepper and parsley. If the mixture is too dry, a very small amount of water can be added to make it only just stick together.
  • Spoon the mix into a baking dish and lay out the decorative egg rounds on the top. Cover with foil and bake for 20 minutes until it is completely warmed though.

2 (8 ounce) bottles clam juice
1 baking potato, peeled and diced

  • Melt butter in a saucepan over medium-low heat. Cook onions in melted butter until clear, 3 to 4 minutes.
  • Pour clam juice into the saucepan. Add the potato; bring the mixture to a boil. Cook at a boil until potatoes are tender, about 10 minutes.

3 tablespoons all-purpose flour
1/4 teaspoon salt
1 cup water, divided
3/4 cup sugar
6 cups fresh blueberries, divided
1/2 teaspoon white vinegar
Sweetened whipped cream or vanilla ice cream

Steps:

  • On a lightly floured surface, roll crust to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Oh I love simple recipes and scallops ~ so when I found this recipe oh yea had to make it pronto! This recipe came from a treasured cookbook I have ~ Savoring Cape Cod.

1 pt bay scallops
1/2 c butter or margarine, melted
1 c crackers crumbs (coarsely crushed ritz or similar)
1/2 c fresh bread crumbs
2/3 c half and half

Steps:

  • 1. Preheat oven to 400 degrees Butter a baking dish just large enough to contain the scallops in a single layer.
  • 2. Stir cracker crumbs and bread crumbs into melted margarine or butter. Spread a thin layer in bottom of dish, add scallops, cover with remaining crumbs. Pour half and half around the edge.
  • 3. Bake until crumbs are brown and scallops are just cooked. Bay scallops will cook in 10-12 minutes. They should be opaque white throughout but do not overcook. Serves 4

1 box salt cod fish
1/4 lb salt pork
8 medium potatoes, boiled and peeled
1 c medium cream sauce
1 hard boiled egg

Steps:

  • 1. Cover the cod with cold water, bring to boil, drain. Repeat 2 or 3 times.
  • 2. Meanwhile boil the potatoes, cube and fry out the salt pork, and prepare the cream sauce and the hardboiled egg.
  • 3. When serving pour the cream sauce over the potatoes and fish, add the the sliced egg and sprinkle with the pork scraps.
  • 4. White Sauce: 2 tablespoons butter 2 tablespoons all-purpose flour 1/8 teaspoon salt Dash white pepper 1 cup 2% milk *see note* Directions In a small saucepan, melt butter over medium heat. Whisk in the flour, salt and pepper until smooth. Gradually whisk in the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Use immediately or refrigerate. Yield: 1 cup. * Could use half & half or cream instead of milk ~

1/2 large onion, chopped

1/2 c clam broth
18 clam shells
1 lemon
paprika

Steps:

  • 1. Saute' onions and pepper in butter or margarine until soft. Mix all ingredients together. Stuff into clam shells. Put pat of butter on each clam and sprinkle with paprika. Squeeze a few drops of juice over each clam. Bake in pre-heated oven for 15 minutes at 350 degrees.

2 tablespoons freshly squeezed orange juice
2 1/2 teaspoons Dijon mustard
2 tablespoons pure maple syrup

2/3 cup good olive oil

Steps:

  • 1. Preheat the oven to 400 degrees. 2. Place a baking rack on a sheet pan and lay the bacon slices on the rack. Roast the bacon for about 20 minutes, until nicely browned. Allow to cool. 3. In a large bowl, toss together the arugula, apple, walnuts, cranberries, and blue cheese. For the dressing, whisk together the vinegar, orange zest, orange juice, mustard, maple syrup, 1 1/2 teaspoons salt, and the pepper in a bowl. Slowly whisk in the olive oil. 4. Chop the bacon into large pieces and add it to the salad. Toss the salad with just enough dressing to moisten. Sprinkle with 1/2 teaspoon salt and toss well. Serve immediately.

Cape Cod Bay Brown Bread image

This reminds me of the brown bread my grandmother made whenever we went out east to visit. The aroma evokes fond memories of her New England home during the peak of fall. I use blackstrap molasses and agave nectar to make mine a little different without sacrificing any of the flavor. Number Of Ingredients 11

2 packages (1/4 ounce each ) active dry yeast
3 tablespoons molasses
2 teaspoons agave nectar or honey
2-2/3 cups warm water (110° to 115°)
1/2 cup dried cranberries
2 tablespoons wheat bran
1 teaspoon salt
6 to 7 cups whole wheat flour
TOPPING:
1 tablespoon 2% milk
1 tablespoon old-fashioned oats

Steps:

  • In a small bowl, dissolve yeast, molasses and agave nectar in 2/3 cup warm water. In a large bowl, combine cranberries, wheat bran, salt, yeast mixture, 4 cups flour and remaining water; beat on medium speed 3 minutes until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 8x4-in. loaf pans. Cover; let rise in a warm place until almost doubled, about 1 hour. Preheat oven to 400°., Brush tops with milk. Sprinkle with oats. Bake until golden brown, 30-40 minutes. Remove from pans to wire racks; cool completely.
