5 MINUTE CANDIED WALNUTS

5 minute Candied Walnuts image

Toss these caramelized walnuts into your salad, over popcorn, or straight into your mouth. Crunch. Crunch. I love this easy method of making the candied nuts where everything goes into the pan at once. Other methods I've tried left me with globs of candy on the nuts rather than a more even coating. It also roasts the nuts at the same time so you don't have to pre-toast them, then add them back to the pan to be coated, blah, blah. Who needs extra steps? It seriously takes about 5 minutes on the stove and 5 minutes to cool. P.S. This recipe can easily be doubled.

Time 10m

Number Of Ingredients 3

1 cup walnut halves/pieces (you can also use this recipe for candied pecans)
1/4 cup white granulated sugar ((not coarse sugar))
1 Tbsp unsalted butter

Steps:

  • Heat a medium non-stick skillet over medium heat, add 1 cup walnuts, 1/4 cup granulated sugar and 1 Tbsp butter.
  • Heat over medium heat for 5 minutes, stirring frequently so your mixture doesn't burn (especially towards the end). When the sugar mixture starts melting, stir constantly until all sugar is melted and nuts are coated.
  • Transfer immediately onto a sheet of parchment paper and separate the nuts right away. Using two spatulas will make this task go faster. You don't want to give the nuts a chance to turn into a wad of inseparable delicious goodness unless you are the only person who will be enjoying the wad ;). Seriously, move quickly from the time the nuts are coated until they are separated out on the parchment paper.
  • Once the coating hardens (5-7 minutes), you can transfer them to a bowl and enjoy!

CANDIED WALNUT SALAD

Candied Walnut Salad image

Originally from one of the American Diabetes Association cookbooks, I made changes to make it tastier. Deliciously tangy with crunchy sweetness throughout! For a healthier version, use margerine instead of butter and only 1/4 cup walnuts. Also, split the salad into 4 servings.

BUTTER LETTUCE SALAD WITH CANDIED WALNUTS

Butter Lettuce Salad With Candied Walnuts image

This is a delicious salad that I adapted from one by Sandra Lee of Semi-Homemade Cooking on the Food Network. She recommends using an Asian-style salad dressing such as miso dressing or ginger dressing. We definitely prefer using a raspberry walnut vinaigrette. Also, the amount of cinnamon used in the candied walnuts may be decreased if desired -- I prefer just a little less, as well as the fact that the cinnamon seems to make it take longer for the walnuts to crystallize in the oven. I hope you enjoy this!

Time 22m

Yield 4 serving(s)

Number Of Ingredients 9

3 tablespoons sugar
1 1/2 tablespoons sugar
1 1/2 tablespoons orange juice or 1 1/2 tablespoons tangerine juice
1 cup walnut halves
1/4 teaspoon ground cinnamon
1 head butter lettuce, washed and dried
6 ounces canned mandarin orange segments
1/4 medium red onion, very thinly sliced
1/2 cup salad dressing (A Raspberry Walnut Vinaigrette or similar dressing is recommended)

Steps:

  • Preheat oven to 375°.
  • Line a sheet pan with Silpat (or with aluminum foil, sprayed with non-stick spray).
  • In a 10" skillet over medium heat, add 3 tablespoons of sugar and 1 1/2 tablespoons of orange juice (or tangerine juice-- or a combination).
  • Bring to a simmer, then add the walnuts.
  • Cook until sugar is absorbed and mixture starts to caramelize around walnuts, stirring constantly-- about 2 minutes.
  • In a small bowl, mix the cinnamon and remaining 1 1/2 tablespoons of sugar.
  • Toss the walnuts in the cinnamon-sugar mixture.
  • Place walnuts in a single layer on the prepared sheet pan.
  • Bake until walnuts appear crystallized and toasted (approximately 8 or more minutes).
  • Set aside.
  • Place 4 to 6 dry butter lettuce leaves on each plate.
  • Randomly place orange segments, onion slices and walnuts on top of each lettuce bed.
  • Drizzle about 2 tablespoons of dressing on top of each salad and serve.
  • (We prefer a Raspberry Walnut Vinaigrette).
  • Enjoy!

Tips:

  • Choose fresh, high-quality walnuts. This will ensure that your candied walnuts have the best possible flavor and texture.
  • Use a heavy-bottomed saucepan to make the candied walnuts. This will help to prevent the sugar from burning.
  • Cook the candied walnuts over medium heat. This will help to prevent the sugar from crystallizing.
  • Stir the candied walnuts frequently. This will help to ensure that they are evenly coated with sugar.
  • Let the candied walnuts cool completely before using them. This will help to prevent them from sticking together.
  • Store the candied walnuts in an airtight container at room temperature. They will keep for up to 2 weeks.

Conclusion:

Candied walnuts are a delicious and versatile snack that can be enjoyed on their own or used as a topping for salads, yogurt, or oatmeal. They are also a great addition to holiday baking recipes. With just a few simple ingredients and a little bit of time, you can easily make your own candied walnuts at home. So next time you're looking for a sweet and crunchy snack, give candied walnuts a try!
