A homestyle restaraunt called The Ingelnuk served these. They would come out with a big bowl of them and pile them on your plate. They sound odd, but are actually my favorite way to eat Lima Beans!

3 cups dried large lima beans
1 tablespoon salt
2 1/3 cups brown sugar
4 tablespoons melted butter

Steps:

  • Cover beans with cold water.
  • Soak for 4 hours, Drain.
  • Place beans in a 3/4 quart saucepan.
  • Cover with cold water.
  • Add salt.
  • Cook over medium heat for 1-1/4 hours, or until tender.
  • Remove from heat and drain.
  • Place drained beans in a mixing bowl.
  • Add brown sugar and butter stiring until well blended.
  • Put beans in a 9x13 pan.
  • Bake at 325 for 1 hour.

16 ounces frozen baby lima beans
Optional: 1/2 to 1 teaspoon sugar
1/2 cup to 3/4 cup heavy whipping cream
1 1/2 to 2 tablespoons butter
Salt and freshly ground black pepper (to taste)

Steps:

  • Cook the lima beans in boiling salted water as directed on the package. If using canned lima beans, you will not need to add salt.
  • Add sugar (if using) to the cooking water.
  • Drain the beans well. At this point, the beans are still hot.
  • Add the cream and butter to the hot beans. Taste and add salt and pepper as desired.
  • Serve beans warm.

2 tablespoons canola oil
1 onion, finely diced
4 cups fresh shelled lima beans or two 10-ounce packages frozen lima beans
1 1/4 teaspoons sugar
Salt and red pepper flakes

Steps:

  • Bring about 3 1/2 cups water to a boil in a small saucepan.
  • Heat a medium stockpot over medium-low heat and add the oil. Saute the onions in the oil, gradually adding 1 cup of the boiling water and stirring frequently, until the onions are soft and golden brown, 15 to 20 minutes. Add the lima beans and cook until beginning to soften, 10 minutes more. Add the sugar, some salt and red pepper flakes and the remaining boiling water. Partially cover the pan and cook until the lima beans are tender, about 40 minutes. Use the back of a wooden spoon to gently mash one-third of the tender beans and combine to make creamy. Serve warm.

4 tablespoons butter, divided
1/8 cup onion, finely chopped
3/4-1 cup chicken broth
1 (12 ounce) package frozen lima beans
1/4 teaspoon salt (to taste)
1/4 teaspoon ground black pepper, to taste

  • In a medium sized saucepan melt 2 Tablespoons margarine,then add onion and cook until soft.
  • Add chicken broth, and bring to a boil.

2 pounds dried lima beans
1 teaspoon salt
10 ounces ketchup
2 tablespoons brown sugar, or to taste
2 tablespoons dry mustard
1 pound bacon, uncooked

Steps:

  • Soak beans in water overnight. Drain. Add fresh water, just enough to cover the beans, and salt. Cook until tender, about 30 minutes.
  • Preheat oven to 300 degrees. If necessary, pour off some water from the beans so that they are very moist but not swimming in liquid. Add ketchup, brown sugar and mustard to the beans and water. Pour into a large (about 9 by 12 by 3) flat baking pan. Lay strips of bacon on top of the bean mixture.
  • Bake for 2 1/2 hours. If the bacon starts browning too fast, reduce heat to 225 degrees and extend the baking time by 1 hour.
