GRILLED TUNA ROLLS

Grilled Tuna Rolls image

Provided by Ina Garten

Categories     main-dish

Time 35m

Yield 8 rolls

Number Of Ingredients 14

Good olive oil
1 pound very fresh tuna steak, 1-inch thick
Kosher salt and freshly ground black pepper
1 lime, zest grated
3 tablespoons freshly squeezed lime juice (2 limes)
1/2 teaspoon wasabi powder
1 teaspoon soy sauce
5 dashes hot sauce (recommended: Tabasco)
1 firm, ripe Hass avocado, medium-diced
1/4 red onion, chopped
1 tablespoon minced scallion, white and green parts
1 tablespoon toasted sesame seeds
9 hot dog rolls, grilled or toasted
1 bunch baby arugula, washed and spun dry

Steps:

  • Heat a charcoal grill with hot coals. Brush the grill with oil.
  • Brush both sides of the tuna with olive oil and sprinkle generously with salt and pepper. Cook the tuna over the hot coals for about 2 1/2 minutes on each side. Remove to a plate. The tuna should be seared on the outside and raw inside. Allow to cool and cut into cubes.
  • (If you don't want to heat a grill, you can sear the tuna in a dry saute pan over high heat. Heat the pan for 2 minutes, add the tuna steaks and cook for 1 1/2 to 2 minutes on each side until seared on the outside and still raw inside.)
  • For the dressing, whisk together 2 tablespoons of olive oil, the lime zest, lime juice, wasabi powder, soy sauce, hot sauce, 2 teaspoons kosher salt, and 1 teaspoon pepper in a small bowl. Toss the avocado in the dressing and then add the tuna, red onion, scallion, and sesame seeds. Line the rolls with arugula leaves, fill with the tuna mixture, and serve.

Tuna-Salad Hand Rolls image

This quick, clever meal is just right for those nights when you need a pantry-friendly dinner on the table really fast. It's a sushi-inspired spin on tuna salad, simply set your prepped ingredients on the table and let everyone roll their own!

Provided by Lauryn Tyrell

Categories     Food & Cooking     Ingredients     Seafood Recipes

Time 15m

Yield Makes 12

Number Of Ingredients 13

2 (5-ounce) cans albacore tuna, drained
1/4 cup mayonnaise, or more to taste
2 to 3 teaspoons fresh lemon juice
2 teaspoons fresh chopped cilantro or dill
1 mini cucumber, cut into thin matchsticks
1 large carrot, peeled and cut into thin matchsticks
Pinch of Kosher salt
Pinch of granulated sugar
1 teaspoon unseasoned rice vinegar
1 avocado, peeled, pitted, and sliced thin
Steamed white sushi or short-grain rice
6 sheets toasted Nori, halved
Soy sauce, pickled ginger, and sambal oelek, for serving

Steps:

  • In a medium bowl, stir together tuna, mayonnaise, lemon juice, and cilantro until combined; season with salt and pepper. In another bowl, toss together cucumber and carrot matchsticks with salt, sugar, and vinegar; set aside.
  • To assemble hand rolls, pat rice into the middle of nori sheets; top with tuna, vegetables, and avocado; roll firmly to seal. Serve with soy sauce, pickled ginger, and sambal oelek.

Tips:

  • Use high-quality tuna: Opt for solid white albacore tuna packed in water or olive oil. Avoid tuna packed in oil, as it can make the salad too oily.
  • Prepare the tuna salad in advance: This allows the flavors to meld and develop. You can make the salad up to 24 hours ahead of time.
  • Use a variety of vegetables: This will add color, texture, and nutrients to the salad. Some good options include celery, onion, red bell pepper, and cucumber.
  • Don't overmix the salad: Overmixing can make the tuna salad mushy. Gently fold the ingredients together until just combined.
  • Use fresh herbs: Fresh herbs, such as dill, parsley, or chives, can add a bright, flavorful touch to the salad.
  • Serve the salad on a bed of lettuce: This will help to keep the rolls from getting soggy.

Conclusion:

California-style tuna salad rolls are a delicious and easy-to-make appetizer or lunch option. They're perfect for potlucks, picnics, or any other casual gathering. With a few simple ingredients and a little bit of time, you can create a dish that everyone will love. So next time you're looking for a quick and tasty meal, give these tuna salad rolls a try. You won't be disappointed!
