CALDILLO -- SOUTH OF THE BORDER STEW

Caldillo -- South of the Border Stew image

This is a nice stew; make it as spicy as you like by adding or reducing the amounts of chili peppers. I happen to be fond of Ancho Chili Peppers. Please feel free to substitute your own favorites! Serve with your choice of tortillas

Categories     Stew

Time 2h15m

Yield 8 serving(s)

Number Of Ingredients 12

1 lb beef, cubed (Chuck roast works well)
1/2 cup onion, diced
bacon drippings
1 cup tomatoes, seeded & diced
1/2 cup ancho chili, roasted skinned, seeds removed
2 cups beef stock
1 teaspoon salt
1 teaspoon pepper
1 tablespoon garlic, minced
2 teaspoons ground cumin
1 lb potato, cubed
1 cup carrot (diced)

Steps:

  • Sauté the beef and onions in the bacon drippings.
  • Add tomatoes, sliced green chilies, stocks and seasonings.
  • Cook over low heat until meat is tender (about two hours).
  • Add cubed potatoes and carrots during last 30 minutes.

Tips:

  • Use fresh green chiles: Fresh green chiles add a bright, vibrant flavor to the stew. If you can't find fresh green chiles, you can use canned green chiles, but the flavor will be less intense.
  • Roast the green chiles: Roasting the green chiles intensifies their flavor and gives them a slightly smoky taste. You can roast the chiles over an open flame, on a grill, or in the oven.
  • Use a variety of meats: Caldillo traditionally uses a combination of pork and beef, but you can also use chicken, lamb, or even tofu. Using a variety of meats adds depth and flavor to the stew.
  • Don't overcook the meat: The meat in caldillo should be tender but not overcooked. Overcooked meat will become tough and chewy.
  • Use a good quality broth: The broth is the base of the stew, so it's important to use a good quality broth. You can use chicken broth, beef broth, or vegetable broth, depending on what kind of meat you're using.
  • Add plenty of vegetables: Vegetables add color, flavor, and nutrients to the stew. You can use a variety of vegetables, such as potatoes, carrots, onions, celery, and corn.
  • Season the stew to taste: Caldillo should be flavorful but not too spicy. Season the stew with salt, pepper, and cumin to taste.

Conclusion:

Caldillo is a delicious and versatile stew that is perfect for a cold winter day. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a hearty and flavorful meal, give caldillo a try. You won't be disappointed!
