CAP CAI

Cap Cai image

This is a yummy Chinese-Indonesian vegetable dish that you'll find in restaurants all over Jakarta. It's a great pescetarian dish, too. We usually serve it with brown rice and a fried tofu. You can leave out the prawns and the taste is still great, or even substitute for chicken.

SIMPLE BARBECUE SAUCE

Simple Barbecue Sauce image

Smoked paprika is the secret weapon in this simple barbecue sauce, which goes beautifully with pork and chicken. If you're painting the sauce onto cooking meat, thin it out with water to about a one-to-one ratio, which will keep the sugars from burning too quickly over the fire. Serve the full-strength stuff alongside the finished meat.

Tips:

  • Choose the Right Ingredients: Use fresh, high-quality ingredients for the best flavor. Look for ripe tomatoes, sweet onions, and aromatic spices.
  • Brown the Meat: Browning the meat adds depth of flavor to the sauce. Use a heavy-bottomed pot or Dutch oven over medium-high heat to brown the meat in batches, if necessary.
  • Sauté the Vegetables: Sautéing the vegetables helps to caramelize them and bring out their natural sweetness. Use a large saucepan or skillet over medium heat to sauté the vegetables until they are softened.
  • Simmer the Sauce: Simmering the sauce allows the flavors to meld and develop. Bring the sauce to a boil, then reduce the heat to low and simmer for at least 30 minutes, or up to 2 hours.
  • Season to Taste: Taste the sauce and adjust the seasonings as needed. Add more salt, pepper, or spices to taste.
  • Chill the Sauce: Chilling the sauce allows the flavors to further develop. Transfer the sauce to an airtight container and refrigerate for at least 4 hours, or overnight.
  • Reheat and Serve: Reheat the sauce over low heat until warmed through. Serve the sauce with grilled or roasted meats, chicken, or fish.
