1/4 cup Mazola Corn Oil
1 green bell pepper (finely chopped)
1 red bell pepper (finely chopped)
1/2 cup yellow onion (finely chopped)
4 cloves garlic (chopped)
2 tablespoons cilantro (chopped)
2 sprigs oregano
1 cup seafood broth
3 tablespoons tomato paste
1/4 cup green olives (sliced)
24 ounce jumbo raw shrimp
1 cooked potato (finely diced)
salt (to taste)
black pepper (to taste)

Steps:

  • Warm oil over medium high heat.
  • Saute bell peppers and onions until softened, about 5-6 minutes.

1 tablespoon olive oil
1 small onion, diced
1 small green bell pepper, seeded and diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

1/4 cup red wine
1 (14-ounce) can peeled tomatoes
2 bay leaves
1 pound medium shrimp, peeled and deveined
2 cups cooked brown rice
1/2 cup chopped fresh cilantro leaves
2 small limes, cut into wedges
Hot sauce, to serve

Steps:

  • In a large sauce pan, over medium-high heat, add the olive oil, onion, bell pepper, garlic cumin, paprika, salt, and pepper. Saute until the onion and peppers are tender, about 5 to 6 minutes.
  • Add the wine, tomatoes, and bay leaves and cook for 10 minutes more. Reduce the heat and add the shrimp. Bring the mixture to a simmer and cook until the shrimp are fully cooked, about 6 to 8 minutes.
  • Serve the shrimp mixture over the cooked brown rice and sprinkle the chopped cilantro over the top. Serve the dish with lime wedges and hot sauce.

1 1/2 lb shrimp (21-25 per pound size), peeled, de-veined, peels reserved
1/2 tsp salt
1 T plus 1/4 cup olive oil
1 medium onion, finely diced
1 medium green bell pepper, finely diced
3 garlic cloves, minced
1/2 tsp oregano
1/2 tsp cumin
1 bay leaf
1/2 cup dry white wine
1 8-oz can low sodium tomato sauce
1 cup jarred red pimentos, and their liquid
1/4 cup ketchup
1 T white wine vinegar
1 tsp Worcestershire sauce
1/2 tsp Tabasco sauce
1/2 cup fresh peas
1/4 cup fresh parsely, finely chopped
salt and pepper to taste

Steps:

  • 1. In a small saucepan, saute the the shrimp peels in heated olive oil over medium high heat for about 5 minutes. Add ¾ cups of water, ½ tsp salt and bring to a boil. Reduce heat to medium low and let simmer for about 20 minutes. Strain the broth into a bowl and discard the shells. Set broth aside. 2. In a caldero or 4-inch deep large saute pan, heat ¼ cup of olive oil over medium heat. Add the onions, green bell peppers, oregano, cumin and bay leaf. Saute, stirring frequently, for 12 to 15 minutes until the vegetables are tender but not caramelized. 3. Stir in wine and let reduce for 2 to 3 minutes. Add the tomato sauce and the shrimp shell stock, the peppers and their liquid, ketchup, vinegar, Worcestershire and Tabasco sauce. Bring to a boil and reduce heat to medium-low. Cover and allow to simmer for 15 minutes. 4. Add the peeled shrimp and fresh peas, cover and cook for another 8 to 10 minutes, until shrimp turns pink and curls slightly. (Be careful not to overcook them; they can turn rubbery if overdone.) 5. Stir in the parsley and let cook for another minute or 2. Serve over a bed of white or brown rice. Makes 4 to 6 servings.

Tips:

  • To devein shrimp easily, use a pair of kitchen shears to cut along the back of the shrimp, from the head to the tail. Remove the black vein and discard it.
  • If you don't have achiote paste, you can make your own by blending annatto seeds with a little bit of oil.
  • If you don't have sofrito, you can make your own by blending together chopped onions, bell peppers, garlic, and cilantro.
  • Be careful not to overcook the shrimp, or they will become tough. Shrimp are cooked through when they turn pink and opaque.
  • Serve camarones enchilados with rice, beans, and a side of tostones or fried plantains.
