Tips:
- Choose ripe, firm papayas with bright orange flesh. Avoid papayas with green or bruised skin, as they will not be as sweet or flavorful. - Use a sharp knife to peel and cut the papaya. This will help to prevent the fruit from becoming mushy. - If you don't have a food processor, you can grate the papaya using a box grater. - Add the sugar to the papaya gradually, stirring constantly to prevent the jam from becoming too thick or sticky. - Bring the jam to a boil over medium heat, then reduce the heat to low and simmer for 30 minutes, or until the jam has thickened. - Stir in the lemon juice and salt just before removing the jam from the heat. This will help to brighten the flavor of the jam and prevent it from becoming too sweet. - Pour the jam into sterilized jars and seal tightly. Process the jars in a boiling water bath for 10 minutes to ensure that they are properly sealed. Conclusion:
Cameroon-style papaya jam is a delicious and versatile spread that can be enjoyed on toast, crackers, or fruit. It can also be used as a filling for pies, tarts, and other desserts. With its bright color and tropical flavor, this jam is sure to be a hit with your family and friends.
