2 pounds cubed beef stew meat
1 onion, diced
4 cups beef broth
4 russet potatoes, peeled and diced
1 (14.5 ounce) can fire-roasted diced tomatoes
1 (8 ounce) can chopped green chiles, drained (such as Hatch®)
2 teaspoons Mexican oregano
2 teaspoons minced garlic
2 teaspoons cumin
1 teaspoon dried chipotle chile powder
1 teaspoon chili powder
½ teaspoon ground black pepper

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil and sear beef cubes until browned on all sides, 5 to 8 minutes. Remove browned beef from the pot and set aside. Add onion and cook until soft and translucent, about 5 minutes. Turn off Saute function.
  • Return beef to the pot with onions. Mix in beef broth, potatoes, diced tomatoes, green chiles, oregano, garlic, cumin, chipotle chile powder, chili powder, and pepper. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 45 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.

1 -1 1/2 lb lean ground beef
2 -4 tablespoons yellow onions, finely minced
1 teaspoon garlic, crushed
1 -2 tablespoon bacon grease (olive oil may be substituted)
2 -4 tablespoons chicken broth
1 (4 -7 ounce) can green chilies, chopped
1 (10 ounce) can Rotel Tomatoes (or tomato and chili mix)
1 (6 ounce) can tomato paste
2 -3 potatoes, peeled and finely diced
4 -6 tablespoons vinegar
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1/4-1 cup water (added as needed during cooking)

Steps:

1 slice onion, a 1 1/2 inch piece is good
1 -2 dried arbol chile (or 1 fresh serrano, 1/2 fresh jalapeno, or 1 dried guajillo)

Steps:

  • Place the tomatoes, onion and chiles in a small sauce pan with enough.water to almost cover the tomatoes. Cook until the tomatoes are soft. Then puree them in a blender with salt to taste and some of the cooking liquid, adjusting the amount to achieve the texture that you like.
  • Some people add a little powdered chicken stock (Knorr Suiza). You can add a bit of garlic too. If you are pouring this over fried eggs you can either pour it over them in the same pan where they cooked and let the sauce simmer a little or you can just pour it over the eggs right in the serving plate (I prefer this method-less fat!). You can also use this sauce for chilaquiles, but in this can be fried in a little oil or added to the fried tortillas in the pan where they were fried. I like my chilaquiles crunchy so I fry the sauce separately in about a tsp of oil.
  • This sauce is so basic that herbs such as oregano or cilantro can be added and the flavor can be changed completely.

3 tablespoons olive oil or 3 tablespoons canola oil
1 lb cubed stew meat
1/4 cup flour
2 large potatoes, cut into bitesized pieces
1 1/2 cups diced yellow onions
2 garlic cloves
13 ounces frozen green chili peppers, thawed
1 (8 ounce) can diced tomatoes
salt, to taste

Steps:

  • Heat oil in large pan.
  • Add onions and garlic. Cook about 3-5 minutes.
  • Lightly coat the stew meat in flour and add to the pan.
  • Brown the meat and add green chiles (with liquid). You can use hot or mild chile depending on your tastes.
  • Let simmer about 5 minutes and add tomatoes (drained of liquid).
  • Add one or two cups of water and potatoes.
  • Cook covered until potatoes are easily cut with a fork.
  • If most of the water has evaporated, add more.
  • Add salt to taste.
  • Serve with tortillas.
  • You can continue to simmer the remaining stew in the pot to have later. It tastes better the longer you cook it!

1 (14 1/2 ounce) can diced tomatoes
2 teaspoons beef bouillon powder
2 tablespoons lemon juice
2 garlic cloves, minced
1/2 teaspoon sugar
1 teaspoon ground cumin
1/4 teaspoon ground cloves
1 medium onion, chopped
8 large green chilies, roasted, peeled and chopped
3 medium potatoes, diced in 1 inch cubes
1 cup water
1 -2 medium jalapeno pepper, seeded and sliced (optional)
1/3 cup cilantro
salt

Steps:

  • Combine all ingredients, except for cilantro and jalapeno peppers, in a 6 quart crock pot.
  • I prefer to use Yukon Gold potatoes, washed and skin left on.
  • Stir to thoroughly combine the ingredients.
  • Cover, turn on low and cook for approximately 5 to 6 hours or until meat and potatoes are almost tender.
  • Add chopped cilantro, and if more heat is desired, the jalapeno peppers.
  • Continue cooking an additional 30 minutes to 1 hour.
  • Serve hot with tortillas of your choice.
  • This is wonderful warmed over the next day.

1 medium onion, coarsly chopped
1 Tbsp flour
1 clove garlic, minced (or more) :o)
2 large potatoes, chopped 1/2"-3/4"
2 can(s) (lg cans) tomatoes
2 can(s) whole green chilis chopped coarsly (or more)
1 tsp salt
1/2 tsp pepper
1 tsp cumin
2 1/2 c beef stock

Steps:

  • 1. Cut meat into cubes ½"- ¾". Brown well in the oil (medium high heat). Add flour, onion & garlic & continue browning about 10 min.
  • 2. Add remaining ingredients ~ Simmer 2-4 hrs.
  • 3. GREAT on a cold winter day! *You can cut up any steak for this - even leftover steak works well, you just don't need to brown it, just begin where you add the flour, onion and garlic.

12 long green chiles
3 Tbsp olive oil
4 c onion, coarsely chopped
1 Tbsp dried oregano, crumbled
8 c beef broth or chicken broth, homemade or canned
2 1/2 lb boiling potatoes, peeled and cut into 1/2-inch dice
2 c canned crushed tomatoes with added puree
2 lb smoked brisket or left-over pot roast of beef, pork or lamb trimmed and cut into 1/2-inch cubes
salt, to taste

Steps:

  • 1. In the open flame of a gas burner or under a preheated broiler, roast the long green chiles, turning them, until they are lightly but evenly charred.
  • 2. Steam the chiles in a paper bag, or in a bowl, covered with a plate, until cool.
  • 3. Rub away the burned peel. Stem and seed the chiles and coarsely chop them. There should be about 2 cups.
  • 4. In a deep pot over low heat, warm the olive oil. Add the onions, cumin, and oregano, and cook, covered, stirring once or twice, for 15 minutes.
  • 5. Add the broth, potatoes, tomatoes, and green chiles, and bring to a boil. Lower the heat and simmer, partially covered, stirring once or twice, for 30 minutes. Add the cubed brisket and continue to simmer until the potatoes and the meat are very tender and the stew is thick, about 15 minutes. Add salt to taste.
