5 CAN CASSEROLE

5 Can Casserole image

I adopted this recipe from the Recipezaar account in February 2005. The next time I try it, I am going to try a smaller can of milk and try adding a 10 ounce package of frozen mixed vegetable. If I like it that way, they will become an optional ingredient. I have added can sizes, since the original recipe did not specify sizes. The casserole was soupy, which was not bad, but I want to see how it is with the smaller amount of milk.

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 7

1 (3 ounce) can chow mein noodles
1 (9 3/4 ounce) can chicken breasts
1 (12 ounce) can evaporated milk
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can chicken and rice soup
1/4 cup onion, finely chopped (optional)
2 tablespoons lemon juice (optional)

Steps:

  • Drain canned chicken, then place in 1 1/2 quart casserole dish and break apart with a fork.
  • Add the rest of the ingredients and mix together well.
  • Bake at 350 degrees Fahrenheit for 25 minutes or so until lightly browned

Tips:

  • Use high-quality canned chicken. Look for brands that use all-white meat chicken and pack it in water, not broth. This will give you a more consistent flavor and texture in your casserole.
  • Don't be afraid to experiment with different vegetables. The recipe calls for celery, carrots, and onion, but you could also use broccoli, cauliflower, or peas. Whatever vegetables you choose, make sure they are cut into small pieces so they cook evenly.
  • Add some herbs and spices to taste. The recipe calls for salt and pepper, but you could also add garlic powder, onion powder, or paprika. You could even stir in a spoonful of Dijon mustard or Worcestershire sauce for a little extra flavor.
  • Don't overcook the casserole. The chicken and vegetables should be cooked through, but you don't want them to be mushy. Keep an eye on the casserole as it cooks and remove it from the oven when it is bubbly and hot.
  • Serve the casserole hot. This casserole is best enjoyed fresh out of the oven. Serve it with a side of mashed potatoes, rice, or noodles.

Conclusion:

This canned chicken casserole is a quick and easy weeknight meal that is sure to please the whole family. It is made with simple ingredients that you probably already have on hand, and it can be on the table in under an hour. So next time you are looking for a quick and easy meal, give this canned chicken casserole a try.
