Time 27m

Yield 2 serving(s)

Number Of Ingredients 8

2 cups cauliflower florets
2 teaspoons lite olive oil
1/2 cup onion, chopped
2 cloves garlic, chopped
1/2 teaspoon fresh ginger, grated
1/2 teaspoon curry powder
1/2 fresh tomato, peeled & chopped
salt (optional)

Steps:

  • Steam the cauliflower for 5 minutes, reserve 1/2 cup of the water.
  • Put the oil in a saucepan and add onion& garlic, saute until soft.
  • Stir in the curry, ginger and salt (if using).
  • Add tomatoes, bring to a simmer.
  • Add cauliflower and 1/2 cup of cauliflower water.
  • Cover and simmer for 3 minutes (longer if you want your veggies well done).
  • Remove cover to allow some of the liquid to evaporate.
  • Serve.

Tips:

  • Choose fresh, firm cauliflower: Look for cauliflower with tightly packed florets that are free of blemishes or bruises.
  • Cut the cauliflower into uniform florets: This will help them cook evenly.
  • Roast the cauliflower before adding it to the curry: This will help to caramelize the florets and give them a slightly smoky flavor.
  • Use a variety of spices in the curry: This will give the dish a complex flavor profile. Some good options include cumin, coriander, turmeric, and garam masala.
  • Add a touch of sweetness to the curry: This can be done with honey, maple syrup, or even grated carrots.
  • Serve the curry over rice or quinoa: This will help to soak up the delicious sauce.

Conclusion:

Curried cauliflower is a delicious and healthy dish that can be enjoyed by people of all ages. It is a good source of vitamins, minerals, and fiber. The curry is also relatively low in calories and fat, making it a good choice for those who are watching their weight. With a little planning and preparation, you can easily make a delicious curried cauliflower dish at home.
