PASTA WITH CHORIZO, CHICKPEAS AND KALE

Pasta With Chorizo, Chickpeas and Kale image

Packed with the intense flavors of garlic, paprika and salt, dried chorizo sets the flavor profile of this pasta. First, the chorizo sears in a skillet to render some of its fat and flavor, then chickpeas, scallions and kale soak up its spices. Salty Manchego cheese maintains the Spanish vibes, but Parmesan or pecorino work equally well. While eight ounces of pasta might not seem like a lot, meaty chickpeas and hearty kale complete the dish.

Time 30m

Yield 4 servings

Number Of Ingredients 8

Kosher salt and black pepper
8 ounces fusilli or other short pasta
1/4 cup olive oil, plus more for drizzling
7 to 8 ounces dried chorizo, thinly sliced
1 (15-ounce) can chickpeas, drained and rinsed
1 bunch scallions (6 to 8), thinly sliced
1 bunch curly kale, collard greens or mustard greens, stems removed, leaves torn into bite-size pieces
Shaved Manchego, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente.
  • Meanwhile, heat oil in a large skillet over medium-high. Add chorizo and cook, stirring, until blistered and oil is bright orange, about 1 minute. Using a slotted spoon, transfer chorizo to a medium bowl.
  • Add chickpeas and scallions to skillet and cook, stirring occasionally, until chickpeas begin to blister, 2 to 3 minutes. Transfer chickpeas and scallions to the bowl.
  • Add kale to skillet, season with salt and pepper and cook, tossing, until wilted, about 2 minutes. Using a slotted spoon, transfer pasta to skillet along with 1 cup pasta water and cook over medium-high, tossing with kale, until liquid reduces and coats the pasta, about 2 minutes.
  • Return chorizo, chickpeas and scallions to skillet and toss to combine. Drizzle with a little olive oil and top with Manchego to serve.

CHORIZO, ROCKET & PRESERVED LEMON CALZONES

Chorizo, rocket & preserved lemon calzones image

Fill these flavour-packed calzone ahead, then bake straight from the freezer when you're busy. The combo of spicy chorizo and smoky paprika pastry is divine

Provided by Liberty Mendez

Categories     Dinner

Time 1h

Number Of Ingredients 15

500g strong bread flour, plus extra for dusting
2 tbsp paprika
1½ tsp fast-action dried yeast
1 tbsp olive oil, plus extra for the bowl
semolina, for dusting
100g cooking chorizo, sliced
2 garlic cloves, crushed
350ml passata
1 tbsp brown sugar
1 tbsp red wine vinegar
2 small preserved lemons, quartered, pith removed and zest finely chopped
½ small bunch of basil, roughly chopped
50g rocket, roughly chopped
75g mozzarella, torn into chunks
25g grated parmesan

Steps:

  • For the dough, put the flour, paprika, yeast, oil, 300ml lukewarm water and a large pinch of salt in a bowl. Mix into a soft, slightly wet dough. Knead in a stand mixer fitted with a dough hook or by hand for 10 mins until smooth (it will still be quite soft). Tip into an oiled bowl, cover and leave to rise for 2 hrs.
  • Meanwhile, make the filling. Fry the chorizo in a large saucepan over a medium heat for 2 mins until some of its oils have been released. Add the garlic and continue to fry for 30 seconds. Add the passata, sugar, vinegar and preserved lemons, and simmer for 5 mins until thick. Stir in the basil and rocket. Leave to cool.
  • Heat the oven to 200C/180C fan/gas 6 with a baking sheet inside. Divide the dough into four pieces, then roll each out on a lightly dusted surface to a thin 30cm circle. Lay each circle on a square of baking parchment dusted with semolina. Spread the cooled filling over half of each circle, leaving a border, then top with some of the mozzarella. Brush around the edge of each circle with a little water. Working with one circle at a time, fold one half over the other so the filling is enclosed, then crimp the edge to seal. The calzones can now be frozen for up to three months (see below). Lift the calzones on the parchment squares onto the hot baking sheet in the oven, sprinkle the parmesan on top, and bake for 15-20 mins until puffed up and golden brown.

Tips:

  • Choose the right dough: For the best calzones, use a pizza dough that is thin and pliable. This will allow you to fold and seal the calzones easily without them tearing.
  • Don't overfill the calzones: When filling the calzones, be sure not to overfill them. This will make them difficult to fold and seal, and the fillings may leak out during baking.
  • Use a variety of fillings: Calzones are a great way to use up leftover ingredients. Feel free to use any combination of fillings that you like, such as meats, cheeses, vegetables, and herbs.
  • Cook the calzones until they are golden brown: Calzones should be cooked until they are golden brown on both sides. This will ensure that the dough is cooked through and the fillings are heated through.
  • Serve the calzones with your favorite dipping sauce: Calzones are delicious served with a variety of dipping sauces, such as marinara sauce, Alfredo sauce, or ranch dressing.

Conclusion:

Calzones are a delicious and versatile dish that can be enjoyed for lunch, dinner, or even as a snack. They are easy to make and can be filled with a variety of ingredients, making them a great option for using up leftover ingredients. With so many different ways to make them, you're sure to find a calzone recipe that you'll love.
