Yield 24

Number Of Ingredients 8

1 cup jasmine rice
1 ½ cups water
½ cup rice vinegar
2 tablespoons white sugar
2 teaspoons salt
3 sheets nori (dry seaweed)
1 cucumber, sliced lengthwise
2 sticks imitation crab, sliced lengthwise

Steps:

  • Rinse rice until water runs clear. Combine rice and 1 1/2 cups water in a saucepan and bring to a boil, about 5 minutes. Reduce heat to low, cover, and simmer until water is completely absorbed and rice is soft, 8 to 10 minutes.
  • Use a wooden spoon to transfer cooked rice to a non-metal bowl and set aside to cool.
  • Meanwhile, combine vinegar, sugar, and salt in a small saucepan and bring to a boil, about 5 minutes. Reduce heat and simmer 1 minute more. Repeat with remaining nori, rice, cucumber, and crab.
  • Dip a sharp knife into water and slice each roll into 8 pieces, rinsing the knife after each cut to prevent sticking.

CALIFORNIA ROLL SUSHI

California Roll Sushi image

California Roll - it's really good. Serve with soy sauce and wasabi.

Provided by Erin

Categories     World Cuisine Recipes     Asian

Time 1h30m

Yield 8

Number Of Ingredients 10

1 cup uncooked short-grain white rice
1 cup water
¼ cup rice vinegar
1 tablespoon white sugar
½ cup imitation crabmeat, finely chopped
¼ cup mayonnaise
8 sheets nori (dry seaweed)
2 ½ tablespoons sesame seeds
1 cucumber, cut into thin spears
2 avocados - pitted, peeled, and sliced the long way

Steps:

  • Wash the rice in several changes of water until the rinse water is no longer cloudy, drain well, and place in a covered pan or rice cooker with 1 cup water. Bring to a boil, reduce heat to a simmer, and cover the pan. Allow the rice to simmer until the top looks dry, about 15 minutes. Turn off the heat, and let stand for 10 minutes to absorb the rest of the water.
  • Mix the rice vinegar and sugar in a small bowl until the sugar has dissolved, and stir the mixture into the cooked rice until well combined. Allow the rice to cool, and set aside.
  • Mix the imitation crabmeat with mayonnaise in a bowl, and set aside. To roll the sushi, cover a bamboo rolling mat with plastic wrap. Lay a sheet of nori, shiny side down, on the plastic wrap. With wet fingers, firmly pat a thin, even layer of prepared rice over the nori, leaving 1/4 inch uncovered at the bottom edge of the sheet. Sprinkle the rice with about 1/2 teaspoon of sesame seeds, and gently press them into the rice. Carefully flip the nori sheet over so the seaweed side is up.
  • Place 2 or 3 long cucumber spears, 2 or 3 slices of avocado, and about 1 tablespoon of imitation crab mixture in a line across the nori sheet, about 1/4 from the uncovered edge. Pick up the edge of the bamboo rolling sheet, fold the bottom edge of the sheet up, enclosing the filling, and tightly roll the sushi into a cylinder about 1 1/2 inch in diameter. Once the sushi is rolled, wrap it in the mat and gently squeeze to compact it tightly.
  • Cut each roll into 1 inch pieces with a very sharp knife dipped in water.

SUSHI - CALIFORNIA ROLL

Sushi - California Roll image

I LOVE sushi, but it gets too expensive to eat out at my favorite sushi place as much as I love to have it, so I started searching for recipes online and tutorials and this is my favorite method. California rolls are popular because there actually isn't any raw fish in them so they are good for serving to people with reserves...

Categories     Seafood Appetizers

Time 1h

Number Of Ingredients 17

RICE
2 1/2 c japanese short grain rice (sushi rice)
2 1/2 c cold water
4 Tbsp rice vinegar
3 Tbsp caster sugar (superfine)
2 tsp salt
6 toasted nori (i buy it already toasted)
FILLING
approx 1 lb surimi (imitation crab in long pieces)
1 avocado
1/2 small cucumber
1 Tbsp toasted sesame seeds
2 Tbsp japanese or regular mayo (optional)
SIDES (OPTIONAL)
wasabi
japanese soy sauce
pickled ginger

Steps:

  • 1. The rice is the most important and easiest part to mess up of the whole sushi making process! This method I find best for getting it to be thoroughly cooked and sticky enough to roll and not fall apart. Place rice in a colander (I use a metal sieve) and rinse thoroughly under cold running tap water until the water coming out the bottom runs clear. Drain well. Place the rice in the measured cold water in a medium saucepan and bring to a boil. (DO NOT STIR) Cover the saucepan and turn the heat down very low. Cook for 15 minutes WITHOUT lifting the lid. Turn off the heat and let it stand 10 minutes, still not lifting the lid. Meanwhile, mix the rice vinegar, sugar and salt into a small bowl until the sugar is dissolved. When the rice is done, spoon it into a large bowl and drizzle the vinegar mixture over it. Mix gently with a large spoon to coat the rice mixture and set aside until it is cooled to room temperature.
  • 2. At this point you can use whatever fillings you want, my favorite are the California roll and salmon variations. Peel and pit the avocado and cut into thin strips. For the cucumber, seed and cut the flesh into thin strips.
  • 3. This is a good point if you do not know how to roll sushi to watch an instructional video, it is a lot to type out and explain or understand by reading. Basically set out your toasted nori and place just enough rice to press it to the side edges and within 3/4 inch of each top edge. Dip your fingers in cold water to help keep it from sticking. Lay your fillings out toward the center of the rice so it reaches and is flush with the sides. Roll the sushi tight into a roll and cut into 6 1/4 inch pieces. To keep your knife from sticking, dip it in cold water before each cut.
  • 4. Serve with wasabi paste and pickled ginger.

Tips:

  • Use sushi-grade fish: This is essential for ensuring that your sushi is safe to eat. Sushi-grade fish has been frozen to a temperature that kills parasites, making it safe to consume raw.
  • Cut your fish and vegetables evenly: This will help to ensure that your sushi rolls are uniform in size and shape.
  • Use a sharp knife: A sharp knife will make it easier to cut your fish and vegetables evenly and will also help to prevent them from tearing.
  • Don't overstuff your sushi rolls: If you overstuff them, they will be difficult to roll and will fall apart.
  • Wet your hands before handling the rice: This will help to prevent the rice from sticking to your hands.
  • Use a bamboo sushi mat to roll your sushi: This will help to keep the rolls tight and even.
  • Slice your sushi rolls carefully: Use a sharp knife and cut your rolls with a sawing motion.

Conclusion:

California sushi rolls are a delicious and versatile dish that can be enjoyed by people of all ages. They are perfect for parties, potlucks, or a quick and easy meal. With a little practice, you can easily make California sushi rolls at home. So next time you're craving sushi, give this recipe a try!
