- Place champagne in a small saucepan over medium low heat. Slowly sprinkle in the gelatin, stirring as you add it in to avoid clumping. Stir in the flavored Jell-O until fully combined.
- Stir continuously as the mixture heats and cook until gelatin and jell-o powder has dissolved into the champagne and the mixture is evenly heated, about 3-5 minutes. Remove the mixture from the stove and pour into a measuring cup.
- Stir the mixture to help settle the bubbles and skim if necessary so that the liquid is clear. Pour the mixture into 2 11-well silicone gem molds.
- Place the mold directly into the freezer for approximately 30 minutes. Remove from freezer and remove gummy gems from the mold. Sprinkle over edible glitter, matching the glitter color to gem colors.

- In a very clean, nonstick pot, add 1/4 cup distilled water to every cup raw isomalt.
- Bring to a boil on medium-high heat. Do not stir.
- After the mixture is boiling, turn to medium heat and cover with a lid for 5 minutes and simmer. This step prevents crystals from forming around the edges. Do not stir.
- Take lid off and simmer uncovered until temp reaches 320º F (160º C). This can take up to an hour. Be patient. Do not stir.
- Once cooked you can pour into puddles on a silmat, let cool then break into chunks to use later.
- Isomalt can be reheated in the microwave by starting with 30 seconds and then moving to 15 second increments.

- Blend together mashed potatoes and sugar. Add coconut, vanilla, and salt.
- Drop from a teaspoon onto wax paper or greased cookie sheet. Shape into peaks. Let stand uncovered 30 minutes.
- Melt, in a saucepan over very low heat, chocolate chips and paraffin.
- Using a teaspoon, pour chocolate mixture over peaks of candy. Cool.
- Makes approximately 4 dozen.
- Note: I usually add about 2 cups of chopped pecans.
- Note: If you shape the mixture around an almond and dip the ball in the chocolate you have a mini faux Almond Joy!
