SWEET FRESH LIMA BEANS
Steps:
- Bring about 3 1/2 cups water to a boil in a small saucepan.
- Heat a medium stockpot over medium-low heat and add the oil. Saute the onions in the oil, gradually adding 1 cup of the boiling water and stirring frequently, until the onions are soft and golden brown, 15 to 20 minutes. Add the lima beans and cook until beginning to soften, 10 minutes more. Add the sugar, some salt and red pepper flakes and the remaining boiling water. Partially cover the pan and cook until the lima beans are tender, about 40 minutes. Use the back of a wooden spoon to gently mash one-third of the tender beans and combine to make creamy. Serve warm.
EASY LIMA BEANS
If you are looking for a way to fix lima beans besides boiling them in water try this recipe. I don't think you'll be sorry you tried them. :) If you want to have more of a buttery flavor, remove the beans from the liquid and place into a bowl then add the final 2 Tablespoons of butter and then salt and pepper to taste. I saw the basic recipe on allrecipes.com which was posted to that site by SharonB13.The name is the same as her's, but I changed a few things to the recipe and decided to post it under my own name.Submitted to Food.com ( A.K.A. Steps:
- Soak beans in water overnight. Drain. Add fresh water, just enough to cover the beans, and salt. Cook until tender, about 30 minutes.
- Preheat oven to 300 degrees. If necessary, pour off some water from the beans so that they are very moist but not swimming in liquid. Add ketchup, brown sugar and mustard to the beans and water. Pour into a large (about 9 by 12 by 3) flat baking pan. Lay strips of bacon on top of the bean mixture.
- Bake for 2 1/2 hours. If the bacon starts browning too fast, reduce heat to 225 degrees and extend the baking time by 1 hour.

Tips:
- Choose fresh lima beans: Look for lima beans that are plump and free of blemishes. Fresh lima beans will have a bright green color.
- Soak the lima beans overnight: This will help to soften the beans and make them more flavorful.
- Use a heavy saucepan: A heavy saucepan will help to evenly distribute the heat and prevent the beans from burning.
- Simmer the beans in a flavored liquid: You can use water, broth, or even juice to simmer the beans. Adding spices and herbs to the liquid will also help to infuse the beans with flavor.
- Cook the beans until they are tender: The beans should be tender but still hold their shape. Cooking time will vary depending on the type of lima bean you are using.
- Drain the beans and let them cool: Once the beans are cooked, drain them and let them cool slightly before candying them.
Conclusion:
Candied lima beans are a delicious and unique treat that can be enjoyed on their own or used as an ingredient in other dishes.
