1/2 cup brown sugar
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons light cream or 3 tablespoons evaporated milk
1/2 teaspoon salt

  • Peel and cut length-wise into 1/2-inch slices.
  • In medium skillet or electric frying pan, combine sugar, butter, cream and salt; cook over medium heat, stirring constantly, until smooth and bubbly.

I created this recipe for my lovely husband (who I call Seets) after looking at several other recipes and not finding any that were close to what his Grandmother makes. He loves these, and hopefully you do too.

2 (15 ounce) cans yams or 2 (15 ounce) cans sweet potatoes
1 tablespoon margarine
5 1/4 ounces miniature marshmallows (more or less to taste)
1/4 cup orange juice
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat the oven to 350 degrees.
  • Drain the yams.
  • In a shallow baking dish mash one can of yams and leave the other can of yams in pieces (This is more of a personal preferance, you can leave both cans in pieces if you wish).
  • Pour orange juice over the yams.
  • Sprinkle on brown sugar and cinnamon.
  • Dot with butter or margarine.
  • Top the yams with marshmallows.
  • Bake 30 minutes or until marshmallows have melted.
  • Be sure to watch the yams the last 5 minutes because the marshmellows can burn.

6-8 medium sized sweet potatoes
1 cup firmly packed brown sugar
1 to 3 teaspoon ground cinnamon, or to taste
1 cup melted butter, plus 2 tablespoon melted butter
1-1/2 cups mini marshmallows
1/2 cup pecan chips

Steps:

  • Slice sweet potatoes into 1/4 inch round slices. Arrange potatoes in a lightly greased baking dish (approx. 13"x9"x2"). Mix brown sugar, cinnamon, and pecans in a bowl. Sprinkle each layer of potatoes with the mixture. Pour 3/4 cup melted butter over potatoes evenly. Cover and back at 375°F for 30 minutes. Remove, and baste with remaining 1/4 cup butter. Cover and continue baking for 30 minutes. (If transporting dish, stop here and continue last step at remote location - warm 5-10 minutes in oven before adding marshmallows). Remove, sprinkle marshmallows evenly on top and continue baking without cover for 5 minutes.
