Camarones con Crema (Mexican Shrimp in Cream) image

This is one of my favorite Mexican shrimp meals to make. Everyone gobbles it up. Best served with rice, about 3 to 4 cups cooked. I like to sprinkle mine with Cojita cheese and cilantro also.

CAMARONES EN SALSA / SHRIMP IN SAUCE

Camarones En Salsa / Shrimp in Sauce image

I got this recipe from one of my friend's Mexican Cookbooks. Another friend tried it first and made a few changes with the amounts and extra spices. And I've added some of my own changes. The end result is wonderful. I usually have all these ingredients on hand. It's a quick recipe. I put the jasmine rice in my rice cooker and by the time the rice is done, so is the shrimp and sauce.

Tips:

  • Use fresh, high-quality shrimp. This will make a big difference in the final flavor of the dish.
  • Clean the shrimp properly. Devein and remove the shell, leaving the tail intact if desired.
  • Marinate the shrimp for at least 30 minutes. This will help to infuse them with flavor and make them more tender.
  • Cook the shrimp over high heat. This will help to sear them and prevent them from becoming tough.
  • Do not overcook the shrimp. They should be cooked just until they are opaque and pink.
  • Use a flavorful sauce. The sauce is what will really make this dish shine. Choose a sauce that is bold and flavorful, such as a tomato sauce, a cream sauce, or a garlic sauce.
  • Garnish with fresh herbs. This will add a pop of color and freshness to the dish.
