Baby Spinach Salad With Strawberries and Candied Almonds image

This salad was served with lunch at a conference I went to, and I liked it so much that I requested the recipe. It is elegant but easy to make. The candied almonds really add flavour!

1/2 cup slivered almonds
1 tablespoon corn syrup
1 1/2 teaspoons granulated sugar
1 pinch salt
1 pinch cayenne pepper
12 cups Baby Spinach
1 pint strawberry, sliced
1/4 cup vegetable oil
2 tablespoons granulated sugar
2 tablespoons raspberry vinegar
1 pinch salt
1 pinch pepper

Steps:

  • In a small bowl, toss together almonds, corn syrup, sugar, salt and cayenne pepper until coated. Spread in a single layer on a parchment-lined baking sheet. Bake in 325F oven, stirring occasionally to break up clumps, for about 12 minutes. Let cool completely on pan on rack. Break into pieces.
  • For the dressing, whisk together oil, sugar, vinegar, salt and pepper in a small bowl.
  • In a large bowl, toss spinach with dressing. Sprinkle with candied almonds and strawberries.

1 box candy apple kit
1 qt large strawberries
1 c water
2 1/2 c sugar
1/2 c sliced almonds

Steps:

  • 1. Brush strawberries with a pastry brush to remove any dirt. Remove leaves. Place sliced almonds in a shallow dish.
  • 2. Prepare Candy Apple contents according to box directions. Bring mixture to a boil and cook until hard crack stage (300 degrees) approximately 15-18 minutes.
  • 3. While syrup is cooking, place sticks that came in the box in cleaned hulled strawberries. Dip each strawberry into the syrup then the tops into the sliced almonds. Place on parchment paper. Cool completely. Do not refrigerate. Serve immediately, must be eaten same day.

2 cups honey-roasted almonds
1 package (10 ounces) 60% cacao bittersweet chocolate baking chips
