Thick and creamy Clam Chowder is one of my favorite easy soup recipes, and this one has all the traditional elements we love, like diced potatoes, veggies and plenty of delicious clams.

Provided by Lauren Allen

Categories     Main Course     Soup

Time 45m

Number Of Ingredients 17

4 6.5 ounce cans chopped clams
1 cup low-sodium chicken broth
1 1/2 pounds russet potatoes (, peeled and diced (about 3 medium potatoes))
3 bay leaves
4 Tablespoons butter
2 Tablespoons olive oil
1 medium yellow onion
3 ribs celery ((about 1 cup), diced)
1/2 red bell pepper (, diced)
1/2 green bell pepper (, diced)
2 cloves garlic (, finely minced)
1/2 cup all-purpose flour
1 cup milk
1 cup half and half
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 Tablespoon red wine vinegar

Steps:

  • Drain the clams, adding the juice from the cans to a large stock pot. Set the clams aside.
  • Add chicken broth and diced potatoes to the pot (the liquid should just barely cover the potatoes). Bring to a simmer, add the bay leaf, and cook until the potatoes are barely fork tender, about 5-6 minutes.
  • While the potatoes cook, in a second pot, heat the butter and olive oil over medium heat until the butter is melted. Add the onions, celery, bell peppers and garlic and cook until tender, about 4-5 minutes.
  • Stir in the flour and cook for 30 seconds. Gradually stir in the milk and half and half, whisking as you add them to break up any clumps of flour. Bring mixture to a simmer and cook until the thickened, about 5 minutes
  • Stir the creamy mixture into the potatoes. Stir in the salt, pepper, vinegar, and reserved clams. Cook for 5 more minutes.

CLAM CHOWDER

Provided by Tyler Florence

Categories     main-dish

Yield 6 to 8 servings

Number Of Ingredients 24

2 dozen littleneck clams
2 dozen cherrystone clams
1 quart water
1 head garlic, sliced in 1/2 horizontally
3 bay leaves
2 sprigs thyme, leaves picked
3 tablespoons unsalted butter
4 ounces pancetta, cut into cubes
1 celery stalk, diced
1 onion, diced
2 heaping tablespoons all-purpose flour
2 Yukon gold potatoes, peeled and cubed
2 cups heavy cream
1 cup milk
Freshly ground black pepper
1 handful flat-leaf parsley, finely chopped
Parmesan Oyster Crackers, recipe follows
2 cloves garlic
Kosher salt and freshly ground black pepper
1/2 stick unsalted butter
2 tablespoons extra-virgin olive oil
2 cups oyster crackers
1 handful flat-leaf parsley, finely chopped
1/4 cup grated Parmigiano-Reggiano

Steps:

  • Wash and scrub the clams to get rid of the dirt. Set the littlenecks aside in the refrigerator, and combine the cherrystone clams with the water, garlic, bay leaves, and thyme leaves in a large pot. Cover, and steam over medium-high heat until the clams have all popped open, about 15 minutes. Check every 5 minutes to pull out the clams that have opened (some take longer than others), and give the pot a stir. Pull the opened clams out of their shells and chop them roughly. Cover them and set aside. Pour the broth into a big bowl through a strainer that you've lined with cheesecloth, just in case there is leftover sand; set the broth aside.
  • Rinse out the pot and melt the butter over medium heat. Add the pancetta, celery, and onion. Saute this together for 5 minutes, until the vegetables soften. Sprinkle the flour into the pot; stir and coat everything well. Gradually pour in the strained clam broth, whisking constantly to break up any lumps of flour. When all the broth is incorporated, fold in the potatoes, and bring to a boil, stirring constantly for about 15 minutes. The soup will start to thicken from the potato starch.
  • Reduce the heat to low and fold in the cream, milk, and chopped clams. Toss in the littleneck clams and cover the pot to let them steam open, about 5 minutes. Season the soup with many turns of freshly ground black pepper and stir everything together to heat through, but do not let it boil. Serve this in nice big bowls with some chopped parsley and Parmesan Oyster Crackers.
  • Preheat oven to 250 degrees F.
  • Chop garlic cloves then sprinkle with some salt and smash to make a paste. Set a large nonstick pan over medium heat. Add butter, oil and garlic and swirl pan. Add oyster crackers and chopped flat-leaf parsley and toss to coat. Spread out on a sheet tray, season with salt and pepper and sprinkle with shredded Parmigiano. Pop into the oven and bake for 25 to 30 minutes until golden and crispy.
  • Yield: 2 cups

