BATTER:
1 box yellow or white cake mix
1 can(s) 7-up (sprite, or any lemon-lime pop)
FILLING:
2 can(s) pie filling (any flavor, peach, apple, blueberry and cherry are best)

Steps:

  • 1. Put cake mix into a bowl. Add can of pop. Stir (don't beat), until batter is formed (don't over stir... you want the bubbles from the pop to help the cake rise!)
  • 2. Line a Dutch oven with a disposable aluminum foil round cake pan or just line the Dutch oven with foil. Butter the pan or foil.
  • 3. Dump the canned pie filling over the bottom of the Dutch oven.
  • 4. Pour the batter over the fruit. Put lid on Dutch oven.
  • 5. Set the Dutch oven on 8 to 10 coals. Put 10 to 15 coals on the lid. Let cook 45 to 55 minutes. Brush the coals and coal dust off the lid before opening.
  • 6. *** For a richer dessert, you can add 1 stick of butter or margarine cut in small pieces and scattered over the top of the batter. *** Let cool a little before serving. *** If you have ice cream or whipped cream available, put a scoop on the top or the side. *** You can use one flavor of fruit or two kinds of fruit...it is great either way!

Tips:

  • Choose The Right Pan: A 9x13 inch baking pan is the ideal size for this dump cake, ensuring that the cake bakes evenly and has a perfect crust.
  • Don't Overmix: Once you've combined the dry ingredients, gently stir in the melted butter and pineapple juice until just combined. Overmixing can result in a tough, dense cake.
  • Use Fresh Pineapple: If you can, use fresh pineapple for the best flavor. If using canned pineapple, be sure to drain it thoroughly before adding it to the cake.
  • Don't Skimp on the Crumb Topping: The crumb topping is what really makes this dump cake special. Be generous with the butter, flour, and brown sugar, and make sure to spread it evenly over the top of the cake.
  • Serve Warm: This dump cake is best served warm, so it's perfect for a summer camping trip. You can reheat it over the campfire or in the oven before serving.
