2 cups whole almonds

Steps:

4 cups apple cider
1/4 cup apple cider vinegar

2 5-ounce bags mixed salad greens
12 ounces soft fresh goat cheese, crumbled

  • For almonds:
  • Place foil on work surface. Stir sugar and 1/4 cup water in heavy medium saucepan over low heat until sugar dissolves, brushing down sides of pan with wet pastry brush. Increase heat and boil without stirring until mixture turns deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 9 minutes. Mix in almonds. 1 tablespoon corn syrup
1 1/2 teaspoons granulated sugar
1 pinch salt
1 pinch cayenne pepper

1/2 cup white balsamic vinegar (120 ml)
1/3 cup vegetable oil (70 ml)
1/3 cup extra virgin olive oil (70 ml)
SALAD:
12 ounces baby spinach, arugula, field greens (340g)
1 small bunch cilantro, washed and dried, leaves removed whole from stems
2 medium avocados, peeled and halved
1 1/2 cups dried cranberries (115g)
1 1/2 cups candied spiced almonds (115g) recipe to follow
CANDIED SPICED ALMONDS:
5 cups almonds, sliced, or a 1 pound package (600g)
1/2 cup sugar (100g)
3 tablespoons butter
2 teaspoons cinnamon
1 teaspoon cumin
1 teaspoons smoked paprika, or more to taste

  • Dressing: Combine all ingredients in a pint sized glass jar and shake well to dissolve sugar. Salad: Place greens and cilantro leaves in a large bowl. Add avocado and dried cranberries and about 1/4 cup of the dressing and toss gently. Scatter candied almonds over salad and sprinkle lightly with sea salt and freshly ground black pepper. Pass extra dressing at the table. Candied almonds: Place a large sheet of foil on a work surface. Spray with cooking spray or rub a teaspoon of oil over foil with a paper towel. Place sugar in a large non-stick sauté pan and heat over medium heat, occasionally tipping and swirling the sugar until it's all melted into a pale golden syrup.   • Preheat oven to 250. Line a large rimmed baking sheet with foil and butter it. Set aside.

1 small acorn squash
3 oz goat cheese
1 Tbsp smoked paprika (enough to sprinkle over entire pizza dough)
1 Tbsp pumpkin pie spice
1-cup almonds
½ cup maple syrup
2 tbsp brown sugar
2 -3 cloves fresh garlic-crushed & diced
Olive oil-have it on hand
Gluten-Free Pizza Crust:
½ bag Gluten-Free Pantry's French Bread & Pizza mix (or your own gf flour blend)
1 packet yeast (included in Gluten-Free Pantry's French Bread & Pizza mix box)
1 ¾ luke warm water
1 tsp balsamic vinegar
1 tbsp honey
½ tsp sea salt
¼ cup olive oil
2 eggs plus 1 egg white

Steps:

  • Pre-heat oven 450F. First make the gluten-free pizza crust. Pour ½ the Gluten-Free Pantry's French Bread & Pizza mix and yeast into a large bowl. Then add all other pizza crust ingredients. Beat by hand for 2-3 minutes until your mixture is lump-free. On lightly oiled cookie sheet spread out dough/batter to desired thickness. Bake for 15 minutes. While crust is baking, prepare toppings. Grate Acorn Squash-Wash and slice acorn squash in half. Use a spoon to scoop out seeds. Using a hand held cheese grater, grate the acorn squash till shredded (skin and all). If you have a Cuisinart, it speeds up the process. Caramelize nuts-Add maple syrup and almonds into small saucepan. Heat on high till maple syrup bubbles for 1 minute. Stir-in 2 tbsp of brown sugar. Remove from heat and pour onto parchment paper. Let cool and break apart with knife. Set aside. Top Pizza-Remove pizza crust from oven-it should be well set. Drizzle olive oil atop crust. Sprinkle pumpkin pie spice, smoked paprika & crushed garlic evenly atop crust. Then add grated squash, goat cheese and candied almonds. Bake for 15 minutes or until pizza crust is browned and toppings are toasty. Remove, pizza from oven. Sprinkle with fresh-diced arugula. Slice, serve & enjoy!