MONTEREY CLAM CHOWDER

Monterey Clam Chowder image

Make and share this Monterey Clam Chowder recipe from Food.com.

Provided by gourmet_girl

Categories     Chowders

Time 3h30m

Yield 6 serving(s)

Number Of Ingredients 14

1 carrot, diced
1 medium onion, diced
1 potato, diced
1 stalk celery, diced
1/2 lb bacon, minced
1/4 lb butter
3 fresh garlic cloves, minced
16 ounces clam juice
1 1/2 cups flour
2 cups milk
2 cups heavy whipping cream
2 cups half-and-half
1/2 teaspoon black pepper
1 lb clam, chopped (fresh, frozen, or canned)

Steps:

  • Place vegetables, bacon and margarine in a 5 quart sauce pot.
  • Saute over medium heat until vegetables are tender. Be careful not to brown or scorch.
  • When vegetables are tender, add flour to make a roux.
  • Cook for two minutes, allowing flour to cook while stirring occasionally.
  • Add clam juice and dairy products.
  • Stir by using a wire whip.
  • Add fresh garlic, black pepper, and chopped clams.
  • Cook over low-medium heat stirring occasionally to prevent chowder from scorching.
  • Cook for two hours or until chowder is brought to desired thickness. If a crockpot, or small steam kettle is available, it is recommended.
  • Also, clam juice can be added to thin chowder down if it gets too thick.
  • Cook for about 1 1/2 hours. The chowder needs to be stirred OFTEN, probably about every 5-10 minutes or so or it will stick to the bottom of the pot.

Tips:

  • Select the Freshest Clams: Choose live clams with tightly closed shells. Fresh clams will have a briny, oceanic aroma.
  • Use a Variety of Clams: For a more flavorful chowder, use a mix of clam varieties such as Manila clams, littleneck clams, and butter clams.
  • Prep the Clams Properly: Scrub the clams thoroughly under cold water to remove any sand or grit. Discard any clams with open shells.
  • Make a Flavorful Broth: Use a combination of clam juice, white wine, and chicken broth for a rich and flavorful base.
  • Cook the Clams Gently: Overcooking can toughen the clams, so cook them just until they open. This usually takes around 5-7 minutes.
  • Add Vegetables and Herbs: Enhance the chowder with aromatic vegetables like celery, carrots, onions, and garlic. Fresh herbs like thyme, bay leaves, and parsley add depth of flavor.
  • Use High-Quality Dairy: Whole milk and heavy cream create a creamy, luxurious texture. For a lighter chowder, use low-fat or skim milk.
  • Season Generously: Don't be afraid to season the chowder well with salt, pepper, and other spices like paprika, cayenne pepper, or Old Bay seasoning.
  • Serve with Crusty Bread or Crackers: A warm bowl of clam chowder is best enjoyed with crusty bread or crackers for dipping.

Conclusion:

This classic California-style clam chowder recipe is a delightful blend of fresh clams, flavorful broth, tender vegetables, and creamy dairy. With its rich, comforting taste, this chowder is perfect for a cozy meal on a chilly day. Whether you're a seafood lover or just looking for a hearty and satisfying soup, this recipe is sure to become a favorite. Experiment with different types of clams and vegetables to create your own unique variations, and enjoy a taste of California's culinary heritage.
