Yield 12 donut sandwiches

Number Of Ingredients 9

2 2/3 cups organic yellow cake mix
2 large Nellie's Free Range Eggs, beaten
2 tablespoons canola oil
2/3 cup milk
Cooking spray
1-2 cups chocolate chips
Graham crackers for topping
12 large marshmallows
Special equipment: donut pan

Steps:

  • Preheat oven to 350F. Spray the cavities of a 12-count donut pan with cooking spray
  • To a deep bowl, add cake mix, eggs, oil, and milk. Mix together with a whisk until well combined with no clumps.
  • Using a measuring cup with a spout for pouring or an icing bag, fill each donut pan cavity half full with half of the batter, reserving the other half. Place in the oven and bake for 10 minutes. Remove donut pan from oven and let cool before removing donuts. Repeat with reserved batter to yield 24 thin donuts.
  • Melt chocolate in a medium bowl according to the instructions on the package. Meanwhile, crumble the graham crackers in a food processor or crush in a plastic bag with a rolling pin.
  • Dip 12 donuts (these will be the tops of the donut sandwiches) into the melted chocolate, then sprinkle with graham cracker crumbs. Set tops aside.
  • Arrange 12 donuts (these will be the bottoms of the donut sandwiches) on a baking sheet lined with parchment paper. Place a large marshmallow on top of each donut. Place baking sheet in the oven and broil until marshmallows begin to brown, watching closely to ensure that they don't burn.
  • Remove bottoms from oven and assemble with the tops. Place donut sandwiches on a platter or dessert stand and dig in!

S'MORES SANDWICH COOKIES

S'mores Sandwich Cookies image

In theory, campfire s'mores are amazing, but the reality is often a stale graham cracker sandwich filled with thick pieces of unmelted chocolate and gooey marshmallows oozing out the sides. This sandwich cookie makes your s'mores dreams come true. The honey and cinnamon-spiked soft cookie is big enough to hold not one, but two toasted marshmallows, and the thin chocolate coating melts perfectly inside.

Yield Makes 12 sandwich cookies

Number Of Ingredients 14

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 1/2 teaspoons ground cinnamon
3/4 teaspoon baking soda
3/4 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup (packed) dark brown sugar
2 tablespoons granulated sugar
6 tablespoons honey
1 large egg
1 egg yolk
1 teaspoon vanilla extract
16 ounces bittersweet chocolate, coarsely chopped (about 3 cups), divided
24 marshmallows

Steps:

  • Whisk all-purpose flour, whole wheat flour, cinnamon, baking soda, and salt in a small bowl.
  • Using an electric mixer on high speed, beat butter, brown sugar, and granulated sugar in a large bowl until pale and fluffy, 2-3 minutes. Add honey and beat on medium to combine. Add egg, egg yolk, and vanilla and beat to combine, scraping down sides as needed. Reduce speed to low and gradually add dry ingredients, scraping down sides as needed, until just blended, then stir in half of the chocolate. Cover dough and chill at least 1 hour or up to overnight.
  • Arrange racks in middle and upper third of oven and preheat to 375°F. Line 2 rimmed baking sheets with parchment or wax paper. Scoop out dough by the heaping tablespoonful, roll into a balls, and arrange 3 inches apart, 6 on each sheet.
  • Bake cookies, swapping the trays and rotating them once halfway through, until golden, 10-11 minutes. Transfer cookies to a wire rack to cool and repeat with second batch. Let cookies cool.
  • Place remaining 8 ounces chocolate in a microwave-safe bowl and heat 30 seconds. Stir, then heat 30 seconds more. Repeat until chocolate is melted through. Turn cookies over and, using a small spatula, spread a thin layer of chocolate on flat sides of cookies. Chill cookies to let chocolate set, at least 15 minutes.
  • Place marshmallows onto skewers and toast over a flame. Place 2 toasted marshmallows on chocolate side of 1 cookie and top with chocolate side of another cookie to make a sandwich. Repeat with remaining marshmallows and cookies.
  • Do Ahead
  • Cookies can be baked, covered with chocolate, and chilled (without marshmallows) in an airtight container for up to 5 days or frozen for up to 1 month.

Tips:

  • Prepare the ingredients in advance: Before you start cooking, make sure you have all the ingredients measured and ready to go. This will help you stay organized and prevent any scrambling during the cooking process.
  • Use high-quality ingredients: The better the quality of your ingredients, the better your campfire smores donut sandwiches will turn out. Use fresh, ripe fruit and vegetables, and high-quality chocolate and marshmallows.
  • Cook the donuts over medium heat: This will help them cook evenly and prevent them from burning.
  • Toast the marshmallows until they are golden brown: This will give them a delicious smoky flavor.
  • Assemble the sandwiches while the donuts and marshmallows are still warm: This will help the chocolate and marshmallows melt and create a gooey, delicious sandwich.
